MOTHER'S APPLESAUCE CAKE
This is a good old-fashioned applesauce cake. It will fill your house with the spicy fragrance of fall.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
- To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

- For the cake, grease a 9" x 13" cake pan; line the bottom with parchment paper.
- Set aside.
- In a large bowl, beat the butter with the brown sugar until fluffy; beat in the eggs, one at a time.
- Beat in the vanilla.
- In a separate bowl, whisk together the flour, baking powder, salt, baking soda, cinnamon, ginger, allspice and nutmeg.
- Stir into the butter mixture alternately with the applesauce and buttermilk, making 3 additions of dry ingredients and 2 of wet.
- Spread in the prepared pan.
- Bake in the centre of a 350 degree F oven until the cake tester inserted in the centre comes out clean, about 35 minutes.
- Let cool in the pan on a rack.
- For the icing, melt the butter in a saucepan over medium heat.
- Add the brown sugar and corn syrup; bring to a boil, stirring constantly.
- Boil just until blended, about 1 minute.
- Remove from the heat.
- Using a wooden spoon, stir the milk and vanilla into the butter mixture.
- Again using a wooden spoon, beat in the icing sugar until smooth and spreadable; let cool for 1 minute.
- Spread over the top of the cake just to the edge, letting the icing drizzle over slightly.

APPLESAUCE WITH BROWN SUGAR GLAZE
Steps:
- Spoon the applesauce into a small bowl. I have 1-cup prep bowls that are the perfect size. Sprinkle the brown sugar over the top of the applesause. Place in microwave for approximately 45 seconds or until brown sugar is melted. Place marshmallows on top of brown sugar and return to microwave for another 15 seconds. Makes a 1/2 cup serving. Repeat as necessary for each person.

- Line pan with tin foil, place the ham in pan. Slice the top of the ham about 3/4 of an inch deep in a diamond shape. Cover and seal with tin foil, place in oven and let bake.
