¼ cup shortening
.66 cup brown sugar
1 cup applesauce
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
½ cup raisins
3 tablespoons butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract
1 tablespoon milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, cream together shortening and brown sugar until smooth. Blend in the applesauce and egg. Combine the flour, baking soda, salt and pumpkin pie spice, stir into the applesauce mixture. Fold in raisins. Spread the batter evenly in to the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until firm. To make frosting: Heat butter in a small saucepan until melted and golden brown. Blend in the confectioners' sugar and vanilla. Gradually stir in the milk until icing is smooth and spreadable. Spread over cooled bars before cutting into squares.

1/3 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
1 1/2 cups all-purpose flour
1 1/2 cups applesauce
1 teaspoon ground allspice
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
Frosting
3 cups powdered sugar
1/3 cup sour cream
3 tablespoons Land O Lakes® Butter softened
1 tablespoon vanilla
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. Spray 13x9-inch baking pan with no-stick cooking spray. Set aside.
  • Combine sugar, 1/3 cup butter and egg in bowl. Beat at medium speed, scraping bowl often, until creamy. Add all remaining ingredients except raisins. Beat at low speed, scraping bowl often, until well mixed. Stir in raisins.
  • Spoon batter into prepared pan. Bake 25-35 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Combine all frosting ingredients except pecans in bowl. Beat at medium speed, scraping bowl often, until smooth.
  • Frost cooled bars; sprinkle with pecans. Cut into bars.

8 tablespoons unsalted butter
1 cup packed light brown sugar
2 large eggs
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla extract
1 tablespoon brandy (optional) or 1 tablespoon dark rum (optional)
1 baking apple, peeled, cored, and finely diced (Rome or Cortland)
1/2 cup raisins (dark or golden)
2 1/2 tablespoons heavy cream
1/2 cup packed light brown sugar
2 1/2 tablespoons unsalted butter
1 teaspoon light corn syrup
1/2 teaspoon pure vanilla extract

Steps:

  • Position oven rack in center; preheat oven to 350°; butter a 13 x 9 inch baking pan, line bottom with parchment paper, butter the paper and dust the inside of the pan with flour; tap out the excess flour and put the pan on a baking sheet.
  • Whisk the flour, baking powder, baking soda, spices, and salt together.
  • In a saucepan, melt the butter over low heat; add in the brown sugar and stir with a whisk until it is melted and the mixture is smooth, about 1 minute; remove pan from the heat.

  • In a small saucepan, whisk together the cream, sugar, butter, and corn syrup; put pan over medium heat and bring mixture to a boil, whisking frequently.
  • Adjust the heat so the glaze simmer, and cook, whisking frequently for 5 minutes; remove pan from heat and stir in vanilla.
  • Turn the bars out onto a rack, remove the paper and invert the bars onto another rack, so they are right side up.
  • Slide the parchment paper under the rack to serve as a drip catcher.
  • Grab a long metal icing spatula and pour the hot glaze over the bars, using the spatula to spread it evenly over the cake.
