PROSCIUTTO, LETTUCE, AND TOMATO SANDWICH
Prosciutto -- air-dried Italian ham -- has a sweet, salty taste and a pleasant aroma. Its texture is dense and silky, the result of being pressed during curing. Here, it makes a flavorful alternative to bacon in our version of a BLT.

- Using a garlic press, press the garlic clove into a small bowl. Whisk in the mayonnaise and lemon juice. Spread one side of each slice of toasted bread with garlic mayonnaise. Divide Crispy Prosciutto over 4 slices; top each with 1 leaf romaine lettuce and thinly sliced plum tomatoes. Top with remaining bread slices, mayonnaise side down. Trim crusts as desired, and serve immediately.

PROSCIUTTO, HAVARTI AND APPLE SANDWICH
Here is an easy sandwich with a great balance of salt and sweet, as strong a candidate for school lunch as an office brown bag. The night before, assemble your ingredients and grill the sandwich for about five minutes, then put it in a sandwich bag, and place in the fridge. By noon the next day: luncheon excellence.

- Split ciabatta, and place one slice of cheese on one half. Top with prosciutto, followed by apple slices, the second slice of cheese and the other half of the bread.
- Melt butter in a 9-inch skillet over medium-high heat. When it froths vigorously, transfer sandwich to skillet. Place a grill press or a cast iron skillet on top of sandwich, and apply gentle pressure for about 2 1/2 minutes. With a spatula, carefully flip sandwich, replace grill press, apply pressure and grill 2 minutes more. Let cool. Place in sandwich bag, and store in refrigerator.

APPLE N PROSCIUTTO SANDWICHES
From Taste of Home Magazine. We made for dinner tonight and it was wonderful! Great blend of flavors and really filling... we served with baked potato soup. You could use this for appetizer and slice in smaller pieces or cut in 4 pieces and make a meal.

Steps:
- In a blender, combine the oil, walnuts, parmesan cheese and rosemary; cover and process until blended and nuts are finely chopped.
- With a bread knife, split focaccia into 2 horizontal layers.
- Spread rosemary mixture over cut sides of bread.
- On bottom of bread, layer prosciutto, apple, and brie; replace bread top.
- Cut into quarters.
- Cook on indoor grill for 2-3 minutes or until bread is browned and cheese is melted.
- To serve, cut each wedge in half.

- Prepare the aioli by combining all of the ingredients together in a blender or food processor. Set aside.
- Drizzle the olive oil in a medium frying pan over medium-high heat. Once the oil warms up place the slices of prosciutto inside the pan and fry until just crispy. Remove from heat and set aside on a paper towel.
- Spread a light layer of aioli on all 3 slices of bread (on both sides) and place in the same frying pan over medium-high heat. Heat the bread on both sides until slightly toasted. Remove from heat.
- Begin frying the egg at the same time as you begin constructing the sandwich. Melt the tbsp of butter in the pan before adding the egg, and cook for 3-4 minutes, flipping once.
