Provided by Smithfield(R)

Categories     Trusted Brands: Recipes and Tips     Smithfield® Holiday 2015

Time 1h5m

Yield 15

Number Of Ingredients 8

2 sheets frozen puff pastry dough, thawed
1 egg, beaten
1 cup apricot preserves or your favorite flavor
2 cups shredded Gouda cheese
2 tablespoons chopped fresh rosemary leaves
2 pounds Smithfield® Hometown Original Bacon
Flour for dusting
Nonstick cooking spray

Steps:

  • Preheat oven to 375 degrees F. Line two rimmed baking pans with foil, set baking racks in pans, and lightly spray racks with nonstick spray.
  • On lightly floured surface, roll out one puff pastry sheet to roughly 8 by 12 inches. Brush top lightly with beaten egg and thinly spread 1/2 cup of preserves over dough. Sprinkle evenly with 1 cup of shredded cheese and 1 tablespoon rosemary, lightly pressing cheese mixture into dough. Fold short end of dough over to enclose cheese mixture and lightly roll to seal. Cut short-wise into roughly 15 1/2-inch strips. Repeat with remaining puff pastry and ingredients.
  • Lay out one slice of bacon on the diagonal. Grab one strip of prepared dough by the ends and place one end of dough strip horizontally at top end of bacon and roll bacon with dough downward, stretching dough strip as you roll. Place completed spiral-wrapped bacon twist on prepared rack and repeat.
  • Bake twists for 35-45 minutes or until pastry is browned and bacon crisp, rotating pans as needed for even cooking. Let cool five minutes and gently use spatula to remove twists from racks. Serve warm or at room temperature.

APRICOT-GLAZED HAM

Apricot-Glazed Ham image

Provided by Katie Lee Biegel

Categories     main-dish

Time 2h55m

Yield 8 to 10 servings

Number Of Ingredients 9

One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil
2 tablespoons Dijon mustard
2 tablespoons minced fresh sage
1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves
Pinch of cinnamon

Steps:

  • Preheat the oven to 375 degree F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a knife to lightly score the fat in a diamond pattern, taking care not to cut into the meat. Bake the ham for 1 hour.
  • While the ham is baking, make the glaze. In a small saucepan, combine the jam, butter, mustard, sage, vinegar, bay leaf, cloves and cinnamon over medium-low heat. Cook, stirring, until the glaze is thin and syrupy.
  • After the ham has baked 1 hour, brush with about half of the glaze and return to the oven. Cook, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 1 to 1 1/2 hours longer. If the glaze starts to burn, tent with a piece of greased foil.
  • Remove the ham from the oven and tent with a piece of greased foil. Let rest for about 10 minutes before carving.

  • Remove ham from package and netting. If it’s been refrigerated, if possible let it sit out for about 1 hour to take a bit of the chill off. If ham is not pre-sliced, score the ham with shallow 1/2-inch/12mm criss-cross cuts.
  • Preheat oven to 350°F/175°C. Lay ham cut side down on a baking dish and cover tightly with aluminum foil. Don’t let any steam enter or escape the foil so that the ham doesn’t dry out.
  • While the Ham Bakes - Make the Glaze: In a saucepan, combine the brown sugar glaze ingredients (apricot jam, brown sugar, orange juice, optional mustard, cinnamon, clove, and black pepper). Heat and whisk until brown sugar is dissolved and glaze is well combined.
