DUCK BREAST WITH APPLE-POMEGRANATE SAUCE

Steps:
- Heat a medium saute pan over medium-high heat and add the oil.
- Cut a crosshatch pattern into the skin of the duck breasts. Be careful to not cut through to the flesh.
- Season the skin side with the curry and the flesh side with salt. Place in the pan, skin side down. Cook on the skin side to render of some of the fat and crisp up the skin, 5 to 7 minutes. Once the skin is crisp, flip the breasts, reduce the heat to medium, and cook on the flesh side for about 4 minutes for medium-rare. Once cooked, remove from the pan and allow the meat to rest for 5 minutes.
- Make the sauce in the same pan used for the duck. (Wipe out the pan if you have burned bits on the bottom, and add some butter.) Place the pan over medium-high heat and add 1 tablespoon butter. Deglaze the pan with the pomegranate juice. Allow the juice to simmer and reduce by half. Turn off the heat and stir in the remaining 2 tablespoons butter. Taste and season with a pinch of sugar if the sauce tastes too tart.
- When plating, slice the duck breast thinly and spoon the warm sauce over the duck. Serve with Mashed Sweet Potatoes with Goat Cheese and Sauteed Julienned Vegetables.
- Peel and slice the sweet potatoes into 1/2-inch pieces. Place the potatoes in a large saucepan, fill with water to cover the potatoes, and add some salt. Bring the water to a boil over medium-high heat. Cook the potatoes until fork tender, about 13 minutes. Stick a fork in a potato piece and if it goes in easily, it's done.
- Drain the potatoes well. Transfer them to a food processor and blend until smooth. Add the goat cheese, honey, ginger, cinnamon, butter, and 1/2 teaspoon salt. Blend again until everything is well combined. Transfer to a bowl and let cool for 1 minute.
- Spoon the potatoes into a zip-top plastic bag or a pastry bag with a tip for piping, or spoon directly onto plates. If piping, cut a hole in the tip and pipe onto the plate.
- Heat a saute pan over medium heat and add some oil. Saute the julienned vegetables and season with salt and pepper. Cook until the vegetables are just softened, 3 to 5 minutes. Taste a bite and cook for another minute if the vegetables are still hard.
FRENCH HONEY-LACQUERED DUCK BREAST
Steps:
- Gather the ingredients.
- Preheat a large skillet over medium-high heat.
- Cut small slits in the skin side of the duck breast. The slits should be shallow without slicing all the way through into the flesh.
- Season the duck e both sides with the salt and pepper
- Sear the duck breasts, skin side down for 3 minutes.
- Reduce the heat to medium-low and flip the duck breasts over, cooking them for an additional 4 to 5 minutes.
- Transfer them to a plate and cover them with foil so they retain their warmth.
- Pour off the rendered duck fat and turn the heat up to medium.
- Deglaze the skillet with the honey and balsamic vinegar , scraping up the browned bits as the sauce cooks.
- Simmer the honey vinegar glaze for 2 to 3 minutes until it turns slightly thick. Season with just a dash of salt.
- Return the duck breasts to the pan, turning them a few times to coat them evenly with the honey glaze.
- Carve and serve them immediately, garnished with a drizzle of extra glaze and the chopped nuts if desired.

- Combine Honeycrisp apples, Granny Smith apples, and apple cider in a large stainless steel or enamel-coated saucepan; bring to a boil, stirring occasionally. Reduce heat to medium-low; simmer until mixture reduces by about half, about 20 minutes.
- Stir sugar and lemon juice into the apple mixture; bring to a boil. Reduce heat to medium-low, and continue cooking at a simmer until the mixture is very thick, about 25 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- With the tip of a knife, do incisions like a checkerboard on the skin of the duck breasts, but DO NOT touch the flesh. In a large non-stick skillet, brown the breasts at high heat 4-5 minutes on each side, beginning with the skin side. Put the breasts in a not too deep ovenproof dish and keep cooking in a preheated oven of 350 F for about 8 minutes or until the flesh of the duck is slightly pink inside.
- Meanwhile, deglaze the skillet by keeping 2 tablespoon of the grease. Add shallots and apples at medium heat, stirring from time to time, for about 3 minutes or until apples are golden. Pour apple juice in the skillet scraping the bottom with a wood spoon to remove the browned bits. Cook for 5 minutes or until liquid has reduced by half. Add rosemary and stir. Add salt and pepper.
- When ready to serve, slice the duck breasts in bias ( / ) Distribute the slices in the plates and coat with the sauce.

SLOW-ROASTED DUCK BREAST WITH PLUM SAUCE

- Score the skin: Using a sharp knife, score the skin in a cross-hatch pattern (try not to cut the meat).
- Marinate the meat: overnight or longer, max. for 2 days. Prepare a small pot - the meat should be almost completely submerged in the marinade, you can also use a thick ziplock bag. Whisk the ingredients for the marinade (red wine, honey, soy sauce, vinegar, jam, and spices), bring them to boil then leave to cool. Add the duck breast, skin-side up, cover, and put in the fridge.
- On the second day: Preheat the oven to 212°F / 100°C.
- Sear the meat: it's best to use an oven-proof pan but if you don't have such pan, just use a regular skillet then transfer the meat to a small baking dish.Remove the meat from the marinade, pat dry thoroughly with paper towels. Place in a cold (!) pan, skin-side down. Turn on medium-low heat and cook for a couple of minutes or until the skin is browned and the fat rendered. Don't cook it over too high heat, the fat needs to be rendered slowly. It's good to weigh the meat down so that the skin that be browned uniformly - you can place a loaf pan on top of the meat and put an olive oil bottle on top to weigh it down. Turn the breast on the other side and cook briefly, until the meat is browned. Leave a tablespoon of fat in the pan and discard the rest.
- Bake: Place the duck breast in a small baking dish (I used a 20 cm/8-inch oven-safe pan). Pour in the marinade. Cut the plums in half, remove the stones, arrange them around the meat. Place the dish in the oven.
- Bake in a preheated oven for about 55-60 minutes or less, to your desired doneness. After this time the duck should be around 150°F (66°C). It should come to the 'well-done' temperature (160°F/71°C) while resting. If you prefer your duck breast medium, bake it for about 45 minutes, to 60°C / 140°F. Medium-rare is 52°C / 125 °F . The baking time will depend on how long you've seared the meat in the pan and how big your duck breast is (it's best to use a grill thermometer to measure the temperature!*).It's important to cook the meat to a temperature and not to time, you can measure internal temperature with an instant thermometer (stick it into the thickest part of the meat). Well-done duck breast (safe for kids to eat) should be cooked to a minimum internal temperature of 71°C / 160°F. Remember that after removing the meat from the oven, its internal temperature will continue to rise.
- Remove the dish from the oven. Transfer the meat to a plate, cover it tightly with aluminum foil, and leave to rest for 5-10 minutes.
- Prepare the sauce: If the plums are very soft, remove them from the sauce, but leave harder fruits in (very soft plums will fall apart completely while reducing the sauce). Cook the sauce for about 5 minutes over medium heat until thickened. Discard cardamom capsules, star anise, and cinnamon stick.
- Serve: Cut the duck breast into thin slices against the grain*, pour the sauce over, serve with cooked rice and roasted plums. Optionally, sprinkle with coriander leaves and sesame seeds.

PAN ROASTED DUCK BREAST

- Preheat the oven to 400 degrees F.
- With a sharp knife score the fat of the duck breasts in a criss-cross pattern. Season the duck with salt and pepper. Warm a heavy bottomed ovenproof skillet over medium heat.
- Place the duck breasts, fat side down, in the skillet to render off the fat, about 6 minutes. Reserve rendered duck fat. Turn the duck breasts over and sear for 1 minute. Turn the fat side down again and place the skillet into the oven to roast for 7 to 9 minutes, until breasts are medium rare. Let the duck breasts rest for 5 minutes then thinly slice.
- Grate the potatoes and squeeze out excess liquid using your hands. Toss the potatoes with the melted butter, rosemary, salt, and pepper. Heat 1 tablespoon of duck fat in a 6-inch cast iron pan over medium-high heat. Press some of the potato mixture into the hot pan to make a 1/4-inch thick cake. Reduce the heat to medium and cook until the rosti is golden brown, about 5 minutes. Flip the rosti in the pan and add more duck fat. Continue cooking until golden and crisp. Place the finished rosti onto an unlined baking sheet and continue cooking the rest of the potato mixture. Reheat rosti in a 400 degree F oven for 10 minutes.
- Combine the brown sugar, raspberry vinegar, red wine vinegar, and white wine vinegar in a medium pot. Place over medium-low heat and stir to dissolve the brown sugar. Simmer for 5 minutes.
- Add the blueberries, onion, green peppercorns, lemon juice, and ginger. Reduce the heat to low and simmer for 45 minutes or until thickened, stirring occasionally to prevent scorching.
- The chutney will keep for several weeks stored in the refrigerator in an airtight container.

- Squeeze the lemon juice into a bowl of water. Slice the apples into quarter moons of about 1/4 inch thick. Do not peel. Drop each slice into the lemon juice and make sure all sides are coated to avoid browning.
- Heat a large saute pan over high heat for 1 to 2 minutes. Add the duck fat or butter and swirl to coat the pan. Place the duck breasts skin side down, turn the heat to medium and cook for 5 to 8 minutes, until golden brown. Turn over and cook for another 2 to 4 minutes, depending on how you like your duck.
