- In a 5-qt. slow cooker, combine the apples, sugar, water, salt and cinnamon. Cover and cook on low for 6-8 hours or until tender. , Turn off heat; stir in butter and vanilla. Mash if desired. Serve warm or cold.

Steps:
- Peel, core, and slice the apples.
- Place them in the slow cooker.
- Add the cinnamon stick, lemon peel, lemon juice and brown sugar.
- Set crock pot to low and cook for 6 hours.
- Stir apples occasionally, apples will slowly become a delicious applesauce.
- Remove cinnamon stick and use an immersion blender to blend until smooth or if you prefer a chunky sauce, leave sauce intact.
