2 medium tart apples, peeled and chopped
1-1/2 cups orange juice
1/2 cup honey
2 tablespoons butter, melted
1 teaspoon ground cinnamon
1-1/3 cups sour cream
1/4 cup confectioners' sugar

Steps:

  • In a small bowl, combine the flour, 2/3 cup sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Spread into the bottom of a greased 4- or 5-qt. slow cooker; sprinkle apples over batter., In a small bowl, combine orange juice, honey, melted butter, cinnamon and the remaining 1/4 cup sugar; pour over apples. Cover and cook on high 2-3 hours, until apples are tender., In a small bowl, combine sour cream and confectioners' sugar. Serve with warm pudding cake.

This is my favourite apple dessert. This recipe came from my mother and we had this many times growing up. Use enough apples to generously cover the bottom of the dish. So Yummy!

1/4 cup shortening
1/2 cup sugar
1 egg, beaten
1/2 cup milk
1 cup flour

1 cup brown sugar
1 tablespoon butter
1 tablespoon flour
1/2 teaspoon vanilla
1 1/2 cups water

Steps:

115 g butter (softened)
115 g caster sugar
2 medium eggs
¼ teaspoons Vanilla extract
115 g self raising flour

Steps:

  • Butter the sides and base of a medium-sized ovenproof dish measuring approx. 20cm/8" x 14cm/5.5" x 6cm/2.5" deep.
  • Preheat the oven to 170 deg fan assisted.
  • Peel and core the apples. Slice them into chunks. Gently stew with 2 tablespoons of water for a few moments until softened.
  • Pour the stewed apples into the prepared dish.
  • In a separate bowl, beat together the butter and sugar until light and fluffy. Scrape down the sides of the bowl as you go along.
  • Gradually add the eggs, one at a time, adding a little flour in between to help prevent curdling. Mix until well combined.
  • Add the vanilla extract and remaining flour. Mix until well combined. Do not over beat as you will over stretch the gluten in the flour.
  • Pour the cake batter evenly over the top of the stewed apples.
  • Bake in the centre of the oven for 40 mins. Or until baked. Testing the centre of the sponge in various places, with a skewer until it comes out clean.

Is there anything nicer than the smell of apples and cinnamon? This is such a comforting dessert. Easy to make and low in fat too. You probably already have everything at hand. A good friend gave this to me many moons ago. I believe she got it from a women's group in Meaford Ontario. This is also terrific baked in individual ramekins or onion soup bowls. For a change of pace, try adding raisins or whole cranberries to the apples prior to pouring on the batter.

  • Stir the milk into the crumbs just until moistened.

1/8 teaspoon cinnamon
1 stick cold unsalted butter, cut into small pieces
1 cup milk
1/2 teaspoon pure vanilla extract
2 large Granny Smith apples, about 3 cups, (or any cooking apple), peeled and chopped.
1 1/2 cups apple cider or juice
1/2 cup granulated sugar
1 teaspoon cinnamon
2 tablespoons butter, melted
1/2 teaspoon pure vanilla extract
1 cup heavy whipping cream
1/3 cup powdered sugar

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt and cinnamon. Using a pastry blender or two forks, cut the butter in, until the mixture resembles small peas. Add the milk and vanilla and stir just until moistened. Spread the batter evenly in the bottom of the prepared slow cooker. Sprinkle the chopped apples over the batter.
  • To a small bowl, add the apple cider or juice, sugar, cinnamon, melted butter and vanilla. Mix just until combined and pour the batter evenly over the apples and cake batter. DO NOT STIR!
  • Cover with the crockpot lid and cook on high for 2 1/2 hours. Check apples with a knife or fork to see if they're tender enough. Cook for an additional 1/2 hour if necessary. Mine were very tender after 2 1/2 hours.
  • Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
  • Refrigerate leftovers and re-warm later in a microwave.
  • Add whipping cream to a mixing bowl of a stand mixer fitted with the whisk attachment or use a hand mixer. Whisk on medium speed until whipping cream starts to slightly thicken. Add the powdered sugar and whisk on high for a few seconds until the whipping cream forms soft peaks. Serve immediately or refrigerate.

  • Tips: You can bake the cake and make the sauce a day ahead and store them separately (refrigerate sauce). Warm the sauce in a saucepan over low heat, and heat individual pieces of cake uncovered in the microwave on High for 25 to 35 seconds or until warm.

  • Make the pudding batter: In a medium bowl, mix together the the flour, sugar, baking powder, salt and cinnamon. In a small bowl, mix together the milk, melted butter and vanilla. Add the wet ingredients to the dry ingredients. Stir to combine well. Spread batter in to the bottom of an 8-cup baking dish or divide between 4-6 individual baking dishes. (*If using individual dishes, you may want to place dishes on a baking sheet, for easy transport to the oven, and to catch any splatters.) Arrange a layer of apple slices on top of batter.
  • Prepare the sauce: In a medium bowl or a 4 cup measuring cup, mix together the brown sugar and flour. Add the boiling water, the butter,vanilla and salt. Stir to combine and until butter melts. Gently pour over batter, being sure to leave 3/4-1 inch of room at the top of the baking dish.
  • Bake in pre-heated 350° oven for 35-40 minutes or until toothpick in centre comes out clean when inserted in the top cake part. Pudding will have formed a cake-like top with lots of sauce underneath. Allow to cool for 5 minutes, then enjoy warm. Lovely as is, or top with a scoop of vanilla ice cream.
