A low-sugar cookie for breakfast on the go. I like to make several portions of the dry ingredients all at one time and store in plastic bags for easy assembly when needed. Store in the refrigerator.

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Grind 2 1/4 cups oats in a food processor to yield 2 cups ground oats. Add walnuts, raisins, flax seeds, cinnamon, baking powder, and salt. Stir in remaining 1 cup oats. Stir thoroughly with a spoon, but do not grind further.
- Make a well in the center of the oat mixture. Add bananas, eggs, applesauce, honey, and vanilla extract. Mash together and stir in oat mixture. Drop tablespoonfuls of the cookie dough on the baking sheets.
- Bake in the preheated oven until edges are set, about 14 minutes.

- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.
- In a bowl, stir together the flaxseed and water. Let it sit for 3 minutes.
- Add the applesauce, honey, cinnamon, vanilla, baking soda and salt. Stir together until everything is well mixed.
- Add the oats and whole wheat flour and stir to mix them in.
- Stir in the chocolate chips or other mix-ins.
- Use a spoon to scoop tablespoon-sized balls of dough and place them on the baking sheet. You can place them close together because the cookies will not spread.
- Bake the cookies for 10-11 minutes, until they are slightly golden brown.

3 INGREDIENT HEALTHY APPLESAUCE OATMEAL COOKIES

- Preheat oven to 350°F. Line a baking sheet with silicone baking mat or parchment paper.
- In a large bowl, add applesauce and oats. Mix with a spoon until evenly combined and all oats are moistened. Stir in mix-ins (you can add them onto the cookies right before baking instead for a prettier presentation. See notes for more details).
- Use a 1.5 tbsp cookie scoop and scoop dough balls, placing them onto prepared baking sheet, spaced 2 inches apart. Using the back of your spoon or the palm of your hand, press down on dough balls to form thick round disks (about 3/8 inch thick). The cookies will not spread or change shape during baking so shape them as needed until they are how you want them to be.
- Bake cookies about 13-15 minutes or until they are set. If you are unsure if the cookies are set, use a cookie spatula and try to lift a cookie off of the baking sheet. You should be able to lift the cookie off of the sheet in one piece when they are done. Let cookies cool before removing and eating. Store cookies in airtight container at room temperature for 1-2 days or in the fridge or freezer for longer.
