APRICOT MUSTARD-GLAZED SALMON WITH ARUGULA
Grilled salmon with an apricot, mustard, and balsamic glaze served over a bed of baby arugula dressed with a simple vinaigrette made from the same ingredients as the glaze. This recipe was made in a Panasonic CIO.

Steps:
- Mix 1/4 cup apricot preserves, 1 1/2 tablespoon mustard, and 1 teaspoon balsamic vinegar in a bowl to make glaze. Divide glaze between 2 separate bowls.
- Whisk 2 tablespoons balsamic vinegar, 2 teaspoon apricot preserves, 1 teaspoon mustard, salt, and pepper together in a bowl. Drizzle in 1/4 cup olive oil, whisking constantly, until dressing is emulsified.
- Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
- Brush 1 teaspoon of olive oil over both sides of each piece of salmon. Season with salt and pepper.
- Place salmon flesh-side down in the center of the grill pan. Set timer for 3 1/2 minutes and press "Start." Flip salmon so skin side is down. Brush with glaze from one of the bowls. Set timer for 4 minutes and press "Start." Remove salmon to a plate and spoon glaze from the second bowl on top. Let salmon rest for 5 minutes.
- Place 1 1/2 cup arugula and 1/2 cup cherry tomatoes on each serving plate. Drizzle with dressing. Top with cooked salmon fillets.

- Mix cinnamon sticks, ginger, apricot nectar, and soy sauce in medium sauce pan. Boil gently and reduce volume by 1/2 (about 20 minutes). Strain and keep the juice and cinnamon sticks.
- Brush fish with juice and bake for 4-5 minutes in 350 degree oven.
- Brush tops with more juice and broil for another 5-7 minutes until fish is done. Fish should be blackened when done.
- Pour some juice on each plate and place fish on plate. Garnish with pieces of cinnamon sticks.
- Serve with your favorite rice, asparagus, or string bean side dish.

- Bring quinoa and broth to a boil. Reduce heat, cover and simmer until liquid has evaporated, about 10-15 minutes. Fluff with a fork. *Note, this is less than the recommended amount of liquid.
- Prepare ingredients: Preheat broiler to high. Season salmon with 1/4 tsp. salt and 1/8 tsp. pepper. Stir together apricot preserves and dijon mustard and spread over salmon filets. Slice green onions. Mince garlic. Chop zucchini. Chop pepper.
- Heat large skillet over medium high heat. Add remaining 1 Tbsp. oil to pan, and when it's hot, add vegetables to pan, stirring occasionally for about 7-8 minutes.
- While the veggies are cooking, broil the salmon on the second or third rack for about 10-12 minutes, or until cooked through.
- When the quinoa is done cooking, add to veggie pan and toss together. Add soy sauce to pan and stir until the liquid has evaporated.
