Steps:
- To a food processor, add apricots, dates, almond meal, coconut and coconut oil. Mix on high for 1 minute or until mixture is finely processed - it's ok if it's a little bit chunky.
- Roll tablespoons of apricot mix into small balls, using your hands, until smooth. Dip each ball in extra coconut and place on a plate. Repeat with remaining apricot mixture.
- Place balls in the fridge for at least 30 minutes to set. Store balls in fridge.

- Place prunes, apricots and raisins in a bowl.
- Pour over the orange juice or liqueur and mix to combine.
- Set aside for 1 hour to macerate.
- Place fruit mixture in a food processor and process to finely chop.
- Transfer fruit mixture to a bowl.
- Add the orange zest, 75 g of the coconut and almonds.
- Combine well.
- Form fruit mixture into small balls, adding a little more orange if necessary.
- Roll balls in remaining coconut to coat.
- Place on a plate line with plastic food wrap, cover and chill until firm.

- In a food processor chop apricots and coconut until thoroughly combined.
- Add the 1/4 cup sweetened condensed milk; process until combined.
- Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes).
- Place wax paper on a baking sheet; set aside.
- Place additional coconut or finely chopped pecans in a shallow bowl.
- Shape apricot mixture into balls (about 1-inch in diameter).

- Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
- Add the butter to the crumb mixture and blend in well.
- Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
- With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
- Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. - Place cashews in the bowl of a food processor and pulse in 1 second increments until the cashews are broken down into small pieces (for size reference, see the picture in step one of the blog post above). This should take about 9 - 10 pulses. Remove the cashews from the food processor and set aside. Separate out 6 tablespoons of the cashews to save for coating the balls at the end.
- Place the dates and apricots in the food processor and pulse in 1 second increments until the fruit is broken down into chunks (does not have to be perfectly even at this point). This should take about 5 pulses.
- Zest the orange and measure out 2 teaspoons. Cut the orange in half and squeeze out a couple tablespoons of juice into a small cup or bowl. Add the zest to the fruit in the food processor. Add the juice - if you want firmer balls, add only 1 tablespoon. If you want slightly moister balls, add 2 tablespoons. If you want some extra sweetness, add in 1 tablespoon honey (optional).
- Pulse the fruit, zest and juice mixture a couple more times until the fruit is broken down into smaller pieces and begins to clump up.
