This is out of my "Company's coming, most loved appetizers" cookbook...This classic appetizer is a true favorite...make several days ahead. Double to make 1 larger ball or to make 2 - 1 or the freezer and 1 to chill for your party...serve with assorted crackers...cooking time cover chill time...

4 ounces cream cheese, softened
4 ounces crabmeat, drained and cartilage removed, flaked
1 teaspoon lemon juice
1/4 teaspoon onion powder
1 dash hot pepper sauce
1/3 cup seafood cocktail sauce
chopped fresh chives, for garnish

Steps:

  • Put first 5 ingredients into small bowl.
  • Beat until well combined.
  • Shape into ball.
  • Cover and chill at least 2 hours.
  • Just before serving, place on serving plate.
  • Pour cocktail sauce over crab ball.
  • Garnish with chives.
  • Add more cocktail sauce as needed.

1 (8 ounce) package cream cheese, softened
2 tablespoons prepared horseradish
1 tablespoon ketchup
2 teaspoons finely chopped onions
1 1/2 teaspoons Worcestershire sauce
1 teaspoon fresh lemon juice
1 (6 ounce) can crabmeat, drained and flaked
hot pepper sauce

Steps:

  • In a medium bowl, combine the cream cheese, horseradish, ketchup, onions, worcestershire sauce and lemon juice.
  • Stir until well blended.
  • Add crab and stir until combined.
  • Season to taste with hot pepper sauce.
  • Form the mixture into a ball.
  • Cover and refrigerate for at least 6 hours.

1/2 lb crabmeat (artificial can be used)
1 1/2 cups soft breadcrumbs
1 egg, beaten
2 tablespoons hot sauce (your choice as hot or mild as you like)
2 tablespoons mayonnaise
2 tablespoons green onions, minced
1 teaspoon dried parsley flakes
1/2 teaspoon dry mustard
salt & pepper
1 cup regular potato chips, crushed
seafood cocktail sauce

Steps:

  • Mix all the ingredients (except the potato chips and seafood cocktail sauce).
  • Mix well, cover and chill for 1 hour.
  • Using about a rounded teaspoon for each, roll the mixture into 36 balls.
  • Roll the balls in the crushed potato chips.
  • Heat oven to 425°F.
  • Place balls on a baking sheet and bake for 10-12 minutes or until hot and golden Serve with seafood cocktail sauce on the side or some other sauce of your choice.

1 (250 g) package cream cheese (room temp)
1 teaspoon horseradish (optional)
1 -2 drop Worcestershire sauce
1 cup imitation crabmeat, shredded
1 tablespoon fresh lemon juice
1 (250 ml) jar chipotle chili sauce

Steps:

  • Mix cream cheese, horseradish, Worcestershire sauce, crab meat and lemon juice together and form into a ball.
  • Refrigerate for at least 2 hours (can make day ahead).
  • Top with shrimp sauce.
  • Serve with crackers.

2 tablespoons Dijon mustard
4 1/2 tablespoons drained nonpareil capers
4 1/2 tablespoons chopped fresh chives
3 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon peel
nonstick vegetable oil cooking spray
1/2 cup mayonnaise
2 large eggs, lightly beaten
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
1 lb crabmeat, drained well and picked over
24 saltine crackers, finely ground

Steps:

  • For Lemon-Caper Sauce; Mix all ingredients together in a medium bowl to blend.
  • Chill until cold.
  • (Can be prepared up to 1 day ahead. Cover and keep refrigerated.).
  • For Crab Balls: Spray 2 baking sheets with nonstick spray.
  • Whisk mayonnaise, eggs, mustard and Worcestershire in large bowl to blend.
  • Gently mix in crabmeat and ground crackers.
  • Place on prepared baking sheets.
  • (Can be made 8 hours ahead. Cover, chill.).
  • Preheat broiler.
  • Broil crab balls until brown and cooked through, watching closely to avoid burning and turning once, about 5 minutes.
  • Serve with sauce.

  • drain and flake meat.
  • combine remaining ingredients except bacon, mix well.
  • shape into walnut size balls.

1 lb lump crab meat
1 c cooked shrimp, chopped
1 c rice, cooked, cooled
1 egg, beaten
1 Tbsp half and half
1/4 c celery, minced
1/4 c green onions, minced
1/4 c red bell pepper, minced
1 Tbsp lemon zest, grated
1 Tbsp lemon juice
1 c bread crumbs
2 Tbsp yellow cornmeal
1/2 c panko bread crumbs
1 tsp cayenne pepper
salt and pepper
cooking oil for frying

Steps:

  • 1. Separate crab meat and remove any small pieces of shell. Add chopped cooked shrimp and toss with lemon zest and lemon juice
  • 2. Beat egg and half and half.
  • 3. Mix together crab, shrimp, rice and egg mixture.
  • 4. Add celery, green onion, bell pepper and dry seasonings.
  • 5. Form 2 inch balls and place on parchment or waxed paper. Mix panko, bread crumbs and cornmeal. Salt & pepper to taste.
  • 6. Heat oil to 350 degrees. Roll crab balls into bread crumb mixture and deep fry the crab balls until golden brown.
  • 7. Serve with cocktail or Remoulade sauce.

1 lb Backfin crab meat
1 egg, beaten
1 c crushed Ritz crackers
1 tsp yellow mustard
2 Tbsp fresh lemon juice
2 Tbsp parsley
1 tsp Old Bay seasoning
1 Tbsp Worcestershire sauce

Steps:

  • 1. Place crab meat in a mixing bowl and pick out any stray shell fragments.
  • 2. Add crushed crackers, Old Bay seasoning, and parsley to the crab.
  • 3. In a separate bowl, combine egg, mustard, lemon juice, and Worcestershire sauce. Whip with a whisk until smooth.
  • 4. Pour egg mixture over the crab meat and crackers. Gently mix, careful not to break up large lumps of crab meat.
  • 5. Mold into golfball-sized balls and place on a cookie sheet.
  • 6. Bake at 350 degrees for 30 minutes.
  • 7. Drizzle with melted butter and allow to cool. Serve with saltine crackers. Enjoy delicious baked crab balls!
