Time 2h40m

Yield Makes one 9-inch tart

Number Of Ingredients 10

1 1/2 pounds peaches or apricots, sliced 1/2 inch thick (4 3/4 cups)
1/3 cup granulated sugar (1/2 cup if using apricots)
1 teaspoon fresh lemon juice
1/4 teaspoon coarse salt
1 tablespoon cornstarch
1 disk Pate Brisee (Pie Dough)
All-purpose flour, for surface
1 large egg, lightly beaten
Sanding sugar (optional), for sprinkling
Whipped cream, for serving

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with foil, then parchment. Stir together fruit, granulated sugar, lemon juice, salt, and cornstarch.
  • Roll out pate brisee into a 13-inch round, about 1/8 inch thick, on a lightly floured surface. Transfer to baking sheet. Arrange fruit in center, leaving a 2-inch border. Fold over border to enclose fruit, leaving center open. Brush crust with egg, and sprinkle with sanding sugar.
  • Bake until golden brown and bubbling in center, about 1 hour 10 minutes. Let cool on baking sheet 10 minutes, then slide galette on parchment onto a wire rack. Let cool completely. Serve with whipped cream.

Categories     Egg     Dessert     Bake     Broil     Apricot     Almond     Gourmet     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher     Diabetes-Friendly

Yield Makes 10 to 12 servings

Number Of Ingredients 10

Pastry dough (from butterscotch chiffon pie recipe)
18 to 20 drained canned apricot halves (from 2 [1-lb] cans)
1 cup whole blanched almonds (5 oz)
6 tablespoons plus 2 teaspoons sugar
1 stick (1/2 cup) unsalted butter, softened
2 large eggs
1 teaspoon vanilla
1/4 teaspoon almond extract
Special Equipment
an 11- by 1-inch fluted tart pan with a removable bottom; pie weights or raw rice

Steps:

  • Make tart shell:
  • Put oven rack in middle position and preheat oven to 375°F.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 14-inch round and fit into bottom and side of tart pan, then trim flush with top of rim. Chill until firm, about 30 minutes.
  • Lightly prick bottom of shell all over with a fork, then line with foil and fill with weights. Bake until pastry is pale golden along rim, and set underneath weights, 18 to 20 minutes. Carefully remove foil and weights and bake shell until bottom and side are golden, about 10 minutes more. Cool completely in pan on a rack, about 30 minutes. Leave oven on.
  • Fill and bake tart:
  • While shell cools, roast apricots in 1 layer, cut sides up, in a 13- by 9-inch baking dish 30 minutes, then set aside.
  • Reduce oven temperature to 350°F.
  • Pulse almonds with 2 tablespoons sugar and a pinch of salt in a food processor until finely ground.
  • Beat together butter and 1/4 cup sugar with an electric mixer at medium-high speed until pale and fluffy. Add eggs, 1 at a time, beating well after each addition, then beat in almond mixture, vanilla, and almond extract until just combined.
  • Spread frangipane evenly in tart shell. Arrange apricots, cut sides up, on top of frangipane. (Frangipane will puff up around apricots when baked.) Bake until frangipane is golden brown and just firm to the touch, about 45 minutes.
  • Preheat broiler.
  • Sprinkle top of tart with remaining 2 teaspoons sugar and broil about 6 inches from heat until sugar is melted and top of tart is browned, 1 to 2 minutes (watch carefully). Cool to warm or room temperature in pan on a rack, at least 30 minutes.

APRICOT TART WITH PISTACHIOS

Apricot Tart With Pistachios image

Working with phyllo dough is easy and satisfying, especially for cooks who are inclined to shy away from making pastry. Frozen puff pastry is having a moment, but for little effort, you can achieve similar results with phyllo sheets and never lift a rolling pin. Bright orange apricots are the ideal fruit, but other summer stone fruits, such as pluots, plums or nectarines, also work well. This makes a very impressive open face tart with a very crisp, ultraflaky crust.

Categories     pies and tarts, dessert

Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 6

1 (16-ounce) package phyllo sheets, thawed (about 18 sheets)
3/4 cup melted butter
1 cup/320 grams best-quality apricot jam, or use orange marmalade
1/2 cup/50 grams chopped pistachios or walnuts
8 large apricots (1 1/2 pounds/680 grams), halved, pitted and cut into 6 wedges each (about 3 cups)
1/3 cup/67 grams granulated sugar

Steps:

  • Heat oven to 375 degrees. Lay 1 sheet phyllo on a parchment-lined 12-by-18-inch rimmed baking sheet. Drizzle with 1 tablespoon butter and brush to coat the entire phyllo sheet.
  • Top with another sheet and butter as above. Repeat with 7 more sheets, for a total of 9, buttering as you go. The final, top layer should also be buttered. (The rest of the phyllo can be wrapped and frozen for future use.)
  • Dot the top sheet with jam by the teaspoon, then, using a spatula, spread the jam to cover the entire sheet, leaving a 2-inch border.
  • Sprinkle a layer of half the chopped pistachios over the jam. Place the apricot wedges, skin-side down, in even rows across the surface, then sprinkle again with remaining pistachios.
  • Carefully fold over the edges on all sides of the tart to make a 10-by-16-inch rectangle. Brush folded sides with butter. Sprinkle sugar generously over apricots and folded edges.
  • Bake until pastry is golden and apricots begin to color, about 1 hour. Cool for 15 minutes, then cut into squares. Serve warm or at room temperature.

  • (it’s nice to make this a day ahead) In a small bowl, beat egg yolks and cream. In a food processor, combine flour salt and sugar. Mix well. Add butter. Pulse until texture is like sand. Gradually add egg mixture and pulse until it forms a ball. If the mixture seems dry or is not forming a dough, add a tablespoon of ice-cold water. Form a ball, place on a plastic wrap, flatten, wrap and refrigerate 1 hour or overnight.
  • Place dough between two layers of parchment and roll it out until 1/4 in thick, rolling from the middle out. It may not look perfect, with cracks and uneven edges. Not to worry, you can tidy it up in the tart pan. Starting at one edge, wrap dough around the rolling pin and lift it onto the tart pan. Unwrap and gently start pressing it into the pan, patching up any tears and pressing it into the sides and corners with your fingers. To remove excess dough, roll the rolling pin lightly over the top for a nice clean edge. Smooth out with your fingers. Prick the bottom with a fork. Freeze for 30 minutes and preheat the oven to 400F.
  • Line the tart shell with parchment paper. Fill the parchment-lined tart with pie weights, beans, or a generous amount of rice. This will ensure that it holds its shape and edges will not sink.
  • Place in 400F oven for 15 minutes, or until set. Gently remove the tart from the oven and carefully lift out the parchment and rice.
