EASY APPLE COBBLER



Easy Apple Cobbler image

This is a delicious apple cobbler. My son often requests it instead of cake as a birthday dessert!

6 large Granny Smith apples - peeled, cored and sliced
3 tablespoons white sugar
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup white sugar
1 large egg
1 teaspoon baking powder
¼ cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Combine 3 tablespoons sugar and cinnamon in a bowl.
  • Layer apples in an ungreased 9x13-inch baking pan, sprinkling each layer with cinnamon-sugar.
  • Combine flour, 1 cup sugar, egg, and baking powder with a fork. Sprinkle over apples. Lightly sprinkle water over top.
  • Bake in the preheated oven until topping is golden brown, about 30 minutes.

1 cup sugar
12 ounces cranberries, washed and picked over
1 orange slice 1 1/4-inch thick, cut in half
2 ounces applejack
1/2 ounce sweet vermouth
1/2 ounce apple schnapps
2 dashes of Angostura bitters
1 teaspoon pomegranate molasses

Steps:

  • For the cranberries: add sugar to 1 cup water in heavy-duty pot and simmer over low heat until sugar dissolves. Add cranberries, and stir frequently until berries are soft, about 10 minutes. Cool before making cocktails, which require about two tablespoons per drink. (The rest can be used as sauce or refrigerated for several weeks.)
  • To make one cocktail, put two tablespoons of softened cranberries (about an ounce) and orange slices in a cocktail shaker and muddle together. Add ice, then remaining ingredients. Shake vigorously and pour into a cocktail glass.
  • Garnish with something decorative, like an edible flower, an orange twist or a gooseberry with skin peeled back.

2 cups tart apples, sliced and peeled
3 tablespoons brown sugar
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/3 cup flour
1 tablespoon sugar
1 teaspoon baking powder
3 tablespoons milk
2 tablespoons butter or 2 tablespoons margarine, melted
half-and-half (optional)

Steps:

  • Gently toss the apples, brown sugar, lemon juice, and cinnamon. Divide between two greased 10 oz custard cups or four 5 oz ramikens.
  • In a bowl combine flour, sugar, and baking powder; stir in milk and butter - just until moistened. Spoon over apples.
  • Sprinkle with sugar and cinnamon, if desired for a whole different look and slightly sweet flavor.
  • Bake at 400 degrees for 20 min or until the top is goldern brown. Serve with cream if desired.

Not a spoonful of sugar is used in this fruit-filled, crumbly dessert-yet it tastes terrific, thanks to the sweetness of fresh apples. Using a variety of apples helps to create a delicious sauce. And the addition of golden raisins adds another layer of fruity sweetness. I found this recipe in Prevention magazine. I have not tried this recipe, but I'm posting it for safe keeping.

8 firm crisp cooking apples, cored and cut into chunks (3 pounds, use a combination of Fuji, McIntosh, Golden Delicious, Granny Smith, and Jonathan)
1/2 cup unsweetened apples cider
1 tablespoon lemon juice
1 cinnamon stick
1/2 cup golden raisin
1/2 teaspoon ground nutmeg
1/2 cup all-purpose flour, plus 2 tbl
1/2 cup whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 tablespoons melted butter
1/4 cup apple juice concentrate, partially thawed
1/4 cup low-fat plain yogurt

Steps:

  • Place the apple chunks, cider, lemon juice, and cinnamon stick in a large saucepan. Cover, and cook over medium heat, stirring occasionally, until the mixture begins to bubble. Reduce the heat to low, and cook for about 20 minutes, or until the apples are very tender.
  • Remove the pan from the heat, discard the cinnamon stick, and stir in the raisins and nutmeg. Spoon the applesauce into a 9" pie pan or shallow baking dish. (Can be made a day ahead).
  • Heat the oven to 400. In a medium bowl, stir together the flours, baking powder, salt, and cinnamon. In a small bowl, combine butter, apple juice, and yogurt. Pour the wet mixture into the dry, and blend gently with a fork for about 30 seconds. Remove to a floured surface, and knead for about 30 seconds.
  • With floured fingertips, press and spread the dough over the applesauce, making the dough surface as even as possible. Reduce the oven temperature to 375, and bake for 20-25 minutes, or until the cobbler is golden brown. Serve warm or at room temperature.
