I serve this smooth, fluffy salad all year for special meals, but it's so pleasant around Eastertime with its pretty color and fruity flavor. The apricot pieces are an unexpected treat. - Ellen Benninger, Stoneboro, Pennsylvania

1 package (6 ounces) apricot or orange gelatin
2 cups boiling water
1 can (20 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
1 can (15 ounces) apricot halves, drained and chopped
1/2 cup chopped walnuts
1 carton (8 ounces) frozen whipped topping, thawed
Additional chopped walnuts, optional

Steps:

  • In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice. Add pineapple to gelatin and set aside. In a bowl, beat cream cheese and pineapple juice until smooth. Stir in gelatin mixture; chill until partially set, stirring occasionally. Stir in apricots and walnuts. Fold in whipped topping. pour into a 13x9-in. dish. Sprinkle with walnuts if desired. Chill until firm.

My Step-mom gave me this recipe about 20 years ago and we have incorporated it into our holiday traditions ever since! It may seem strange to put cheese on this, but it really does cut the sweetness enough to serve it with dinner.

1 (15 ounce) can apricot halves, drained with juice reserved
2 (8 ounce) cans crushed pineapple, drained with juice reserved
2 (6 ounce) packages orange flavored Jell-O® mix
2 cups hot water
½ cup chopped walnuts
1 cup miniature marshmallows
1 cup white sugar
1 egg, beaten
3 tablespoons all-purpose flour
2 tablespoons butter
1 cup heavy cream
½ cup shredded Colby longhorn cheese

Steps:

  • Drain and reserve syrup from apricots and pineapple. Add water to equal 2 1/2 cups.
  • In a mixing bowl, dissolve the gelatin in hot water. Stir in 1 1/2 cups reserved fruit syrup, set aside to cool.
  • To the gelatin mixture, add the apricots, pineapple, nuts and marshmallows. Stir to combine, pour into a lightly oiled 9x13 inch pan and chill until firm.
  • In a small sauce pan, combine the sugar, flour, egg, remaining fruit syrup and butter. Heat and stir constantly until thickened. Refrigerate until chilled.
  • Whip cream until stiff peaks form; fold into chilled custard mixture. Spread over gelatin, refrigerate, and sprinkle with cheese before serving.

I love this salad, and I've made it with both peach and apricot jello, and love them both. Quite refreshing! It's a great salad for a pot luck. Enjoy!

1 (15 oz.) crushed pineapple in its own juice
1 large box apricot jello - or can use peach
1 - 8 oz cream cheese, softened
1/2 c sugar
1 large jar - apricot baby food or can use peach
1 - 8 oz cool whip
1/2 c chopped, walnuts

Steps:

  • 1. In a medium sauce pan, bring the pineapple and juice to a boil - stir in jello until dissolved and simmer for 5 minutes. Set aside to cool.
  • 2. In large bowl, beat the cream cheese and sugar together until well blended. Add the pineapple mixture and baby food, then mix until well blended.
  • 3. Fold in cool whip & nuts.
  • 4. Spread into a 9 x 13 baking dish and refrigerate until set.
  • 5. Serve salad as is or with whipped cream. I sometimes sprinkle nuts on top, before refrigerating. Enjoy! I find this salad refreshing.

1 cup apricot or peach yogurt
1 package (3 ounces) apricot gelatin
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 package (10 ounces) miniature marshmallows
3 cups cubed peeled fresh apricots

Steps:

  • In a large bowl, add yogurt to gelatin; stir 2 minutes to completely dissolve. Gently stir in whipped topping, then marshmallows and apricots. Refrigerate until firm, at least 4 hours.

This is a lovely layered salad (or dessert) to serve with a heavier type of meal or on a hot summer day! The recipe comes from "The Romney Family Table" by Anne Romney who recommends serving it with a curried chicken salad. Recipe halves nicely.

1 (46 ounce) can apricot nectar
4 (4 1/2 ounce) packages apricot gelatin
1 (16 ounce) can apricot halves, drained
1 (16 ounce) container sour cream

Steps:

  • Pour 2 cups of the apricot nectar into a saucepan reserving the rest. Add all the jello to the 2 cups nectar and stir well. Heat the saucepan to boiling, stirring constantly, until all the jello is dissolved.
  • Pour reserved nectar into a large bowl and add the contents of the saucepan. Stir well to blend. Line a large jello mold with the apricot halves, rounded side down. Pour 2 cups of the jello-nectar mixture over the apricot and refrigerate until firm but still a little sticky, about 1 hour. In a bowl, combine the sour cream with 2 more cups of the jello-nectar mixture and beat until fluffy. Pour on top of the first layer already in mold and let chill 2 hours. Pour remaining jello-nectar mixture over the sour cream layer and chill for several hours or overnight.
  • To unmold, dip the mold into hot water for 20 second or so. Loosen around the edges with a knife. Turn out onto serving plate. You may decorate the mold by encircling with fresh fruit or more apricot halves.

2 cups boiling water
1/2 cup sugar
1 (8 oz) pkg of cream cheese (can be light)
1 (8 oz) container of Cool Whip (can be fat free)
1 cup chooped nuts (optional)

Steps:

  • Mix Jello, boiling water and sugar together. Let partially set. Blend cream cheese with juice of pineapple. Add cream cheese mixture and Cool Whip to thickened Jello. Fold in pineapple and nuts. Pour into 9 X 13 inch pan. Let set.

2 tablespoons butter
2 cups Cool Whip
1/4 cup grated cheddar cheese (optional)

  • Drain appricots and pineapple, reserve liquid.
  • Dissolve jello in 2 cups hot water.
  • Add marshmellows and stir until melted.
  • Add 1 cup of reserved liquid.
  • Combine remaining ingredients and put in a 9X13inch pan.
  • Refrigerate until set.
  • Topping:.
  • Put 1 cup reserved liquid in a sauce pan, heat.
  • Mix the sugar and flour, add to liquid.
  • Add 1 beaten egg.
  • Cook to boiling until thickened.
  • Remove from heat and add the butter (margarine).
  • Cool then add 2 cups cool whip (dream whip).
  • Cover the bottom with the topping & refrigerate. Sprinkle with cheese (Optional).

1 c buttermilk
8 oz whipped topping, thawed
1 c chopped pecans

Steps:

  • 1. Combine dry Jello and pineapple in medium sized sauce pan. Heat to simmer and stir until jello is well dissolved. Set off heat and allow to cool slightly.
  • 2. Stir buttermilk into jello mixture.
  • 3. Mix whipped topping into jello mixture.
  • 4. Stir in pecans.
  • 5. Pour into 9x9 pan or into jello mold. Chill for 24 hours before serving.
