2 cups quick-cooking oatmeal (or regular oatmeal - uncooked)
1/3 cup brown sugar
1 teaspoon baking powder
1 1/2 cups milk (whole milk, can substitute almond, oat or soy milk)
1/2 cup applesauce
2 tablespoons butter ( melted)
1 large egg (beaten)
1/4 cups dried cranberries (optional)
1/4 cup pecans (chopped and optional)

Steps:

  • Heat the oven to 375 degrees F. and prepare an 8" x " baking pan with cooking spray.
  • Combine the oatmeal, brown sugar, and baking powder in a large mixing bowl.
  • In a medium-sized bowl add the butter and put in the microwave to melt. Then whisk in the applesauce, milk, and beaten egg. Mix to thoroughly combine.
  • Pour the applesauce mixture into the dry ingredients, mix to combine with a heavy spoon or spatula.
  • Stir in the cranberries and pecans.
  • Pour the batter into an 8 x 8" pan and bake for 30 minutes or until set and browned.
  • Remove from the oven and let cool for about 10 minutes then cut into squares and serve warm
  • You can pour maple syrup on top of the oatmeal square once served.
  • Cover any leftovers and store them in the refrigerator for up to a week for an easy grab-and-go breakfast.

1-1/4 cups all-purpose flour
1/2 cup packed brown sugar

1/2 cup fat-free milk

TOPPING:

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Steps:

This is a very simple apple crisp. Like most baked apple recipes, you'll want to use flavorful and firm apples - Granny Smith are our go-to. It's also nice to combine two varieties. In our photos, we used two baking-friendly apples- Granny Smith and Braeburn. You could even add a handful of blackberries, raisins or cranberries. We also found that by leaving the apples unpeeled, the texture and flavor is better - especially after such a long bake time. Serve warm or serve our favorite way, which is cold - sounds a little strange, we know. After a night in the fridge, all the flavors meld and mingle, giving it lots of extra flavor the next day.

1 orange, zested and juiced
1/4 to 1/2 cup (50 to 100 g) sugar, depending on tartness of apples

3/4 cup (100 g) all-purpose flour
3/4 cup (65 g) old-fashioned rolled oats
1/2 cup (100 g) sugar, option: combine 1/4 cup brown sugar + 1/4 cup granulated sugar
1/2 cup (115 g) butter, melted (1 stick)
1/8 teaspoon kosher salt

Steps:

  • Heat oven to 350 degrees F. Butter a 9-inch square (or 2-quart) baking dish.
  • Core apples then cut into 3/4-inch pieces. Add apples to a large bowl with orange zest, orange juice, sugar, cinnamon and nutmeg. Stir then add to baking dish.
  • Combine flour, oats, sugar and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly. Sprinkle over apple filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)

1/4 cup coconut oil, (melted and cooled (See Note 1))
1 large egg
1/2 teaspoon vanilla extract
1/2 cup (93g) brown sugar (lightly packed (light brown sugar))
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1 cup oat flour ((blend up regular oats))
1/4 cup chopped pecans, (optional)
1/3 cup raisins, (optional)
2 ounces reduced-fat cream cheese, (softened to room temperature)
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1 and 1/4 - 1 and 3/4 cups powdered sugar

Steps:

  • PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise, your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
  • WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature-- See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
  • DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
  • BAKE: Transfer batter to the prepared 8x8-inch pan. Bake for 28-33 mins at 350 degrees F oven or until a fork when inserted comes out clean. Be careful not to over-bake, as it will make this cake less tender and less flavorful. Allow cake to cool completely before frosting.
  • FROST: Place softened cream cheese in a large bowl (give it ample time to set out so your frosting isn't chunky). Using a hand mixer, beat the cream cheese with the vanilla until smooth. Add in the salt and slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to your desired consistency. If it is too thick, add in a little bit of milk. If you'd like a tangier or soft frosting, only add 1 and 1/4 cups powdered sugar. For a sweeter, thicker frosting, add closer to 1 and 3/4 cups.
  • DECORATE: Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with the chopped pecans.
  • STORAGE: Store cake at room temperature, covered with plastic wrap. Applesauce Cake is best when used within 1-2 days. Freeze (un-frosted) pieces for up to 3 months; thaw at room temperature and then frost. Frosted cake doesn't freeze and thaw well.

Moist and delicious applesauce bread with a sweet crumbly buttery oat topping.

3 eggs
2 cups sugar
3/4 cup oil
2 cups applesauce
1/2 cup sour cream or buttermilk
3 cups flour
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 cup chopped nuts (optional)
3/4 cup oats
3 Tbsp flour
1/4 cup + 2 Tbsp brown sugar
3/4 tsp cinnamon
1/4 cup soft butter

Steps:

  • Use shortening and flour or Baker's Joy to grease six mini loaf pans or two large loaf pans. Line the bottoms with parchment. Set aside.
  • Beat together eggs, sugar, and oil in a large mixing bowl. Mix in applesauce and sour cream. Combine dry ingredients and stir in. Add nuts if desired.
  • Pour into your prepared loaf pans.
  • Mix together the topping ingredients with a fork till crumbly. Sprinkle evenly over the loaves.
  • Bake at 325° for 30-40 minutes for mini loaves, 60-70 minutes for regular loaves.

These kid-friendly Gluten Free Apple Oatmeal Muffins are made with rolled oats and natural sugars for a healthy breakfast or quick snack that can be prepared ahead of time! Vegan friendly.

Number Of Ingredients 14

2 cups (160 grams)* gluten free rolled oats plus extra for topping. Gluten free oat flour may be substituted. (Equals about 1 1/2 cups oat flour)
2 Tablespoon flax meal
1/4 teaspoon of salt
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
3/4 cup unsweetened applesauce
2/3 cup non dairy milk
1/3 cup maple syrup
2 teaspoon apple cider vinegar or lemon juice
Optional - 1/2 cup diced or shredded apple (peeled) to fold into batter + extra for topping
Topping - 1/3 diced apple, 1/4 c rolled oats, coconut sugar substitute such as brown sugar swerve

Steps:

  • Preheat oven to 350. Line or grease a muffin tin; set aside.
  • In a large bowl, mix dry ingredients together, making sure to remove any flour clumps. (Alternatively, place these ingredients in a blender and blend until combined. If using rolled oats, versus oat flour, use a blender to grind the oats into a fine flour first.)
  • Whisk the applesauce, milk, and maple syrup together in a medium bowl until combined.
  • Combine wet batter(s) to the dry batter. Then, gently stir in the apple cider vinegar.
  • Fold in 1/2 cup of chopped apple into the batter (optional)
  • Spoon the batter into lined muffin pans, filling each cup 2/3 of the way full.
  • Topping - Place 3 Tablespoons of rolled oats and 1/4 to 1/3 cup chopped apple together in a bowl. Mix the oats and apples with 2 Tablespoons of coconut sugar or brown sugar substitute. Top the muffins with extra rolled oats and/or apple.
  • Place the muffin tin in the oven for 18-22 minutes or until the center comes out clean with a toothpick.
  • Remove and place the muffins on a cooling rack for 5 -10 minutes.

2 tablespoons lemon juice
1 1/2 cups old fashioned oats
1/3 cup sugar
1/3 cup butter, melted

Steps:

  • Preheat oven to 350. Grease an 8x8 baking dish and set aside.
  • Combine brown sugar, flour, cinnamon, nutmeg and applesauce. Spread in the prepared dish, and sprinkle with lemon juice.
  • Stir together oats, sugar and butter, and spread over applesauce mixture.
  • Bake for 30 minutes or until lightly browned.
