- Place pork on a rack in a shallow roasting pan. Combine the oil, salt and pepper; rub over pork., Bake at 425° for 10 minutes. In a small bowl, combine the remaining ingredients; spoon over pork. Bake 10-17 minutes longer or until a thermometer reads 145°, basting occasionally with pan juices. Let stand for 5 minutes before slicing.

SIMPLY ROASTED PORK LOIN ROAST WITH APRICOT GLAZE
This was given to me by a girl at church. I tried it and couldn't believe how easy and how wonderful it was. The aroma filling the house made us all crazy waiting for it to be ready. It tasted as good as it smelled.

Steps:
- Preheat oven to 425 degrees.
- Place the preserves in a small saucepan over medium-low heat, and cook 10 minutes or until melted.
- Keep warm over low heat.
- Combine salt, oregano, garlic powder, and pepper.
- Rub evenly over pork.
- Place pork on a rack coated with cooking spray; place rack in a shallow roasting pan.
- Bake at 425 degrees for 30 minutes.
- Brush 1/4 cup preserves evenly over pork.
- Bake an additional 10 minutes.
- Brush remaining preserves evenly over pork.
- Bake an additional 10 minutes or until meat thermometer registers 155 degrees.
- Let stand 10 minutes before slicing.

- Place roast in a 3-qt. slow cooker. In a small bowl, combine preserves and broth; pour over roast. Cover and cook on low for 6-8 hours or until tender. Remove meat to a serving platter; keep warm. , Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. SLOW COOKER PORK WITH APRICOTS
This recipe yields a yummy dish of tender pork chops topped with an onion and apricot mixture seasoned gently with cinnamon and ginger.

- Heat 1 teaspoon olive oil in a large non-stick skillet over medium-high heat.
- Season pork chops evenly with 1/4 teaspoon salt and black pepper; cook in the hot skillet until browned, about 2 minutes per side. Transfer chops to a plate, retaining drippings in the skillet.
- Heat remaining teaspoon olive oil in the retained drippings; add onions and season with remaining salt. Saute onions until golden brown, about 10 minutes.
- Spread about half the cooked onions and half the sliced apricots into the bottom of a slow cooker crock. Lay pork chops atop the onion and apricots. Layer remaining onion and apricots over the pork chops; add pineapple juice, ginger, thyme, and cinnamon stick.
- Cook on Low until the pork is fork-tender, 6 to 8 hours (or on High for 3 to 4 hours). Remove and discard cinnamon stick. Sprinkle cilantro over the mixture.

- Preheat oven to 350°F.
- Remove any excess fat from the roast.
- Place roast in a 13x9-inch baking dish that has been sprayed with non-stick cooking spray.
- Sprinkle with salt and pepper.
- In a small saucepan, heat the preserves, sherry, rosemary and garlic over medium heat, stirring frequently.
- When thickened, spoon 1/4 cup mixture onto pork reserving remainder.
- Insert meat thermometer so tip is in center of thickest part of pork.
- Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes or until the thermometer reads 155°F.
- Cover pork with foil and allow to stand 15 to 20 minutes or until thermometer reads 160°F.
- Cut roast into slices.
- Heat the reserved apricot mixture and serve with roast.
APRICOT-STUFFED SPICE-RUBBED PORK LOIN

- To prepare glaze, simply add all ingredients to a medium saucepan. Bring to a bubble, stirring often, making sure all ingredients are melted through and well incorporated. - Preheat grill for high heat. Remove pork from bag and discard marinade. Assemble roast onto rotisserie unit, close lid, and cook roast for 10-12 minutes on high. Reduce heat to medium and continue cooking for additional 35-40 minutes. At this point you will start the glazing process. Apply glaze to meat liberally, every 5-7 minutes, until roast has reached an internal temperature of 165 degrees F. (74 degrees C).
- Once roast has cooked through, remove from heat, place on a platter, and tent with aluminum foil. Allow roast to rest for 10 minutes before carving. While roast is resting, bring remaining glaze to a high simmer, reduce heat and simmer on low for 2 minutes. Remove from heat.
