1 cup Original Bisquick™ mix
1 tablespoon grated lemon peel
1/4 teaspoon garlic powder
4 boneless skinless chicken breasts
3 tablespoons butter or margarine, melted
2/3 cup apricot preserves
2 tablespoons lemon juice
1/4 teaspoon ground ginger
1/2 teaspoon soy sauce

Steps:

  • Heat oven to 425°. Spray15x10-inch baking pan with cooking spray. Beat egg and water slightly. Stir together baking mix, lemon peel and garlic powder.
  • Dip chicken into egg mixture, then coat with baking mix mixture. Place in pan. Drizzle with melted butter.
  • Bake uncovered 20 minutes; turn chicken. Bake about 10 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. Heat remaining ingredients in 1-quart saucepan over low heat, stirring occasionally, until warm. Spoon over chicken.

  • Preheat oven to around 180 degrees celsius.

1 teaspoon salt
½ teaspoon pepper
3 Tablespoons vegetable oil
⅔ cup apricot preserves
1 Tablespoon fish sauce
1 Tablespoon honey
1 Tablespoon orange juice
1 teaspoon dried rosemary
Chopped parsley, optional garnish

Steps:

  • Preheat the oven to 375 degrees Fahrenheit and prepare a 9x13 inch baking dish by spraying it with cooking spray.
  • Using a mallet or rolling pin, flatten each chicken breast until it is 1 inch thick on all sides.
  • Salt and pepper the chicken breasts and then lay them out evenly in the prepared baking dish. Take care not to overlap them.

2 tablespoons Dijon mustard
½ teaspoon salt
¾ cup whole-wheat cracker crumbs
1 tablespoon grated orange zest
¼ teaspoon ground black pepper
4 skinless, boneless chicken thighs
¼ cup apricot preserves

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare a baking sheet with cooking spray.
  • Whisk together the orange juice, mustard, and salt in a small bowl. Mix together the cracker crumbs, orange zest, and black pepper on a plate. Coat each chicken thigh in the orange juice mixture and then press into the cracker crumb mixture to cover both sides completely. Place the breaded thighs on the prepared baking sheet.

1 tablespoon cornflour
460 g apricot nectar
130 g dried apricots, quartered
1 green capsicum, diced
1/2 cup sour cream

Steps:

  • Melt butter in pan, add chicken, cook until well browned on both sides, remove from pan. Add onions and garlic to the same pan, cook, stirring until soft.
  • Blend cornflour and apricot nectar, add to pan, stir until sauce boils. Reduce heat, season with salt and pepper, add dried apricots. Return chicken to pan, cover, simmer until chicken is tender, stirring occasionally.
  • Add the capsicum and cook for 5 minutes, turn heat down, stir in sour cream.
