This Fresh Apricot Crumble with Oat Topping is a delicious summer dessert. Sweet, tangy and crispy, it makes a great quick and easy stone fruit dessert.

600 gr (1.3 lbs) Fresh Apricots ((about 18-20 small apricots))
40 gr (3 tablesp.) Brown Sugar
1/2 Lemon, Juiced ((about 30ml / 2tbsp))
7 gr (1 tablesp.) Cornstarch
1/2 teasp. Ground Cinnamon
1/2 teasp. Ground Ginger
150 gr (1 1/2 cup) Rolled Oats ((certified Gluten-Free if required))
50 gr (1/4 cup) Brown Sugar
1 teasp. Ground Cinnamon
1 teasp. Ground Ginger
120 gr (1/2 cup) Unsalted Butter (soft)

Steps:

  • Preheat your oven on 180'C/350'F.
  • Wash and cut the Fresh Apricots into thin slices (I cut each apricots in 8, but you can also cube them).
  • Place them in a large mixing bowl with the Brown Sugar, Lemon Juice, Cornstarch, Ground Cinnamon and Ginger. Toss together until evenly coated.
  • Transfer into a baking dish (see note 1) and set aside.
  • Place the Rolled Oats, Brown Sugar, Ground Cinnamon and Ground Ginger in a large mixing bowl.
  • Cut the soft Butter into small cubes and add them to the Oats. Use your fingers to rub the butter into the Oats to create chunks of dough (see note 2). Cover the Apricots with the crumble.
  • Bake for 25 to 35 minutes, or until the topping is golden brown and the filling under is bubbling. Leave to cool down for about 10 minutes, and serve warm (see note 3).

6 cups apricots (30 oz/850 g) apricots ( (cut into eighths - about 12))
1 medium Granny smith apple ((peeled and grated))
3 tablespoons cornstarch
3 tablespoons granulated sugar ((or to taste))
2 tablespoons lemon juice
¾ cup (3¾ oz/105 g) all-purpose flour
¾ cup (4½ oz/128 g) dark brown sugar
½ cup (2 oz/57 g) almond flour
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup (4 oz/115 g) butter, at room temperature
Vanilla ice cream ((for serving))

Steps:

  • Preheat the oven to 350°F (180°C).

¾ cup white sugar
½ cup unsalted butter, softened
2 large eggs
2 ½ cups self-rising flour
1 ¼ cups milk
1 teaspoon white vinegar
1 teaspoon vanilla extract
6 apricots fresh apricots, pitted and halved, or more to taste
1 cup all-purpose flour
¾ cup superfine (castor) sugar
½ cup salted butter, softened, cut into cubes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 7x11-inch rectangular baking dish and line with parchment paper.
  • Beat white sugar, butter, and eggs together in a bowl with an electric mixer. Add self-rising flour, milk, vinegar, and vanilla extract and stir with spoon. Pour into the prepared dish. Cover with apricots, pitted-sides down.
  • Place all-purpose flour, superfine sugar, and cubed butter into a bowl. Rub butter into flour and sugar with your fingertips until crumbles form. Sprinkle topping evenly over the apricots.
  • Bake in the preheated oven until golden and a toothpick inserted into the center comes out clean, about 40 minutes.

A fresh spin on the traditional pudding, this nutty, fruity crumble is great for a dinner party or Sunday lunch

2 x 410g cans apricots , drained
600g jar apricot compote (we used Bonne Maman)
200g plain flour
140g almond , with skins, chopped
1 tsp ground cinnamon
200g butter , diced
100g caster sugar
100g demerara sugar
vanilla ice cream or crème fraîche , to serve

Steps:

  • Mix the apricots and compote together in a big baking dish or 6-8 individual dishes. Mix the flour, nuts and cinnamon, then rub in the butter to form crumbs. Stir in the sugars, then sprinkle over the apricot mixture. You can now cover and leave this for up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4 (or turn down the oven once the pie comes out). Bake for 40-45 mins until the crumble is crisp and golden, then serve with ice cream or crème fraîche.

1 1/4 cups rolled oats
1/4 cup rice flour
1/4 cup whole-wheat flour or toasted flaxseeds, coarsely ground
1/3 cup turbinado sugar
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon salt
3 ounces (6 tablespoons) cold unsalted butter, cut into 1/2-inch pieces
2 pounds apricots, cut in half, stones removed
3 tablespoons mild honey or dark agave nectar
1/2 teaspoon cinnamon
1/2 teaspoon cornstarch
1/4 cup lightly toasted slivered almonds
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • First make the topping. Preheat the oven to 350 degrees. Cover a baking sheet with parchment. Place the oats, rice flour, whole-wheat flour or ground flaxseeds, turbinado sugar, salt and nutmeg in a food processor fitted with the steel blade and pulse several times to combine. Add the butter and pulse until the butter is evenly distributed throughout the grain mix. The mixture should have a crumbly consistency.
  • Spread the topping over the parchment-covered baking sheet in an even layer. Place in the oven and bake 10 minutes. Rotate the pan, stir the mixture, and bake another 10 minutes, until nicely browned. Remove from the heat and allow to cool. You can keep this in an airtight container or freezer bag in the freezer for several weeks.
  • Raise the oven heat to 400 degrees. In a large bowl, toss together the apricots, honey or agave nectar, cinnamon, cornstarch, slivered almonds, vanilla and almond extract. Cover and let sit for 15 minutes.
  • Butter a 2-quart baking dish. Scrape the fruit and all of the juice in the bowl into the baking dish. Spread the crumble topping over the apricots in an even layer. Bake 20 minutes, or until the fruit is bubbling and the topping is nicely browned. Remove from the heat and allow to cool for at least 10 minutes before serving.
