SPICED APPLE HOT TODDY
My Spiced Apple Hot Toddy recipe will warm you up from the inside. A deliciously sweet and spiced apple cider cocktail that is perfect for a chilly Fall or Winter evening.

Steps:
- Add all of the ingredients except for the honey and brandy to a saucepan. Heat on medium heat until it starts to gently simmer. Then reduce heat to low, cover the pan, and simmer for 10 minutes.
- After 10 minutes, take off of the heat and keep covered for 5 more minutes.
- Meanwhile, pour 1 to 2 ounces of brandy into each mug.
- Strain the cider and put back in saucepan. If you are adding honey, start with 1/4 cup and stir well. Taste and add more if you'd like it sweeter.
- Pour the cider into the mugs and garnish with a cinnamon stick.

- Heat the apple juice to almost boiling then add the tea bag. Allow to steep for 2-3 minutes. Then add the liquor. You can garnish with cinnamon sticks, apple slices, orange peels, or nothing at all.
- Rum, whiskey, or bourbon all work well in this hot toddy, so feel free to use what you have and what you love.

Got this in an email from www.chow.com - made it up because it turned COLD here! Used honey instead of the recommended honey liqueur (have to go out of state to snag some of that). It's delicious, bone warming & soothing! Wonderful for a cold evening snugged in with someone you love... or a good book... or a great movie... or reruns of The Wire...

- In a saucepan, combine the apple cider, vinegar, maple syrup, vanilla, cinnamon sticks, star anise and ginger. Heat over medium heat until the flavors come together, about 10 minutes.
- Divide the mixture among 4 heatproof mugs and top each with a shot of bourbon and a squirt or dollop of whipped cream. Sprinkle over ground cinnamon and serve.
HOT APPLE CIDER TODDY
I got this recipe off the Food Network. I made up a batch for a Christmas party. We stat outside around the fire pit and sipped on the cider--Every one loved it. What makes this really nice is your guests can make it with or without the bourbon, and adjust the other ingredients as well. I put the hot cider in a thermos carafe with a pump on it, and placed the cinnamon sticks, spiced butter, rum-flavored whipped cream, and seasoned graham crackers out for them to help themselves for refills.

Steps:
- Heat cider in non-reactive saucepan.
- Combine butter, brown sugar, nutmeg, cinnamon, and cloves. Whip until butter becomes creamy and the ingredients are incorporated.
- Place graham crackers and pumpkin spice in plastic bag and crush with rolling pin.
- Combine rum extract with Cool Whip.
- In a footed coffee glass, or mug, place a single cinnamon stick and a slice of the spiced butter.
- Pour 1 shot of whiskey (optional but recommended ;o)).
- Ladle the hot cider into the glass or mug.
- Garnish with a dollop of the rum-flavored topping and sprinkle on some graham cracker crumb mixture.
- Serve warm.

- Boil apple juice in a 4-5 quart heavy pot over high heat until syrupy and reduced to 1 1/2 cups, about 50 minutes.
- Combine apple syrup, tea and Calvados in a 2 quart saucepan and heat over moderate heat until hot (do not boil).
- Divide toddy among 8 small cups and serve with a cinnamon stick in each.
- Note: the apple syrup can be made 1 week ahead and cooled completely, uncovered, then chilled, covered.
