¾ cup shortening
1 cup packed brown sugar
½ cup applesauce
1 egg
2 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ cup chopped raisins
½ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix together the shortening, brown sugar, applesauce and egg until smooth, Combine the flour, baking soda, salt, cinnamon and cloves; stir into the applesauce mixture. Drop dough by rounded teaspoons onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

2 cups flour
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves
2 cups rolled oats
1 cup raisins
1 cup chopped nuts
1 cup chocolate chips (opt)

Steps:

  • Beat butter and sugar together until light & fluffy. Add egg, vanilla and beat again until combined. Add the applesauce and beat again.
  • Add the flour, salt, soda, baking powder, cinnamon & cloves and beat until just combined.
  • Stir in the rolled oats, raisins, nuts & chocolate chips & mix well.
  • Drop by rounded spoonfuls or use an ice cream scoop on cookie sheets.
  • Bake in pre-heated 375 degree oven for 10-12 minutes or until golden brown.
  • Remove from cookie sheet and let cookies cool on rack or paper towels before placing in container.
  • These cookies freeze well.

.66 cup brown sugar
1 cup applesauce
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
½ cup raisins
3 tablespoons butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract
1 tablespoon milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, cream together shortening and brown sugar until smooth. Blend in the applesauce and egg. Combine the flour, baking soda, salt and pumpkin pie spice, stir into the applesauce mixture. Fold in raisins. Spread the batter evenly in to the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until firm. To make frosting: Heat butter in a small saucepan until melted and golden brown. Blend in the confectioners' sugar and vanilla. Gradually stir in the milk until icing is smooth and spreadable. Spread over cooled bars before cutting into squares.

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. 1 egg (large)
3 tablespoons canola oil
3/4 cup unsweetened applesauce
1 1/2 teaspoons vanilla extract
1/3 cup brown sugar
1/3 cup Splenda sugar substitute

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.
  • In a large bowl, combine flour, baking soda, oats, cinnamon, salt, and nutmeg. Toss with raisins.
  • In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.
  • Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.

1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. For a cakey but slightly heavier texture (my preference) just beat until blended. Scrape the bowl well, then add the egg and stir until blended. Scrape bowl and stir in the applesauce.
  • In a second bowl, stir together the flour, baking soda, salt and spices. Stir the flour mixture into the applesauce mixture, then stir in the oats, raisins and walnuts. The dough should be thick enough to scoop. If for some reason it's not, cover bowl and chill for 20 minutes.
  • Scoop cookie dough with a large cookie scoop onto the baking sheet, spacing about 3 inches apart. Bake one sheet at a time for 350 degrees F for about 15 minutes. If you are making the cookies smaller, check at 10.
