APRICOT-DATE MINI LOAVES
By using a prepared quick bread mix, it's easy to make a loaf of this apricot-date bread for yourself and extras to give to friends.

- Set aside streusel topping packet from quick bread mix. In a large bowl, combine quick bread mix and baking powder. Make a well in the center; add eggs and orange juice. Stir just until moistened. Fold in apricots and dates., Pour into four greased 5x3x2-in. loaf pans. Top with half of the streusel; cut through with a knife to swirl. Sprinkle with remaining streusel; press gently., Bake at 350° for 25-28 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- In a large bowl, combine the dry ingredients. Stir in the apricots, nuts and cherries. Beat eggs and vanilla; stir into the dry ingredients just until moistened. Spoon into eight greased and floured 4-1/2x2-1/2x1-1/2-in. loaf pans (pans will be full). , Bake at 325° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks. Cool completely before slicing.

- Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.
