- Heat the oven to 375 degrees F. and prepare an 8" x " baking pan with cooking spray.
- Combine the oatmeal, brown sugar, and baking powder in a large mixing bowl.
- In a medium-sized bowl add the butter and put in the microwave to melt. Then whisk in the applesauce, milk, and beaten egg. Mix to thoroughly combine.
- Pour the applesauce mixture into the dry ingredients, mix to combine with a heavy spoon or spatula.
- Stir in the cranberries and pecans.
- Pour the batter into an 8 x 8" pan and bake for 30 minutes or until set and browned.
- Remove from the oven and let cool for about 10 minutes then cut into squares and serve warm
- You can pour maple syrup on top of the oatmeal square once served.
- Cover any leftovers and store them in the refrigerator for up to a week for an easy grab-and-go breakfast.

- Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.
- In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar.
- In a large bowl, mix the flour, baking powder, baking soda, cinnamon, salt and cranberries or raisins.
- Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined (don't overmix!)

- In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
- In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
- When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. This is a very simple apple crisp. Like most baked apple recipes, you'll want to use flavorful and firm apples - Granny Smith are our go-to. It's also nice to combine two varieties. In our photos, we used two baking-friendly apples- Granny Smith and Braeburn. You could even add a handful of blackberries, raisins or cranberries. We also found that by leaving the apples unpeeled, the texture and flavor is better - especially after such a long bake time. Serve warm or serve our favorite way, which is cold - sounds a little strange, we know. After a night in the fridge, all the flavors meld and mingle, giving it lots of extra flavor the next day.

- Heat oven to 350 degrees F. Butter a 9-inch square (or 2-quart) baking dish.
- Core apples then cut into 3/4-inch pieces. Add apples to a large bowl with orange zest, orange juice, sugar, cinnamon and nutmeg. Stir then add to baking dish.

APPLESAUCE CAKE

- PREP: Set out the cream cheese to warm to room temperature. Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper -- otherwise, your cake will likely not come out easily. Greasing and flouring the pan isn't enough -- this batter is sticky and needs parchment paper. Foil will affect baking, so I don't recommend foil.
- WET INGREDIENTS: In a large bowl, stir together the applesauce, coconut oil (measured when completely melted and then cooled back to room temperature-- See Note 1), large egg, vanilla extract, and brown sugar. Stir until completely combined and smooth.
- DRY INGREDIENTS: Add the baking soda, baking powder, salt, cinnamon, allspice, and nutmeg (you can use a little less or more, depending on your preference). Add in the oat flour. (See Note 2.) Add in the chopped pecans and raisins if desired. Mix ingredients until completely combined and smooth.
- BAKE: Transfer batter to the prepared 8x8-inch pan. Bake for 28-33 mins at 350 degrees F oven or until a fork when inserted comes out clean. Be careful not to over-bake, as it will make this cake less tender and less flavorful. Allow cake to cool completely before frosting.
- FROST: Place softened cream cheese in a large bowl (give it ample time to set out so your frosting isn't chunky). Using a hand mixer, beat the cream cheese with the vanilla until smooth. Add in the salt and slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to your desired consistency. If it is too thick, add in a little bit of milk. If you'd like a tangier or soft frosting, only add 1 and 1/4 cups powdered sugar. For a sweeter, thicker frosting, add closer to 1 and 3/4 cups.
- DECORATE: Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with the chopped pecans.
- STORAGE: Store cake at room temperature, covered with plastic wrap. Applesauce Cake is best when used within 1-2 days. Freeze (un-frosted) pieces for up to 3 months; thaw at room temperature and then frost. Frosted cake doesn't freeze and thaw well.
