NO-BAKE APPLE BREAKFAST BARS



No-Bake Apple Breakfast Bars image

Stir up a no-bake bar that's rich in high-fiber cereal and apples.

3 cups Fiber One™ Honey Clusters® cereal
1/4 cup roasted sunflower nuts
1/2 cup corn syrup or honey
1/4 cup packed brown sugar
1 cup dried apple slices, coarsely chopped
1/2 teaspoon ground cinnamon
1/2 cup peanut butter

Steps:

  • Butter bottom and sides of 8-inch square pan, or spray with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and slightly crush with rolling pin or meat mallet (or slightly crush in food processor).
  • In large bowl, mix cereal and sunflower nuts; set aside.
  • In 3-quart saucepan, heat corn syrup, brown sugar, apples and cinnamon just to boiling over medium-high heat, stirring occasionally. Remove from heat; stir in peanut butter. Pour over cereal mixture; stir gently until evenly coated.
  • Press mixture evenly into pan with back of wooden spoon. Refrigerate about 1 hour or until set. For bars, cut into 4 rows by 4 rows. Store covered at room temperature.

3/4 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white sugar
2 tablespoons butter, softened
1/2 cup cinnamon applesauce
1 egg
1 teaspoon vanilla
1 cup chunky applesauce
1/3 cup raisins
1 tablespoon packed brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375F degrees.
  • Combine flour, oats, baking powder and salt.
  • In separate bowl, beat white sugar and butter until blended.
  • Whisk in cinnamon applesauce, egg, and vanilla.
  • Add flour mixture to applesauce mixture and stir until well blended.
  • In small bowl, combine chunky applesauce, raisins, brown sugar, and cinnamon.
  • Spoon half of oat mixture into sprayed 8-inch baking pan; pour raisin filling over top, and spoon remaining oat mixture over filling, spreading evenly.
  • Bake 30 to 35 minutes or until lightly browned; cool on wire rack.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish with cooking spray.
  • Combine applesauce and oatmeal in a bowl; mix until evenly moistened. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven until no longer sticky, about 10 minutes.
  • Flip applesauce oatmeal onto a work surface. Cut into bite-size squares and allow to cool.

2 cups cereal (Cheerios, corn flakes, Chex, Kix, whatever!)
1 cup raisins (or other dried fruit)
3/4 cup whole wheat flour
1/4 cup brown sugar
1 -2 teaspoon cinnamon
2 tablespoons butter, melted
1/2 cup applesauce

Steps:

  • Mix all ingeredients in a medium bowl until well blended.
  • **Optional-throw a Tbs or two of Soy Flour in to boost up the protine of a picky child's diet!
  • Spray pan with cooking spay.
  • To make bars press into a 9x9 pan.
  • To make bite sized snacks, spread loosely onto a jelly roll pan.
  • Bake at 350 20-30 minutes unyil crisp and golden--watch the snacks, they cook faster.
  • Cut or crumble, cool and enjoy!
  • Store in an air tight container, they never last more than a couple days at our house so I'm not sure how long they are shelf stable.
  • Servings are approximate.

I made these for my Baci ("grandmother" in Polish) because she has to watch her blood sugar. Loving her with all my being makes me worry about her well-being. I decided to try this recipe (and another Oatmeal Bar recipe) and give her an alternative to eating baked goods for a "quick fix." She preferred the other recipe and recommends this recipe to those who like Grape Nuts. She says the bars reminded her of Grape Nuts pudding.

3 cups Grape-nuts cereal
1 cup skim milk (or soy milk)
1 cup unsweetened applesauce
1 cup raisins
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350° F.
  • OPTIONAL: You don't have to do this (blame it on my paranoia and perfectionism), but I boiled water and added the raisins in order to plump them and remove any surface sugars.
  • Mix all ingredients together.
  • Pour into a non-stick 9 inch square baking dish.
  • Bake for 35 minutes or until firm.
  • Cool and cut into 12 squares.
  • NOTE: To add some interesting or favorite taste variations, add one or more tsp of any flavor extract (or any combination): coconut, banana, almond, mint, or cocoa powder.
  • Various spices can also be added: nutmeg, allspice, cinnamon, ginger, clove, lemon and orange peel.
  • You can add other extracts or spices such as: 1/2- 1 tsp.
