APPLE WALNUT CAKE WITH CINNAMON GLAZE
This apple walnut cake is tender and flavorful with little bits of crunch throughout. Make it for a special occasion or family get together!

Steps:
- Preheat oven to 350 degrees
- Generously grease the bottom and sides of a 9x13-inch cake pan (or glass cake pan) with a tablespoon of butter.
- Peel and dice 4 or 5 medium apples, discarding the cores and peels, to make 3 cups.
- Whisk together sugar and oil in a large bowl. Add eggs and vanilla and whisk until well combined.
- Add flour to the bowl and sprinkle with the salt, baking soda, cinnamon, and nutmeg. Using a wooden spoon, fold the dry ingredients into the wet ingredients until combined. DO NOT over mix.
- Next, fold in the apples and walnuts. The batter will be stiff. Pour (or spread) the batter into the prepared pan. Bake for 1 hour or until a toothpick inserted in the middle comes out clean.
- Cool cake in the pan on a wire rack for 30 minutes before drizzling with the glaze.

- Preheat oven to 350 degrees F (175 degrees C). Butter and flour one 10 inch tube pan.
- Cream together the butter and sugar. Add eggs one at a time beating well after each addition. Set aside.
- Sift together the flour, salt, baking soda, cinnamon and nutmeg. Add to wet ingredients and mix well.
- Stir in vanilla, walnuts and apples. Mix well and pour into prepared pan.
- Bake at 350 degrees F (175 degrees C) for approximately 1 hour or until toothpick inserted in center comes out clean. Set aside to cool. Slide knife along outer edges to release bottom of tube pan. Slide knife along bottom of tube pan and inner tube to release cake.

- 1. Cake: Sift together flour, sugar, soda, cinnamon and salt. Add eggs, oil and apples. Mix well; it will be thick.
- 2. Spread evenly in tube pan (ex. bundt or angel food cake pan) spritzed with cooking spray. Bake at 325 for 1 hr and 15 minutes.
- 3. Glaze: Mix sugar, margarine and milk in saucepan and boil 2 minutes. Add nuts and vanilla. Pour over cake.
- 4. Let the cake set in the pan about 5-10 minutes. The minute I take it out of the pan, I pour the glaze over the hot cake and continue spooning it over the cake.
- 5. Note: Mini bundt - If you decide to make a mini-bundt, like I did, the baking time can be reduced to about 25 min. Just keep an eye on them!

- In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. In a large bowl, combine the four, baking soda, salt and nutmeg; gradually add to the egg mixture until well blended(batter will be stiff).
