I am lucky enough to live in a small community whose school district still allows us to send home-baked goods with our children. My daughter is in 7th grade now, but her classmates still beg her to have her mom send this special treat. It's a beautiful quick bread your family, friends, and all the neighbor children will love.

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts
3 cups apples - peeled, cored, and chopped
1 cup vegetable oil
2 cups white sugar
3 eggs, beaten
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2x4 1/2-inch loaf pans) with cooking spray.
  • Mix flour, baking soda, salt, walnuts, and apples in a large bowl. Whisk oil, sugar, eggs, and cinnamon together in a small bowl; add to flour mixture and mix until just moistened. Evenly divide mixture between prepared loaf pans.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

2 eggs
1 cup sugar
2/3 cup vegetable oil
1/3 cup milk
1 teaspoon vanilla
2 cups chopped apples
1/2 cup chopped walnuts
2 tablespoons shredded coconut (optional)
3 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Sift together dry ingredients. Set aside.
  • Combine eggs, sugar, oil, milk, and vanilla in a large bowl.
  • Add flour mixture; mix gently.
  • Fold in apples, nuts and coconut.
  • Spoon into lightly greased 9X5 inch pan. Sprinkle top with cinnamon and sugar which have been mixed together.
  • Bake 60 minutes at 350 degrees.
  • Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
  • Mix by hand to avoid overmixing and to insure a tender moist loaf.

1/2 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons buttermilk
1 cup grated peeled apple
1 cup chopped nuts
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream the butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk. Stir in apple and nuts. , Pour into a greased and floured 9x5-in. loaf pan. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to wire rack to cool completely.

4-1/2 teaspoons buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour

Steps:

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cardamom
1/2 teaspoon salt
1/2 cup margarine (or butter)
1/2 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 cup sour cream
1 medium apple, cored, chopped coarsely (about 1 1/2 cups)
1 cup walnuts, coarsely chopped

Steps:

  • Preheat the oven to 350°F In a small bowl, sift together flour, baking powder, baking soda, cardamom, and salt. Set aside.
  • In a large bowl, cream butter and sugar until fluffy. Add eggs and vanilla, beating until smooth.
  • Fold dry ingredients and sour cream alternately into the creamed mixture until just combined. Don't over mix! The batter should be a little thick and lumpy. Fold in apple and walnuts and spread into a greased and floured 9x5x3-inch loaf pan and smooth out the top.
  • Bake for 1 hour at 350°F or until a toothpick inserted in the center comes out clean. Let cool upright in the pan for 10 minutes, then turn out on a wire rack and cool. Wrap tightly in foil and store at room temperature overnight.
  • Serve either plain or with cream cheese. Enjoy!
  • Makes 1 loaf.

1/2 cup walnut halves (raw)
2 cups tart apples (cored, peeled, and 1/4-inch diced, such as Cortland or Granny Smith (about 2 medium))
1 1/2 cups whole wheat white flour (or whole wheat pastry flour)
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1/2 cup unsweetened applesauce
2 tablespoons canola oil (or light olive oil or melted, cooled coconut oil)
2 tablespoons milk (any kind you like (I used skim))
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 tablespoon sparkling sugar (or turbinado (coarse, raw) sugar)
1/4 teaspoon ground cinnamon

Steps:

  • Preheat your oven to 350 degrees F and lightly coat an 8x4-inch loaf pan with baking spray. Set aside.
  • Spread the walnuts in a single layer on an ungreased baking sheet. Place in the oven and bake until toasted and fragrant, about 8 to 12 minutes, stirring once throughout. DO NOT WALK AWAY during the last few minutes and set a timer. Nuts love to burn the very moment you stop watching. Transfer to a cutting board. Once cool enough to handle, roughly chop and set aside.
  • In a large mixing bowl, combine the white whole wheat flour, baking soda, cinnamon, and salt.
  • In a separate bowl, whisk together the applesauce, canola oil, milk, sugar, egg, and vanilla until smooth.
  • Make a well in the center of the dry ingredients, then add the wet ingredient all at once. Mix in by hand just until combined. The batter will look very thick and stiff.
  • Fold in the apples and walnuts. It will be hard to do because the batter is so thick. Use a rubber spatula and smush and push it around gently but firmly as needed. Distribute the apples and walnuts as evenly as you can.
  • Pour the batter into the prepared loaf pan. With the back of a rubber spatula, press and smooth the top so it is mostly flat. For the cinnamon sugar topping, stir the cinnamon and coarse sugar together in a small bowl. Sprinkle evenly over the top of the batter.
  • Bake for 25 minutes, loosely tent with foil, then bake for 20 additional minutes, until a toothpick inserted in the center comes out clean without any wet batter clinging to it.* Place on a wire rack and let cool for 10 minutes in the pan, then turn out onto a wire rack to cool completely. Enjoy warm or at room temperature.

1 cup Unsweetened Applesauce
1/2 cup Granulated Sugar (plus 1 tbsp for sprinkling)
1/2 cup Brown Sugar (packed)
2 large Eggs
1/4 cup Canola Oil
1/4 cup Plain (or Vanilla) Yogurt
1 tsp Vanilla Extract
2 cups Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
1/2 tsp Cinnamon
1/8 tsp Nutmeg
1 cup Apple, peeled, cored, and finely diced
1/2 cup Chopped Walnuts

Steps:

  • Line a 9- by 5-inch loaf pan with waxed or parchment paper (or grease and flour it), then set it aside. Also grease a mini loaf pan. Heat the oven to 350°F.
  • Combine the applesauce, sugar, brown sugar, eggs, oil, yogurt, and vanilla extract in a large bowl. Whisk well to blend.
  • In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the dry ingredients with a wooden spoon and pour in the applesauce mixture. Stir just enough to combine; do not overmix. Fold in the apples and walnuts.
  • Scrape the batter into the prepared pans and smooth the top with a spoon. Evenly sprinkle one tablespoon of sugar over the top. Bake on the center oven rack about 30 to 35 minutes for the mini loaf and 50 to 55 minutes for the large loaf. (Loaf will register 200 degrees F on a cooking thermometer.)
  • Remove the pan from the oven and put it on a cooling rack for about 15 minutes, then remove the loaf from the pan and place it on the rack to finish cooling.
  • OPTIONAL GLAZE: Whisk 1/2 cup powdered sugar with 2-3 TBSP HOT water. Drizzle on cooled bread and let set.

1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup plus 1 to 3 tablespoons milk or almond milk

Steps:

  • Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray or line with foil and spray with nonstick spray, for easy removal.
  • Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.
  • Beat butter and remaining 2/3 cup granulated sugar together in another medium bowl with an electric mixer until smooth and creamy, about 5 minutes. Beat in eggs, 1 at a time, until blended in; add vanilla extract.
