Original recipe for these apricot chicken thighs was for the microwave. I've adjusted it for a conventional oven but included directions for the microwave. So easy and tasty, yet low in calories!

2 ½ pounds skinless chicken thighs
⅓ cup apricot preserves
2 tablespoons soy sauce
1 tablespoon dry sherry
1 clove garlic, minced
½ teaspoon ground ginger
1 teaspoon minced green onion

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Arrange chicken thighs in an 8x12-inch baking dish.
  • Combine apricot preserves, soy sauce, sherry, garlic, and ginger in a small bowl. Brush mixture over the thighs.
  • Bake in the preheated oven, basting chicken with the preserve mixture 3 to 4 times, until juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the thickest part of the thighs should read at least 165 degrees F (74 degrees C).
  • Sprinkle green onions over thighs.

Canola oil
1 cup finely chopped yellow onion (1 small onion)
1 tablespoon minced Fresno chile, seeds removed (1 chile)
1 tablespoon minced garlic (4 cloves)
One 13-ounce jar apricot jam
1/2 cup fresh orange juice (1 large orange)
1/4 cup apple cider vinegar
1/2 cup ketchup
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
16 bone-in, skin-on chicken thighs
Canola oil
Chopped fresh parsley, for garnish

Steps:

  • For the apricot BBQ sauce: Heat 1 tablespoon canola oil in a medium saucepan over medium heat. Add the onions and cook until soft, 3 to 4 minutes. Add the chile and garlic; cook an additional 2 minutes. Stir in the apricot jam; cook until the jam melts, 3 to 4 minutes more. Pour in the orange juice and cider vinegar, bring to a simmer, and then add the ketchup, honey, Dijon and Worcestershire. Adjust the heat to medium-low and simmer, stirring often, until thickened, 15 minutes. Remove from the heat and let cool for 5 minutes.
  • Transfer the sauce to a blender and puree until smooth. Add salt to taste. Remove 1 cup for basting the chicken; reserve the rest for serving.
  • For the chicken thighs: Preheat the oven to 375 degrees F. In a small bowl, stir together the smoked paprika, 1 tablespoon salt and 1 teaspoon pepper.
  • Place the chicken thighs on two foil-lined baking sheets. Lightly coat the thighs with canola oil and sprinkle liberally with the spice mixture on both sides.
  • Bake until the chicken is cooked through, 35 minutes. Turn the oven to broil. Baste the chicken with BBQ sauce and broil until the sauce has caramelized and an instant-read thermometer inserted into the chicken reads 160 degrees F, about 2 minutes. Remove to a platter, let rest for 5 minutes
  • Sprinkle the chicken with parsley, and serve with the reserved BBQ sauce.

We really like Apricot Chicken. In the summer I hate to heat up the house. DH made this for a cookout. Absolutely delicious! **There is also a variation in the directions for Asian Glazed Chicken. *PLEASE NOTE!* For easier clean up I would suggest using a grill pan or aluminum to cook the chicken on. Found this recipe in Cooking Light.

3 tablespoons apricot preserves
2 tablespoons red wine vinegar
1 1/2 tablespoons extra virgin olive oil
1 garlic clove, minced
2 bone-in chicken breast halves, skinned
2 bone-in chicken thighs, skinned
2 chicken drumsticks, skinned
1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine first 4 ingredients in a small bowl, stirring well.

Easy recipe for Apricot Glazed Grilled Chicken. Chicken pieces, soaked in a buttermilk bath, grilled to perfection, and finished with a sweet and spicy apricot glaze.

1 whole 4-5 lb chicken, cut into individual pieces
1 quart buttermilk
3/4 cup dry rub
1 teaspoon salt
½ teaspoon pepper
1/2 tablespoon olive oil
2 tablespoons shallots, diced
1/2 jalapeño diced, seeds and ribs removed
1 clove garlic, chopped
½ cup apricot jam
1 tablespoon honey
1 teaspoon freshly squeezed lime juice

Steps:

  • Pat dry chicken.
  • In a large bowl or wide deep dish combine buttermilk, dry rub, salt, and pepper, and stir to combine. Place chicken into buttermilk bath, cover with plastic wrap, and place in fridge to marinate for 2-3 hours.
  • Remove chicken from the marinade. Place on a drying rack (we used a drying rack on top of a foil lined cookie sheet pan). Place back in fridge, uncovered, for one hour.
  • In a small saucepan over medium heat sauté shallots and jalapeños in olive oil for 8 minutes or until translucent. Add garlic and let cook 1-2 minutes. Add jam and honey, stir, and bring to a slight simmer. Reduce heat and simmer for 5 additional minutes.
  • Remove from heat, stir in the lime, and let cool at least 15 minutes to set and thicken.
  • Prepare grill for direct/indirect cooking. (If using a gas grill preheat grill to medium heat.)
  • Place chicken pieces on grill over direct heat, but be careful of flare-ups. After 4-5 minutes (or when a nice crust starts to develop) turn chicken over and allow it to cook an additional 4-5 minutes per side. When the other side has developed a nice crust, move the pieces to indirect heat to avoid flare-ups.
  • As the chicken nears appropriate finish temperature (165 degrees for breast, 180 for thighs) begin to brush chicken pieces liberally with the glaze.Apply all of the glaze between the chicken pieces, top side only!
  • Allow the chicken to finish cooking to temperature (165 degrees), and then remove from the grill. Let the chicken pieces rest 10 minutes to allow juices to redistribute. Serve

This simple lick-your-fingers, glaze-y chicken is perfect for a small cookout. The glaze has just the right amount of sweetness and can be made ahead. To get the mix of thighs, drumsticks, and breasts you'll need, buy two whole chickens and cut them into parts yourself, or you can look in your butcher's display case for bone-in parts that are about the same size-legs about 5 oz. each, thighs about 6 oz., and breast halves a little more than a pound each.

1/2 cup apricot preserves (preferably without corn syrup; I like St. Dalfour's)
3 Tbs. balsamic vinegar
1/2 tsp. crushed red pepper flakes
1/4 tsp. chopped fresh rosemary
Kosher salt
Vegetable oil for the grill
Two 4-lb. chickens, each cut into 8 pieces, or 5 to 6 lb. good-quality bone-in skin-on chicken thighs, drumsticks, and breasts, each breast half cut into two pieces
Freshly ground black pepper

Steps:

  • In a small saucepan, melt the butter over medium heat. Add the preserves, vinegar, red pepper flakes, rosemary, and a large pinch of salt; stir to combine. Bring to a boil, reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, 3 to 5 minutes. Remove from the heat and let cool to room temperature. (If making ahead, store covered in the refrigerator. Before using, warm over low heat to loosen the consistency.) Prepare a medium gas or charcoal grill fire. Using a stiff wire brush, scrub the cooking grate thoroughly. Dip a folded paper towel into vegetable oil and, using tongs, rub it over the grill grate. Season the chicken lightly with salt and pepper. Set the parts skin side down on the grill. Cook, covered, until the skin is golden brown, about 10 minutes. Stay near the grill, especially during the first 10 minutes, to manage any flare-ups, by moving pieces out of the way. If the chicken is browning too quickly, turn the heat down slightly or close the vents partially. Flip the chicken and cook until an instant-read thermometer reads 165°F in the thickest part of each piece, 5 to 10 minutes more. The thighs, legs, and thinner breast pieces are apt to cook a little faster than the thicker breast pieces. Transfer each piece to a platter when done and tent with foil. When all the chicken is done, brush it with the glaze on all sides. Return the chicken to the grill and cook for another minute or so on each side to caramelize the glaze. Brush the chicken with any remaining glaze and serve.
