This is a great recipe given to me by a close friend who never has enough time to cook for her family. It's quick and easy to prepare and cook, allowing you to have a yummy dinner on the table in no time. The sauce goes very well with a side of rice, too. Enjoy!

⅓ cup apricot preserves
⅓ cup fruity white wine, such as Gewurztraminer
½ teaspoon ground ginger
salt and pepper to taste
2 tablespoons olive oil
4 boneless pork chops, 1/2 inch thick

Steps:

  • Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
  • Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat. Add the pork chops and cook until brown on each side, and no longer pink in the center, about 4 minutes per side. Remove chops from the skillet. Reduce heat to medium low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes. Return pork chops to the skillet, turning to coat each side in the sauce; cook 1 minute.

6 bone-in pork chops (sliced 3/4-inch to 1-inch thick)
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
4 teaspoons Emeril's Chicken Rub
1 egg (lightly scrambled)
1 cup milk
2-4 Tablespoons extra-virgin olive oil
2 cups frozen apricots (thawed)
1/4 cup sugar
2 teaspoons lemon juice
1/2 cup sweet white wine
1/2 teaspoon ground ginger

Steps:

  • Mix flour, salt, pepper, and Emeril's Chicken Rub in a large, shallow bowl. (I like coating trays like these.)
  • In another shallow bowl, mix the egg and milk.
  • Working one at a time, coat the pork chops with flour, then egg, then flour again. Be sure that both sides of each pork chop are fully coated. Set breaded pork chops aside.
  • Pour 2 Tablespoons of olive oil into a large skillet. Heat over medium heat.
  • Line a lipped baking sheet with aluminum foil and lightly spray with cooking spray; set aside.
  • Place pork chops, 2 at a time, into the hot skillet. Brown on each side for 2-4 minutes. Place browned pork chops on the baking sheet. (This will not fully cook the pork chops; they will finish cooking in the oven.)
  • Add more olive oil to the skillet as needed.
  • When all pork chops are browned, bake them in the oven at 400 degrees for 10-15 minutes, until the internal temperature measures 145 degrees with a meat thermometer.
  • When the pork chops are done, remove them from the oven and let rest for 3-5 minutes.

Steps:

  • In a large skillet, brown pork chops in oil. Sprinkle both sides with salt and pepper. Combine the orange juice, ginger and garlic; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 7-8 minutes or until meat juices run clear. Remove chops and keep warm. , Combine cornstarch and water until smooth; stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over pork chops.

Steps:

  • In a small bowl, combine oil, oregano, salt, thyme, black pepper, red pepper and garlic.
  • Rub mixture on all sides of pork tenderloins, rubbing it into meat surface.
  • Place tenderloins in center of cooking grate. Grill 25 to 30 minutes for medium (160°F/71°C) and centers are still slightly pink, turning occasionally throughout grilling time to brown them evenly.
  • Meanwhile, make sauce:.
  • In small saucepan, combine all sauce ingredients. Cook over medium heat 2 to 3 minutes until jelly is melted and sauce is hot. Remove from heat and keep warm.

2 teaspoons olive oil, divided
4 (4 ounce) lean boneless pork loin chops
¾ teaspoon table salt, divided
¼ teaspoon ground black pepper
3 small red onions, thinly sliced
12 dried apricot halves, sliced, divided
¾ cup pineapple juice
2 teaspoons minced fresh ginger root
½ teaspoon dried thyme
1 cinnamon stick
¼ cup chopped fresh cilantro

Steps:

  • Heat 1 teaspoon olive oil in a large non-stick skillet over medium-high heat.
  • Season pork chops evenly with 1/4 teaspoon salt and black pepper; cook in the hot skillet until browned, about 2 minutes per side. Transfer chops to a plate, retaining drippings in the skillet.
  • Heat remaining teaspoon olive oil in the retained drippings; add onions and season with remaining salt. Saute onions until golden brown, about 10 minutes.
  • Spread about half the cooked onions and half the sliced apricots into the bottom of a slow cooker crock. Lay pork chops atop the onion and apricots. Layer remaining onion and apricots over the pork chops; add pineapple juice, ginger, thyme, and cinnamon stick.

two 1-inch thick loin pork chops
1 1/2 tablespoons unsalted butter
1/2 cup finely chopped shallot
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly grated orange zest
1 teaspoon grated peeled fresh gingerroot
1/3 cup dry white wine
1 cup chicken broth
1/2 cup thinly sliced dried apricots
1 1/2 teaspoons all-purpose flour
1 1/2 tablespoons minced fresh coriander

Steps:

  • In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking, in it brown the pork chops, patted dry and seasoned with salt and pepper, and transfer them to a plate. Add 1 tablespoon of the butter to the skillet and in it cook the shallot, the cumin, the ground coriander, the zest, and the gingerroot over moderately low heat, stirring, until the shallot is softened. Add the wine, the broth, and the apricots, bring the liquid to a simmer, and in it braise the pork chops, covered, over moderately low heat for 20 minutes, or until they are tender. Transfer the chops to a serving plate with a slotted spatula and keep them warm. In a small bowl stir together well the remaining 1/2 tablespoon butter, softened, and the flour until the mixture is well combined, add the beurre manié to the braising liquid, and bring the sauce to a boil, stirring. Simmer the sauce for 1 to 2 minutes, or until it is thickened, stir in the fresh coriander and salt and pepper to taste, and pour the sauce over the pork chops.

1 garlic clove, minced
1 tablespoon canola oil
1/2 cup sherry or chicken broth
1/4 cup honey
1/4 cup reduced-sodium soy sauce
1 tablespoon sesame seeds
1 tablespoon grated orange zest
3/4 teaspoon hot pepper sauce
4 bone-in pork loin chop (6 ounces each)
1 teaspoon cornstarch
2 tablespoons water

Steps:

  • In a large saucepan, cook ginger and garlic in oil for 1 minute; remove from the heat. Stir in the sherry or broth, honey, soy sauce, sesame seeds, orange zest and hot pepper sauce. Pour 1/2 cup into a small bowl; set aside. Pour remaining marinade into a large bowl; add pork chops. Turn to coat; cover and refrigerate for at least 1 hour., Meanwhile, in a small saucepan, combine cornstarch and water until smooth; add reserved marinade. Bring to a boil; cook and stir for 1 minute or until thickened., Drain and discard marinade from pork. On a lightly oiled grill rack, grill chops, covered, over medium heat for 4-5 minutes on each side; basting occasionally with sauce or until a thermometer reads 145°. Let stand for 5 minutes before serving. Serve with remaining sauce.

8 boneless pork chops
1/2 cup apricot preserves
2 tablespoons soy sauce
1 1/2 teaspoons ground ginger
2 tablespoons water

Steps:

  • Mix together the preserves, soy sauce, ginger and water. Reserve 1/4 cup.
  • Marinate the pork chops in the mixture for one hour turning once to make sure all of the pork gets seasoned. Do not use a metal bowl to marinate.
  • Remove chops from marinade and place on a broiler pan previously sprayed lightly with non-stick cooking spray. Discard used marinade.
  • Broil the pork chops about 5 inches from heat until juices run clear (about 4-5 minutes each side).
  • Spoon or brush the reserved mixture on the pork chops and broil for one minute longer.
  • Serve.
  • Always make sure pork is fully cooked before eating!
