This is a great recipe given to me by a close friend who never has enough time to cook for her family. It's quick and easy to prepare and cook, allowing you to have a yummy dinner on the table in no time. The sauce goes very well with a side of rice, too. Enjoy!

Steps:
- Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
- Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat. Add the pork chops and cook until brown on each side, and no longer pink in the center, about 4 minutes per side. Remove chops from the skillet. Reduce heat to medium low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes. Return pork chops to the skillet, turning to coat each side in the sauce; cook 1 minute.

- Mix flour, salt, pepper, and Emeril's Chicken Rub in a large, shallow bowl. (I like coating trays like these.)
- In another shallow bowl, mix the egg and milk.
- Working one at a time, coat the pork chops with flour, then egg, then flour again. Be sure that both sides of each pork chop are fully coated. Set breaded pork chops aside.
- Pour 2 Tablespoons of olive oil into a large skillet. Heat over medium heat.
- Line a lipped baking sheet with aluminum foil and lightly spray with cooking spray; set aside.
- Place pork chops, 2 at a time, into the hot skillet. Brown on each side for 2-4 minutes. Place browned pork chops on the baking sheet. (This will not fully cook the pork chops; they will finish cooking in the oven.)
- Add more olive oil to the skillet as needed.
- When all pork chops are browned, bake them in the oven at 400 degrees for 10-15 minutes, until the internal temperature measures 145 degrees with a meat thermometer.
- When the pork chops are done, remove them from the oven and let rest for 3-5 minutes.

- In a small bowl, combine oil, oregano, salt, thyme, black pepper, red pepper and garlic.
- Rub mixture on all sides of pork tenderloins, rubbing it into meat surface.

- Heat 1 teaspoon olive oil in a large non-stick skillet over medium-high heat.
- Season pork chops evenly with 1/4 teaspoon salt and black pepper; cook in the hot skillet until browned, about 2 minutes per side. Transfer chops to a plate, retaining drippings in the skillet.
- Heat remaining teaspoon olive oil in the retained drippings; add onions and season with remaining salt. Saute onions until golden brown, about 10 minutes.
- Spread about half the cooked onions and half the sliced apricots into the bottom of a slow cooker crock. Lay pork chops atop the onion and apricots. Layer remaining onion and apricots over the pork chops; add pineapple juice, ginger, thyme, and cinnamon stick.

BRAISED PORK CHOPS WITH APRICOTS

- In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking, in it brown the pork chops, patted dry and seasoned with salt and pepper, and transfer them to a plate. Add 1 tablespoon of the butter to the skillet and in it cook the shallot, the cumin, the ground coriander, the zest, and the gingerroot over moderately low heat, stirring, until the shallot is softened. Simmer the sauce for 1 to 2 minutes, or until it is thickened, stir in the fresh coriander and salt and pepper to taste, and pour the sauce over the pork chops.

- Mix together the preserves, soy sauce, ginger and water. Reserve 1/4 cup.
- Marinate the pork chops in the mixture for one hour turning once to make sure all of the pork gets seasoned. Do not use a metal bowl to marinate.
- Remove chops from marinade and place on a broiler pan previously sprayed lightly with non-stick cooking spray. Discard used marinade.
- Broil the pork chops about 5 inches from heat until juices run clear (about 4-5 minutes each side).
- Spoon or brush the reserved mixture on the pork chops and broil for one minute longer.
- Serve.
- Always make sure pork is fully cooked before eating!
