An applesauce spice bundt cake with unbeatable flavor and texture!

1/2 cup butter ((room temperature))
1 cup sugar
1 large egg
1 cup raisins
1 cup black walnuts ((or English walnuts))
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce

Steps:

  • Grease a 10 cup bundt cake pan generously with shortening, then dust with flour (or use our perfect cake release). Preheat the oven to 350º Fahrenheit.
  • In the bowl of a stand mixer (or using a hand mixer), cream the butter and sugar until well blended and smooth, scraping the sides of the bowl as needed.
  • Add the egg. Mix until blended.
  • Mix in the raisins and walnuts.
  • In a small bowl, whisk together the flour, soda, salt, cloves , nutmeg and cinnamon.
  • Add the applesauce and flour to the butter mixture alternately, mixing well between each addition. Batter will be thick.
  • Add the batter to the pan by large spoonfuls and smooth out evenly.
  • Bake for 45 minutes or until the top of the cake springs back when you touch it. The exact time will depend on the shape of your bundt cake pan. If it makes a thicker cake, it could take up to an hour to bake. Ours took 45 minutes in the Autumn Wreath Bundt Pan.
  • Allow the cake to cool in the pan for 5 minutes, then turn out on a cake plate to cool completely.
  • Dust with powdered sugar if desired.

3 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
½ cup butter
2 cups packed brown sugar
2 eggs, beaten
3 cups unsweetened applesauce
½ cup raisins
½ cup dates, pitted and chopped
1 cup chopped walnuts
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

White Chip Cinnamon Glaze Ingredients:
3 Tablespoons evaporated milk
1 cup white chocolate chips
½ teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees. Grease cake pan.
  • In a large bowl, mix all the ingredients thoroughly.
  • Pour the batter into a greased Bundt cake pan or 13 x 9 pan.
  • Bake for 40 - 45 minutes for a bundt cake, 30 - 35 minutes for a 13 x 9 pan, or until an inserted toothpick comes out clean.
  • Let it cool in the pan for 5 minutes, then remove the cake and allow it to continue cooling.

  • In a small saucepan, heat evaporated milk until it reaches a boil.
  • Remove from heat.
  • Add chips; stir until smooth.

3 eggs
1 3/4 cups cinnamon applesauce
1 cup chopped walnuts
1/3 cup raisins
1 duncan hines creamy homestyle caramel icing
1 (8 ounce) package cream cheese, room temperature
2 -3 tablespoons warmed apple juice or 2 -3 tablespoons cider
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Spray the Bundt pan completely with non-stick/non-fat cooking spray & flour lightly. Blend dry mix, eggs, & applesauce in a large bowl on low speed until moistened for approximately 30 seconds, then beat at medium speed for 2 minutes - then, stir in the chopped nuts & raisins by hand, (nuts and raisins are optional).
  • Pour the batter in prepared Bundt Cake Pan.
  • Bake for 38-43 minutes at 350.
  • Cool in pan for 15 minutes.
  • Remove from pan & cool completely before frosting.

1/4 teaspoon ground cloves

2 sticks unsalted butter, at room temperature
2 cups light brown sugar
2 large eggs
2 cups no-sugar-added applesauce
Powdered sugar, optional

Steps:

  • Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
  • Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. Alternate adding the flour mixture and the applesauce, ending with the flour, being careful not to over-mix. With its perfectly moist texture and soft crumb, this applesauce cake is a serious crowd-pleaser. Made with 1 1/4 cups yogurt and 1 3/4 cups applesauce, it will be one of the moistest bundt cakes you ever make. It's super simple, and it bakes beautifully and evenly every time. Notes: Sugar: Over the years many of you have asked if you can cut the sugar back in this recipe, and many of you have reported back with successful results. Some of you have used 1 cup, others have used 1.5 cups. Encouraged by you, I recently made the cake with 1.5 cups (330 g) of sugar, and it was a great success. That said, I promise you this cake is not too sweet with 2 cups of sugar. Teddie's apple cake, which is about the same size, also calls for 2 cups of sugar. Cinnamon: I like it this cake both with cinnamon and without. It all depends on your preferences. If you're in the mood for those warming fall spices, use cinnamon. If you're not in the mood for the spiced flavor, use vanilla. The texture of the cake will be divine no matter what spices you use. Yogurt: Geri, the woman who shared this recipe with me, uses Dannon plain nonfat yogurt, and her cake always came out incredibly deliciously. I get nervous about these things sometimes and can't keep myself from buying the full-fat tubs. I used Stonyfield whole milk plain. To freeze: Let the cake cool completely - this may take several hours from when you turn it out onto a cooling rack. Then wrap the cake in plastic wrap and tuck it into a jumbo Ziplock bag. Freeze for up to 3 months; thaw overnight on the counter before serving.

Steps:

  • Preheat the oven to 325ºF. Grease a 12-cup Bundt pan.

  • In a separate bowl, mix applesauce, yogurt, egg, oil and vanilla. Add to dry ingredients and stir until just combined.
  • Pour into prepared pan.
  • Bake for 50-60 minutes, or until toothpick inserted in center comes out clean. Mine have consistently been done at 55 to 60 minutes.
  • Cool 15 to 30 minutes or longer - I let mine sit for 45 minutes before turning it out onto a cooling rack. Before turning it out, run a paring knife around the center circle to loosen it a bit. See notes above if you wish to freeze the cake for a future date.
