ASIAN CHICKEN WONTON TACOS
This is an easy copycat recipe for Applebee's chicken wonton tacos made with marinated chicken and creamy coleslaw inside crispy wonton shells and topped with a delicious sweet Asian chili sauce.

Steps:
- Combine finely diced chicken and marinade ingredients together in a bowl. Allow to marinate in the refrigerator for 30 minutes.
- Prepare the slaw by mixing coleslaw and Marzetti's coleslaw dressing together in a bowl.
- For the sauce, mix together ingredients in a small dish, then microwave for 30 seconds.
- To fry wonton wrappers into the shape of a taco, heat an inch of oil in a large pan over medium-high heat. Place a wrapper in the oil and then use tongs to quickly flip over and fold one half of the wonton shell upward (like a taco) to fry one side until crispy. Once crispy (about 15-30 seconds) flip over and fry the other side. It may take some practice. Continue until enough wrappers are fried. They continue to brown after they are removed from the oil. Drain on paper towels.
- In a large pan, cook chicken until browned and cooked through the center.
- Add chicken to each wonton taco, followed by coleslaw, sweet chili sauce, and topped with fresh cilantro and squeeze of lime juice.

SPICY THAI SHRIMP SALAD

- In a large self-sealing plastic bag, combine shrimp, minced garlic, chili powder, and cayenne. Toss until shrimp are evenly coated with the spice mix.
- Heat a large, heavy skillet over medium high heat. Melt olive oil and butter and swirl to coat the bottom the the skillet. Add shrimp in a single layer. (Do not crowd in pan.) Pan-fry about 2 minutes, then turn and fry until shrimp become pink all the way through and slightly firm, about 2-3 minutes. Do not over cook! Carefully remove shrimp from skillet and set aside.
- Layer or toss cabbages, spinach, carrots, edamame, green onions, and sliced almonds, wonton strips, and cilantro in bowl. Drizzle with Chili-Lime Vinaigrette and Sweet & Spicy Peanut Sauce. Garnish with additional cilantro and wonton strips. Serve with additional Vinaigrette and Peanut Sauce.
- Combine all ingredients in a jar and shake to combine. (Remember to put the lid on first!)
- Combine all ingredients and whisk or blend until smooth.

ASIAN SWEET CHILI CHICKEN

- Mix together the batter ingredients in a large bowl.
- Heat a frying pan up with oil deep enough to fry your chicken pieces without them touching the bottom of the pan, a couple inches should be enough space.
- Using a slotted spoon drain the batter as much as possible and slide the chicken into the pan.
- Break apart the chicken after the crust starts to form and cook until the chicken is golden brown (4-5 minutes)
- Work in batches to prevent the oil from dropping too far in temperature.
- Remove the last batch of chicken from the pan and discard almost all the oil, leaving just a couple of tablespoons in the pan.
- Add the garlic and green onions to the pan and cook it on medium heat for 20-30 seconds.
- Add the chicken back in along with the sweet chili sauce and crushed red pepper.
- Toss to combine and serve immediately.
- Garnish with sesame seeds or green onions if desired.

- Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
- Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
- Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
- Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
- While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
- Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
- Cool to room temperature and store in the fridge.

- Add the rice vinegar, sugar, water, and sambal oelek to a small sauce pot. Heat and stir the mixture over medium heat until the sugar fully dissolves.

- For the Sweet Spicy Chili Sauce: In small bowl, combine cornstarch and about 1 Tablespoon of water until mixture becomes watery, almost milky consistency. Combine well to break apart any cornstarch lumps, then set aside.
- Heat saucepan on medium-high heat, then add oil and garlic. Cook until it becomes slightly golden, about 30 seconds-1 minute. Add 1 cup of water, sugar, salt, fish sauce, garlic chili sauce, vinegar, and black pepper. Combine well and allow to slowly come to boil. Once mixture comes to a boil, immediately reduce heat to low simmer.
- Slowly add the cornstarch/water mixture until it becomes thick enough to allow sauce to cling to wings.
- Cook the Wings: Preheat oven to 425° F. Line a baking sheet pan with parchment paper.
- On prepared baking sheet pan, spread chicken wings out in one even layer (we don't coat our wings with oil before baking, but you can if you want. We find that the oil just makes the wings greasier. The wings release enough fat already). Season chicken wings with salt and pepper.
- Bake for about 45-50 minutes until golden brown, flipping the wings halfway through baking, after the first 25 minutes or so.
- In a bowl, add cooked chicken wings and toss with chili sauce. Top with some sliced green onion and/or cilantro.

ASIAN SWEET CHILI SAUCE

- In a medium-sized saucepan over medium to medium-high heat, stir together 2 cups of the water with the rice vinegar, sugar, salt, minced pepper, and garlic. Stir to dissolve the sugar and salt, and bring mixture to a boil. Boil for 5 minutes.
- While sauce is boiling, use a small whisk or fork to mix the canning starch (I used 1/4 cup + 3 teaspoons of Clear Jel and was happy with the consistency) into the remaining 1/3 cup of water. While stirring the sauce vigorously, pour the starch/water mixture into the pan. Keep stirring and bring the mixture back to a boil. Lower the heat and simmer for 1 minute.
- Use a ladle to scoop the sauce into half-pint (8-oz.) jars (I prefer the wide-mouth jars), leaving 1/4" headspace. Use a chopstick to remove air bubbles and then adjust the level with additional sauce if needed. Moisten a paper towel with vinegar and wipe rims of jars clean. Place lids on jars and fasten appropriately, whether it's turning a ring to fingertip tightness or fixing clamps in place.
- Use canning tongs to transfer jars to a canner or large stock pot full of boiling water, with water covering jars by 2". Put lid on canner and return water to a boil and process for 10 minutes. Carefully transfer hot jars to a towel-lined counter before removing any rings, wiping the jars clean, and labeling.
- Store jars in a cool, dark place for up to 1 year. Once opened, the sauce will be good for up to 3 weeks when stored in the refrigerator.

ASIAN SWEET CHILI SAUCE RECIPE

- In a food processor, add in the chili peppers, onion and garlic. Process until desired consistency. I like mine a rough mince.
- In a wok, large pot or large sauté pan, heat the cooking oil until shimmering on medium high heat. Add in the pepper/onion/garlic mixture and cook until fragrant, about 1 minute. Add in the remaining ingredients, mix well and bring to a simmer. Turn heat to low and cook for 20 minutes, stirring occasionally. Quickly taste and decide if you would like to add more spicy-hot chili pepper.
- Taste and adjust seasonings. If you feel like it needs more saltiness and savoriness, add 1 tablespoon of fish sauce. Need it sweeter - 1 tablespoon brown sugar. If the sauce is lacking that tang, or high flavor note - 1 tablespoon vinegar.
