Steps:
- Preheat oven to 375 degrees F.
- Butter a 13 x 9 inch baking pan.
- In a saucepan, combine apples, sugar, lemon juice and water and simmer, covered, stirring occasionally, for 5-10 minutes, or until apples are tender.
- Add dates and simmer, uncovered, stirring and mashing dates, for 3-5 minutes, or until dates are soft and mixture is almost smooth and let puree cool.
- In a bowl, combine butter, brown sugar, salt, flour, walnuts and cinnamon and blend well.
- Press half of flour mixture evenly into prepared pan.
- Spread puree over, and crumble remaining flour mixture over puree, pressing lightly to form an even layer.
- Bake for 35-40 minutes, or until golden.
- Let cool completely.
- Cut into 36 bars.
APPLE-DATE BARS
A crumbly crust of rolled oats holds a moist apple-date filling. To boost texture even more, stir 1/2 cup of chopped walnuts into the filling.

- In medium saucepan, combine all filling ingredients; mix well. Bring to a boil. Reduce heat to low; cook about 10 minutes or until thickened, stirring occasionally. Cool slightly.
- Meanwhile, heat oven to 375°F. Grease and flour 13x9-inch pan. In large bowl, combine flour, baking soda and salt; mix well. With pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Add oats and brown sugar; mix well.
- Press 3 cups crumb mixture evenly in greased and floured pan. Spread evenly with filling. Sprinkle with remaining crumb mixture; press lightly.
- Bake at 375°F. for 18 to 28 minutes or until golden brown. Cool 1 hour or until completely cooled. Cut into bars.

- In a heavy saucepan combine the apples, the granulated sugar, the lemon juice, and the water and simmer the mixture, covered, stirring occasionally, for 5 to 10 minutes, or until the apples are tender. Add the dates, simmer the mixture, uncovered, stirring it and mashing the dates, for 3 to 5 minutes, or until the dates are soft and the mixture is almost smooth, and let the purée cool. In a bowl combine the butter, the brown sugar, the salt, the flour, the pecans, and the cinnamon and blend the mixture well. Press half the flour mixture evenly into a buttered 13- by 9-inch baking pan, spread the purée over it, and crumble the remaining flour mixture over the purée, pressing it lightly to form an even layer. Bake the mixture in the middle of a preheated 375°F oven for 35 to 40 minutes, or until it is golden, let it cool completely in the pan on a rack, and cut it into 36 bars.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x15-inch baking pan. Divide egg; set aside egg white for filling.
- Combine flour and salt in a bowl. Cut in shortening with 2 knives or a pastry blender until the mixture resembles coarse crumbs. Mix in milk and egg yolk until incorporated. Divide dough into two equal pieces. Pat one piece into the bottom of the prepared pan; set other piece aside.
- Mix apples, brown sugar, sour cream, flour, butter, and cinnamon together until well combined. Pour over the dough in the pan.
- Roll or pat remaining dough into a rectangle and place on top of filling. Beat reserved egg white until frothy and brush over dough.
- Bake until top and bottom are golden brown, 15 to 20 minutes. Remove from the oven and allow to cool completely, about 30 minutes, before cutting into bars.

- In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. APPLE PEANUT BUTTER BARS
Tart apples dipped in peanut butter have always been one of my favorite snacks. These peanut butter apple bars are an ode to my childhood favorite granola bars and my never-ending craving for apples and PB!

- Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
- Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
- While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
- In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
- Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
- Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.
OATMEAL AND APPLE BUTTER BARS
This is one of my newly adopted recipes. I tossed this together tonight while fixing dinner. Very quick and easy dessert. I used regular apple butter, but no added sugar apple butter could be used as well.

- Heat oven to 350 degrees.
- Grease 9-inch square baking pan with nonstick cooking spray.
- In large bowl, combine oats, flour, sugar, salt and cinnamon.
- Add butter and beat with electric mixer on low until mixture is crumbly.
- Pat half of the mixture, about 2 cups into baking pan.
- Spread apple butter evenly over crumb layer.
- Sprinkle remaining crumbs over apple butter and press down gently.
- Bake 30-35 minutes or until golden.
- Transfer pan to wire rack and cool completely.
