Kielbasa Kabobs image

Coat chunks of zesty kielbasa with a sweet apricot-and-orange glaze. Great alternative to bacon!

2 rings (1 lb each) kielbasa sausage
12 wooden skewers (6 to 8 inch)
1/4 cup apricot preserves
2 tablespoons orange juice

Steps:

  • If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning. Heat oven to 350°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
  • Cut kielbasa at an angle into 48 chunks, about 1 inch each. On each skewer, thread 4 chunks of sausage; place in pan.
  • In small bowl, mix preserves and orange juice with fork; brush glaze over kabobs. Turn kabobs over; brush other side.
  • Bake about 45 minutes or until kielbasa is browned.

1/3 cup honey
1/4 cup spicy brown mustard
2 tablespoons canola oil
1 tablespoon soy sauce
2 garlic cloves, minced
1/2 teaspoon minced fresh gingerroot
1-1/4 pounds smoked sausage, cut into 1-inch pieces
16 cherry tomatoes
8 medium fresh mushrooms
1 large green pepper, cut into 1-inch pieces
1 medium onion, cut into eight wedges
1 small zucchini, cut into 1-inch pieces

Steps:

  • In a large bowl, combine the first six ingredients. Add the sausage and vegetables; toss to coat. Drain and reserve marinade. , On eight metal or soaked wooden skewers, alternately thread sausage and vegetables. Broil 3-4 in. from the heat for 3-4 minutes on each side or until vegetables are tender and sausage is heated through, basting occasionally with reserved marinade.

1 tbsp ready-made English mustard
16-20 small party sausages
16-20 ready-to-eat dried apricots , soaked in port (soaking optional)
16-20 fresh bay leaves

Steps:

  • Run a knife along the length of the bacon rashers so they stretch a little, spread lightly with the mustard, then cut in half. Use the bacon to wrap a sausage and apricot together, then spear onto short skewers with bay leaves, allowing 2 rolls per person. Roast skewers in the oven with the turkey for 30-40 mins until golden. Serve on the platter alongside the turkey.

¾ cup apricot preserves
¾ cup Dijon mustard
1 pound fully cooked kielbasa or Polish sausage, cut into 12 pieces
12 each dried apricots
12 medium (blank)s medium fresh mushrooms
2 cups Hot cooked rice

Steps:

  • In a small bowl, combine preserves and mustard; mix well. Remove 1/2 cup for serving; set aside. Alternate sausage, apricots and mushrooms on four metal or soaked bamboo skewers. Grill, covered, over indirect heat for 15-20 minutes or until meat juices run clear. Turn frequently and baste with remaining apricot sauce. Warm the reserved sauce; serve with kabobs and rice.
