GRANDMA'S APPLESAUCE CAKE

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

GRANDMA FLORENCE'S APPLESAUCE CAKE
This was made by my grandmother every Holiday. She would make three or four of these at Thanksgiving and Christmas. Her mom, Grandma Florence, made these for her when she was growing up. It has been passed down now to me, the fourth generation. Enjoy.

- Cream butter and sugar till light.
- Add eggs, beating well after each addition.
- Sift dry ingredients together and add to creamed mixture alternately with applesauce.
- Stir in raisins and pecans.
- Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
- Bake at 350 F about 45 minutes to till done.
- Cool in pan.
- (an additional 1/3 cup raisins can be substituted for the 1/2 cup of pecans, if desired).

- Preheat oven to 350 degrees F (175 degrees C). Spray a fluted cake pan with cooking spray.
- Beat sugar and shortening together in a bowl using an electric mixer until smooth and creamy; beat in eggs until incorporated.
- Combine applesauce, water, and baking soda in a saucepan over medium heat; stir until heated through, about 2 minutes. Stir applesauce mixture into shortening mixture; add vanilla extract.
- Whisk flour, cinnamon, salt, baking powder, and ground cloves together in a bowl. Gradually stir applesauce mixture into flour mixture until just combined. Fold in raisins and walnuts. Pour into prepared cake pan.
- Bake in the preheated oven until golden and a toothpick inserted in the center of the cake comes out clean, about 1 hour. Cool in the pan for 10 minutes and transfer cake to a plate.

This cake is the one Olivia Walton made in the movie "The Homecoming", which was the basis for the TV series "The Waltons". She made the cake for Christmas, but apples are plentiful here, so we enjoy it any time of the year!

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, cloves, nutmeg, baking soda, cinnamon and salt. Remove 1/2 cup flour mixture to a small bowl; stir in raisins and nuts. , Add remaining flour mixture to the creamed mixture alternately with applesauce, beating well after each addition. Stir in raisin mixture. Pour batter into a greased and floured 10-in. fluted tube pan. , Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
