Steps:
- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
- Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm.

Steps:
- Coat slow cooker bowl with nonstick cooking spray. Place 1 long sheet of nonstick foil in bottom of slow cooker bowl, with ends hanging over handles.
- Whisk together flour, pumpkin pie spice, baking soda, baking powder and salt; set aside.
- Beat together butter and brown sugar on high speed for 1 minute. Beat in egg. Scrape down sides of bowl and, on low speed, beat in buttermilk (mixture will look curdled). Beat in applesauce. Add flour mixture to bowl and beat on low speed until combined.
- Spread batter into slow cooker. Place a clean dish towel over slow cooker then put cover on top. Cook on HIGH for 2-1/4 to 2-1/2 hours or until toothpick inserted in center comes out clean. Use foil handles to lift cake out of slow cooker. Cut into slices. Garnish with caramel sauce, whipped topping and pecans, if desired.
SPICED APPLESAUCE CAKE WITH BUTTERMILK CARAMEL SAUCE

- Preheat oven to 350 degrees F. Spray an 8" or 9" square cake pan with cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt and spices.
- In a large bowl, beat the butter and sugar and vanilla together with an electric mixer until light and fluffy, about 3 minutes.
- Add eggs, one at a time and beat well after each addition. Then, beat in the applesauce.
- Add the flour mixture and beat on low speed until combined. Expect the mixture to look a bit curdled. This is normal.
- Spread the batter in the prepared pan and bake until golden brown and a wooden toothpick inserted in the center comes out with just a few moist crumbs, about 35-40 minutes. (If you're making the caramel sauce, you can start it once the cake is in the oven or even while its cooling. It will be done in plenty of time to top the cake.)
- Cool cake in pan 15 minutes. Loosen the edges with a knife and remove to a cooling rack to finish cooling.
- Top each serving with warm caramel sauce, if desired.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

CARAMEL FROSTING APPLESAUCE CAKE
This cake is equally as good for desert and breakfast.....I love it as a coffee cake! It is a bit sweet, but heh....you only live once, right!? Start the frosting just before the cake comes out of the oven, because it has to cool before adding the sugar.

- Cream the butter (1 cup) for the cake; gradually add 2 cups sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition.
- Combine flour and next 6 cake ingredients in a bowl. Add to the creamed mixture alternately with the applesauce, beginning and ending with the flour mixture. Mix after each addition,
- Stir in raisins and pecans.
- Pour batter into a greased and floured 13x9x2 inch baking dish. Bake at 325 degrees for 65 to 70 minutes, or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan on a wire rack before frosting.

- Combine the brown sugar, butter, and salt in a saucepan. Bring to a boil over medium heat, stirring constantly.
- Add milk; cook over low heat 3 minutes, stirring occasionally. Remove from heat, and let cool.
- Add powdered sugar, and beat with a wooden spoon to spreading consistency.

- In a heavy bottom saucepan combine the sugar and water. Wait until the water covers all the sugar. Then give it a stir and help the sugar spread evenly on the bottom of the pan.

By then it will thicken and have a perfect consistency for decorating the cake. Keep the caramel sauce refrigerated for up to a month where it will get very thick as it cools. To get it to a runny consistency again, just bring it to room temperature over the counter or you can reheat it in the microwave or over a water bath.
