Chicken thighs or breasts baked with a tangy cranberry/onion/salad dressing sauce. Makes a simple, different dinner. Super easy and delicious!

6 chicken thighs
1 (16 ounce) can cranberry sauce
1 (8 ounce) bottle Russian-style salad dressing
1 packet dry onion soup mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. In a large bowl combine the cranberry sauce, salad dressing and soup mix and mix well. Coat chicken pieces with this mixture.
  • Cover dish and bake at 350 degrees F (175 degrees C) for 1 1/2 to 1 3/4 hours, or until chicken is cooked through and juices run clear. Remove cover for the last 15 minutes of baking time.

1 cup orange juice
1 cup water
4 cups fresh cranberries
¾ cup sugar
1 cup chopped dried apricots
1 cup golden raisins
1 tablespoon grated orange zest

Steps:

  • In a large saucepan over medium heat, mix the orange juice, water, cranberries, sugar, apricots, raisins, and orange zest. Stir constantly until sugar has dissolved, about 5 minutes. Bring to a boil, and cook 10 minutes, or until cranberries have burst. Remove from heat, and chill at least 8 hours, or overnight, before serving cold.

1-2/3 cups sugar
1-2/3 cups water
3/4 cup orange juice
1/4 cup chopped dried apricots
1/4 cup chopped dried apples
1/4 cup dried cranberries
1 teaspoon grated lemon zest
1 teaspoon grated orange zest

Steps:

  • In a large saucepan, combine the first 7 ingredients. Cook over medium heat until berries pop, about 15 minutes. Remove from the heat; stir in lemon and orange zests. Transfer to a bowl; refrigerate until chilled.

16 ounces cranberries (fresh or frozen)
2/3 cup sugar
1 cup fresh orange juice
1/2 cup apricot preserves

Steps:

  • In a saucepan, over medium heat, melt the butter.
  • Add the ginger and cook, stirring, for 2 minutes.
  • Stir in the cranberries, sugar, orange juice, and preserves.
  • Cook, stirring occasionally, until the cranberries burst and the sauce thickens, about 20 minutes.
  • Transfer to a bowl and serve warm. NOTE: The sauce can be made up to 2 days in advance. Cover and keep refrigerated until ready to reheat.

This recipe is from Ken Kostick's "3 Easy Steps to Great Meals" and is my favourite cranberry sauce to serve at Christmas. I leave it chunky, but Ken notes in his cookbook that you can puree it for a few minutes if you prefer a smooth sauce.

2 cups dried cranberries
1/2 cup chopped dried apricot
1/2 cup raisins
3/4 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1 pinch ground cloves
5 1/2 cups water
3/4 cup sugar
1/2 cup cider vinegar

Steps:

  • In a large bowl, combine the cranberries, apricots, raisins and spices. Mix well, then set aside.
  • Combine the water and sugar in the saucepan. Bring to a boil and reduce the heat to medium. Cook, stirring constantly, until the sugar is completely dissolved.
  • Add the dried fruit mixture and vinegar. Bring the mixture to a boil and reduce the heat. Simmer the sauce for 10 minutes or until the fruit is tender.
  • Let sauce cool and serve.
