½ cup butter, softened
¼ cup white sugar
1 cup all-purpose flour
⅔ cup dried apricots
1 cup water
2 eggs
1 cup packed light brown sugar
⅓ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup chopped walnuts
¾ cup flaked coconut
⅓ cup confectioners' sugar for decoration

  • Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
  • In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
  • Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.

FROSTED COCONUT APRICOT COOKIES

Frosted Coconut Apricot Cookies image

A friend at church gave me this recipe and I tweaked it a bit. The cookies are biscuit-like and the frosting makes them very special. I'm sorry the picture is out of focus and I will try to post a better one when I make these again, perhaps this weekend.

Time 20m

Number Of Ingredients 16

COOKIES:
1/2 c butter, room temperature
1 pkg (3 ounce) cream cheese, softened
1 Tbsp milk
1/4 c brown sugar, firmly packed
1/2 c apricot preserves
1 1/4 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
1/2 c finely chopped pecans
FROSTING:
1 c powdered sugar
1/4 c apricot preserves
1 Tbsp butter
1/2 c flaked coconut

Steps:

  • 1. COOKIES: Preheat oven to 350 degrees. Grease cookie sheets or use parchment paper. In a medium bowl, cream together the 1/2 cup butter, cream cheese and milk until well blended. Stir in the brown sugar and 1/2 cup of apricot preserves. Combine the flour, baking powder, cinnamon and salt; stir into the batter. Mix in the pecans last.
  • 2. Drop by rounded spoonfuls onto the prepared cookie sheet. Cookies should be about 2 inches apart. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
