Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Steps:
- Peel and core the apples and slice them in slightly thick slices.
- Melt the 2 tablespoons butter in a saucepan and add the apple slices.
- Saute the apples in the butter for about a minute. Add in the brown sugar, cinnamon powder & nutmeg for the apple filling, mix everything well and keep this mixture aside.
- In a large bowl, mix together the dry ingredients first - flour, baking powder, cinnamon powder and salt until all ingredients are evenly mixed.
- In another bowl add the melted butter and add the sugar, mix very well.
- Also add the milk & vanilla extract to the butter sugar mixture, mix everything well together.
- To make the batter, transfer the wet ingredients mixture slowly to the dry flour mixture and mix in.
- Also add the 1/4 cup of brown sugar for the batter and mix everything well to form the batter. Do not overmix but make sure there is no dry flour in the batter and all the ingredients in the batter are well blended.
- Preheat oven to 350 degree Fahrenheit.
- Prepare a pan greased with little butter and layer the apple filling mixture in a single layer.
- Pour the prepared batter over the apple filling and using a spoon, spread the batter evenly across the pan to almost cover the apples, and then gently mix in the batter a little so some of the apple slices are visible outside.
- Bake in the preheated oven for about 50 to 60 minutes of time until the cobbler is baked and the apples look juicy and the top is golden brown in color. One tip to make the perfect apple cobbler is to check the apple cobbler after about 35 minutes of time, and if the topping begins to brown, cover the pan with a foil and bake for the remaining time which will help to retain the moisture content of the dish, making it more delicious and juicy!
- Allow the apple cobbler to cool down slightly, then scoop out and serve the slightly warm apple cobbler with vanilla ice cream or any ice cream of your choice!

APPLESAUCE COBBLER
Not a spoonful of sugar is used in this fruit-filled, crumbly dessert-yet it tastes terrific, thanks to the sweetness of fresh apples. Using a variety of apples helps to create a delicious sauce. And the addition of golden raisins adds another layer of fruity sweetness. I found this recipe in Prevention magazine. I have not tried this recipe, but I'm posting it for safe keeping.

Steps:
- Place the apple chunks, cider, lemon juice, and cinnamon stick in a large saucepan. Cover, and cook over medium heat, stirring occasionally, until the mixture begins to bubble. Reduce the heat to low, and cook for about 20 minutes, or until the apples are very tender.
- Remove the pan from the heat, discard the cinnamon stick, and stir in the raisins and nutmeg. Spoon the applesauce into a 9" pie pan or shallow baking dish. (Can be made a day ahead).
- Heat the oven to 400. In a medium bowl, stir together the flours, baking powder, salt, and cinnamon. In a small bowl, combine butter, apple juice, and yogurt. Pour the wet mixture into the dry, and blend gently with a fork for about 30 seconds. Remove to a floured surface, and knead for about 30 seconds.
- With floured fingertips, press and spread the dough over the applesauce, making the dough surface as even as possible. Reduce the oven temperature to 375, and bake for 20-25 minutes, or until the cobbler is golden brown. Serve warm or at room temperature.

- Ice cream sundae sauce. Heat 1/2 cup applesauce with 1 tablespoon light brown sugar and 1/8 teaspoon cinnamon. Once warm, spoon over vanilla bean ice cream and top with chopped toasted pecans.
- Cheese board accoutrement. Add a little ramekin of homemade applesauce (no cinnamon, please) to your next cheese board. It’s just the right amount of unexpected sweetness paired with cheese and crackers.
- Applesauce cookies. Yes, applesauce can be used as a fat replacement in recipes (I think the best application for replacement is in muffins), but what about really letting the applesauce shine?
- Potato pancake topping. You haven’t lived until you’ve eaten a potato pancake with applesauce and sour cream. Trust me on this one. Make Meseidy’s potato pancakes (they’re the base for this recipe); you can even use instant mashed potatoes!
- Oatmeal stir-in. Oh, oatmeal really doesn’t get cozier than this! Cook up oatmeal using your favorite method, top with a generous swirl of applesauce and chopped pecans.
- Peanut butter spread. Stir equal amount peanut butter and homemade applesauce until smooth. Spread on toast, bagels, crumpets, graham crackers, you name it.
