AMARETTI - ITALIAN CHEWY ALMOND COOKIES

Amaretti - Italian Chewy Almond Cookies image

Amaretti cookies are probably the world's most famous Italian cookies. And for a good reason! Slightly crunchy on the outside they're perfectly chewy inside.

Provided by Italian Recipe Book

Categories     Cookies

Time 30m

Number Of Ingredients 6

20 oz peeled almonds (OR 20 oz almond flour)
1 ⅔ cups sugar (OR 12 oz confectioners sugar)
1 tsp almond extract (OR 5 oz bitter apricot kernels)
5 egg whites
1 pinch salt
1 cup confectioners sugar

Steps:

  • If you're using whole peeled almonds, toast them in the oven until lightly brown. This will give a darker color and more bright flavor to amaretti.
  • Once almonds reach desired color, cool them completely.
  • Pulse almonds and bitter apricot kernels (if you opt to use those as in traditional Italian recipe) with sugar in a food processor as finely as you can.
  • NOTE: if you are using almond flour, use confectioners sugar instead of regular sugar. This way you don't need to use a food processor. Simply mix everything in the bowl.
  • Add almond extract.
  • Beat egg white with a pinch of salt until completely white and fluffy.
  • Start to fold egg white into sugar and almond mix. Add a couple of table spoons at a time. You should reach silky and stiff consistency of the cookie dough. NOTE: You may not need to use all egg whites, just enough to get the dough together.
  • Sprinkle work surface with some powdered/confectioners sugar.
  • Pinch off some dough and roll it into ⅔ of an inch rope.Using a dough scraper cut the rope into ⅔ of an inch pieces.
  • Roll each "pillow" giving it a ball shape (size of a walnut) and roll it in generous amount of confectioners sugar.
  • Place each cookie on a baking sheet lined with parchment paper.Decorate with an almond nut (optional).
  • Bake in preheated to 350F oven for 12-15 minutes, just until inside the crinkles amaretti become lightly brown.

APRICOT AMARETTO CHEWS

Chunky and chewy cookies...a delicious mouthful! Almond extract may be used in place of amaretto. In dough use 1/2 tsp almond extract and 2 tsp of water in place of the amaretto. In icing use 1/4 tsp almond extract and enough water to get the correct consistency in place of the amaretto.

Apricot and Nut Cookies with Amaretto Icing Recipe - (4.3/5) image

Provided by á-4084

Number Of Ingredients 12

1/2 cup (1-stick) unsalted butter, room temperature
1/2 cup plus 2 tablespoons sugar
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 large egg
1 1/4 cups all-purpose flour
1/2 cup dried apricots, coarsely chopped
1/4 cup slivered almonds, toasted
2 tablespoons pine nuts, toasted
1 3/4 cups confectioners' sugar
5 to 7 tablespoons almond flavored liqueur (amaretto, if you have it)

Steps:

  • In a large bowl, beat the butter, sugar, vanilla, cinnamon, and salt with an electric mixer until light and fluffy, about 2 minutes. Beat in the egg. Stir in the flour until just blended. Mix in the apricots, almonds, and pine nuts. Transfer the dough to a sheet of plastic wrap and shape into a log, about 12-inches long and 1 1/2-inches in diameter. Wrap the dough in the plastic and refrigerate for 2 hours. Preheat the oven to 350°F. Line 2 heavy baking sheets with parchment paper. Cut the dough log crosswise into 1/4 to 1/2 inch-thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Bake until the cookies are golden around the edges, about 15 minutes. Transfer the cookies to a wire rack to cool completely before icing. Place the confectioners' sugar in a medium mixing bowl. Gradually whisk in the almond flavored liqueur until the mixture is of drizzling consistency. Place the wire rack over a baking sheet. Using a spoon or fork, drizzle the cookies with the icing, allowing any excess icing to drip onto the baking sheet. Allow the icing to set before serving, about 30 minutes. Cook time is actually 8 minutes per cookie sheet, I just increased the cooking time to accomodate multiple cookie sheetfuls!

10 BEST AMARETTO SUBSTITUTES - SUBSTITUTE COOKING

From substitutecooking.com
  • Chocolate liqueur. You can use chocolate liqueur as a substitute for amaretto in any type of recipe from desserts to baked dishes. You can even drink it plain as it will go great at the beginning, or the end of your Italian meal.
  • Coffee liqueur. Coffee liqueur might not be a great option for dishes that will not go great with the flavor of coffee but it can substitute amaretto just fine in desserts such as tiramisu.
  • Almond syrup. Since amaretto is made of almond pits, the best non-alcoholic option you can go for is almond syrup. You might not be able to drink almond syrup as it is too sweet to be consumed plain.
  • Hazelnut liqueur. Hazelnut liqueur has a similar color and nutty taste to amaretto. It contains alcohol and like any other liqueur, you can consume it plain or add it to different cocktails or recipes.
  • Marzipan. Marzipan is a great alternative to amaretto in baked dishes. You can use crumbled marzipan and add it as a topping or filling in different desserts.
  • Anisette. If you want to replace amaretto in your recipe, the anisette might be the best option for you. But keep in mind that this liqueur is stronger than other options so you might want to use less of it according to your preferences.
  • Orgeat. Orgeat is another Italian drink made of almonds but it also contains rose petals and orange flower water as well as a significant amount of sugar.
  • Cherry liqueur. Cherry liqueur will not have the same flavor as amaretto but it can still be used as a replacement. Most cherry liqueur will have a mild concentration of alcohol but you will definitely taste the cherry flavor.
  • Coconut liqueur. If you are looking for a more exotic substitute for amaretto, coconut liqueur can be your best choice. You can use it in desserts as well as drink it plain but it will taste the best in cookies with a white glaze such as vanilla or even coconut flavored icing.
  • Apricot pit liqueur. Some recipes of amaretto use apricot pits instead of almonds so if you choose apricot pit liqueur you will not get a much different flavor.
