"I had a package of puff pastry in my freezer and mentioned to a friend that I'd like to make apple turnovers," notes Coleen Cavallaro of Oak Hill, New York. "She shared a recipe that I adapted for the puff pastry. These turnovers were a big hit on my first try!"

1/3 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

⅓ cup water
¼ cup SPLENDA® No Calorie Sweetener, Granulated

1 (15 ounce) container refrigerated pie crusts
1 egg white, lightly beaten

Steps:

  • Cook apples and water in a medium saucepan over medium heat, covered, stirring occasionally and breaking up apples with the back of a spoon, 10 to 12 minutes or until apples form a coarse puree. Add SPLENDA® Granulated Sweetener and flour; cook 2 to 3 additional minutes, stirring constantly until SPLENDA® Granulated Sweetener dissolves and mixture is thickened. Stir in cinnamon. Spoon apple mixture into a bowl to cool slightly.
  • Preheat oven to 425 degrees F. Coat a baking sheet with cooking spray; set aside.
  • Unroll piecrusts; cut each one into four wedges. Roll each wedge into a 6-inch circle. Place 3 level tablespoons apple mixture on each circle; moisten edges of dough with water and fold dough over to form a half-moon shape. Crimp to seal, and cut vents to release steam. Place on prepared pan; brush tops with egg white.
  • Bake 15 to 20 minutes or until turnovers are browned. Cool turnovers on a wire rack 10 minutes before serving. Serve warm or at room temperature.

Homemade Apple Turnovers with a filling that tastes like Apple Pie in flaky puff pastry dough.

1 lb puff pastry ((2 sheets) thawed according to package instructions)
1 Tbsp all-purpose flour (for dusting)
1 1/4 lb Granny Smith apples
1 Tbsp unsalted butter
1/4 cup brown sugar (lightly packed)
1/2 tsp ground cinnamon
1/8 tsp salt
1 egg+ 1 Tbsp water for egg wash
1/2 cup powdered sugar
1-2 Tbsp heavy whipping cream

Steps:

  • Preheat Oven to 400˚F. Remove puff pastry from the freezer and thaw according to instructions while making and cooling the apple filling.
  • In a medium pot, melt 1 Tbsp butter over medium heat. Add diced apples and cook, stirring occasionally until softened (5 min).
  • Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  • Use a rolling pin to roll the first sheet of thawed pastry to an 11" square. With a pizza cutter, cut into 4 equal-sized squares. Place cooled apple mixture over half of each square, leaving at least a 1/2" border.
  • Thoroughly Beat together 1 egg and 1 Tbsp water. Brush eggwash lightly on edges of the pastry (just enough to seal), bring the edges together and crimp tightly along the edges with a fork to seal. Repeat steps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
  • Transfer to a parchment-lined baking sheet, keeping them at least 1" apart. With a paring knife, cut 2-3 small slits in the top of each turnover.* Brush the tops with egg wash and bake 20-23 minutes or until golden and puffed.
  • While turnovers are still warm, stir together powdered sugar and heavy whipping cream (adding to your desired consistency) and drizzle glaze over turnovers.

2 medium-large Bramley apples, peeled, cored and roughly chopped
50g golden caster sugar
½ tsp ground cinnamon
1 tbsp butter
1 Gala or sweet dessert apple, peeled, cored and cut into 1cm dice
320g pack puff pastry
2 tbsp milk to glaze
2 tsp demerara sugar

Steps:

  • Put the Bramley apple, sugar and cinnamon in a small pan with 1 tbsp water. Cover with a lid and simmer over a low heat for 10-15 mins until the apple breaks down and turns into a compote.
  • Stir in the butter and the Gala apple and cook for a further 5 mins, uncovered, until the Gala apple is just soft but retaining its shape, and any excess water has evaporated to make a thick compote around the Gala chunks. Remove from the heat and leave to cool.
  • Heat the oven to 220C/200C fan/gas 7. Unravel the puff pastry sheet out on a work surface, and cut into 4 even rectangles. Divide the apple filling to one side of each of the puff pastry rectangles, leaving a 1cm border. Brush the border with milk and fold over the empty side of pastry over the filling and crimp together. Brush with more milk and sprinkle over the sugar. Make a small steam hole in the middle of the turnovers.
  • Transfer to a parchment-lined baking sheet and bake for 20-25 mins until golden and puffed up. Leave to cool for 10 mins on a wire rack (the filling will be molten when it first comes out the oven) before serving warm with a scoop of vanilla ice cream, or serve at room temperature. Keep for 2 days in an airtight container.

  • In small bowl, mix flour, granulated sugar and salt. Gradually stir into apple mixture, cooking and stirring until mixture thickens. Remove from heat; stir in butter and vanilla. Cool 15 minutes.
  • Meanwhile, heat oven to 375°F. Let pie crust pouch stand at room temperature for 15 minutes.

170 g Unsalted butter (3/4 cup or 1 and 1/2 sticks chilled, cut into small pieces)
25 g Sugar (2 tbsp)
120-135 ml Water (8-9 tbsp)
2 Apples ((peeled, cored and diced small))
50 g Granulated sugar (1/4 cup)
1/2 tsp Ground cinnamon
Pinch of salt
1 tbsp Corn flour
60 ml Water (1/4 cup)
1 tbsp Lemon juice (optional)
1 Egg
1/2 tbsp Milk
12 g Sugar (1 tbsp for sprinkling on top)

Steps:

  • In a large bowl, whisk together the flour, sugar and salt. Add the cold butter and, toss it into the flour mixture and try to incorporate the butter into the flour.Add cold water, little by little into the flour mixture and, using a fork, gently toss and stir together until large lumps form and all of the flour has been moistened. Using your hands, pat the dough into a ball and wrap with plastic wrap or parchment paper. Refrigerate for 30 minutes or more until the dough is firm
  • In a small pan, add the sugar, cinnamon powder,salt,corn flour and water and bring it to boil .When it get thickened,stop cooking and take it out from the stove.
  • Line a baking sheet with parchment paper.
  • On a lightly floured work surface, roll out one half of the dough to ⅛-inch thickness.   • Freeze for 20 minutes or Refrigerate the assembled hand pies for 30 minutes.
  • Preheat oven to 400 degrees F
  • In a small bowl, whisk together an egg and milk for the egg wash. Remove the chilled hand pies from the refrigerator, and lightly brush with the egg wash. Using a sharp knife, cut a few small slits on the top of each hand pie, then sprinkle generously with coarse sugar.
  • Bake @400 F for 10 minutes and then reduce the temperature to 375 F and bake for another 18-20 minutes or Bake until the hand pies are golden brown, the baking time vary according to how thick we rolled the dough.

1 1/4 pounds tart apples, such as Empire or Granny Smith (3 apples)
3 tablespoons dried cherries

1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch kosher salt
1 package (17.3 ounces, 2 sheets) frozen puff pastry, defrosted

  • Preheat the oven to 400 degrees F.
  • Combine the orange zest and orange juice in a bowl. Peel, quarter, and core the apples and then cut them in 3/4-inch dice. Immediately toss the apples with the zest and juice to prevent them from turning brown. Add the cherries, sugar, flour, cinnamon, nutmeg, and salt.
  • Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square. Cut each sheet into 4 smaller squares and keep chilled until ready to use.

Steps:

  • Get ready: Put oven rack in lower third of oven and pre-heat oven to 400°F. Butter a large baking sheet (or use Silpat ).
  • Make filling: In a medium bowl, mix together apples, currants, and walnuts with the sugar, cinnamon, and corn starch, making sure the fruit and nuts are well coated. Mix in the apple sauce and vanilla. If using puff pastry: Unfold the thawed pastry sheet on a lightly floured surface. Depending on the size of your puff pastry sheet you are going to want to cut the sheet into either four 5-inch-by-5-inch or six 4-inch-by-4-inch squares. If using pie dough: Roll out your pie dough on a lightly floured surface to a 16x11 inch rectangle. Trim the edges to 15x10 inches and cut into six 5x5-inch squares.
  • Brush egg mixture on pastry edges: In a small bowl mix the beaten egg with a teaspoon of milk. Use a pastry brush to brush the egg mixture on the border of the pastry. This will help the pastry seal.

Simple apple and puff pastry delights!

4 Granny Smith apples, peeled, cored, chopped or sliced into small pieces
2 Tbsp fresh lemon juice
4 Tbsp of sugar
1 box of puff pastry (16 to 18 oz pkg) cut into 5" x 5" (12.5 cm x 12.5 cm) squares (I recommend Trader Joe's as it is made with butter)
1 egg white
a little coarse sugar or powdered sugar for decoration
(optional: fresh whipped cream)

Steps:

  • Place the apples, lemon juice and sugar in a pot over medium heat and cover with a lid.
  • Toss to turn a few times, but only steam them for a few minutes, just to soften them a little. Remove from heat and allow to cool.
  • On one piece of puff pastry, put about 2 tablespoonfuls of apple filling. (Tip: if you have two sheets of puff pastry, keep the one you're not working with in the fridge as it's more difficult to work with when it gets warm.) Imagine that there is a line diagonally across the pastry and keep the filling on one triangle of the square.
  • Wet two edges of the puff pastry with your finger dipped in water. Then fold the empty corner of the pastry over the apples and seal the edges with a fork. With a knife, make a small slit or two in the top of the pastry.
  • Repeat with the rest of the apples and pastry, and place on lined baking sheet. Brush with a very slightly beaten egg white (do not let it get frothy, just to make it easier to brush), and sprinkle with a coarse sugar. Another option is to omit the sprinkled sugar and just dust the apple turnover with powdered sugar after baking.
  • Bake for approximately 20-25 mins. until golden brown.
  • Allow to cool if filling with fresh cream or the cream will melt. Slice the top part of the pastry open, without cutting the top off completely.
  • Fill with freshly whipped, unsweetened cream. (Add a dusting of powdered sugar if you like.)

You can never go wrong with Chuck Hughes ' tender apple turnover topped with delectable sheep's cheese.

2 tablespoons/45ml butter
3 tablespoons/45ml brown sugar
1/2 teaspoon/2ml cinnamon
6 apples, such as Honeycrisp, Cortland, Spartan or Empire, peeled, halved, cored and cut into 1/2-inch cubes (about 3 cups)
1 pound/450g puff pastry
All-purpose flour, for the work surface
2 eggs
2 tablespoons/30ml confectioners' sugar, sifted
Soft, fresh sheep's or goat's milk cheese, yogurt or ice cream, for serving

Steps:

  • For the apple filling: Melt the butter in a saucepan over medium heat. Add the brown sugar, cinnamon and apples and cook until the apples are caramelized and have started to soften, 10 to 15 minutes. Transfer to a bowl and let cool, then keep in the refrigerator.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • For the turnover: Roll out the puff pastry to 10 by 10-inch square with a 1/8-inch (3mm) thickness on a lightly floured surface. Transfer to a large baking sheet lined with parchment paper. Spoon the apple filling over half the pastry, leaving a border around the edge. Beat the eggs with 1 teaspoon water for the egg wash. Brush the edges of the pastry lightly with some of the egg wash. Fold the pastry over the filling to form a triangle. Press the edges to seal and enclose the filling completely, then press with the back of a fork to make a tight seal. Using a small knife, cut two 1/2-inch-long slits in the top of the crust. Brush the top with the egg wash.
  • Bake the turnover until the crust is puffed and golden and the juices are bubbling through the slits in the crust, about 25 minutes.
  • Sprinkle the turnover with the confectioners' sugar. Turn the oven to broil, and cook until the sugar is caramelized, watching it closely so it doesn't burn. This will give the turnover a browned crust. Carefully run a metal spatula under the turnover to loosen and transfer to a wire rack to cool slightly.
  • To serve, cut the turnover into wedges and serve warm with a dollop of cheese, yogurt or ice cream.

  • Combine apples, cherries, and currants in a medium heatproof bowl. In a small saucepan, heat apple juice until simmering and pour over dried fruit. Stir to combine, and let stand until juice is absorbed, about 5 minutes. Stir in applesauce; set aside.
  • Place puff pastry sheet on a lightly floured work surface. Trim edges, and cut out twelve 3-by-3-inch squares, discarding excess dough. 1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter, divided
1/4 cup ice water
FILLING:
1/3 cup sugar
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
2 medium tart apples, peeled and thinly sliced
1 teaspoon lemon juice
1 large egg, beaten, room temperature
1-1/2 teaspoons water
GLAZE:
1/4 cup confectioners' sugar
1 teaspoon water

Steps:

  • In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll dough into a 12x6-in. rectangle., Cut remaining butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 in. of edges. Fold unbuttered third of dough over middle third. Fold remaining third over the middle, forming a 6x4-in. rectangle. Roll dough into a 12x6-in. rectangle., Repeat steps of butter layering and dough folding, ending with a 6x4-in. rectangle. Wrap in plastic; refrigerate for 15 minutes. Roll dough into a 12x6-in. rectangle. Fold in half lengthwise and then widthwise. Wrap in plastic; refrigerate for 1 hour., Preheat oven to 450°. Meanwhile, in a small saucepan, combine the sugar, cornstarch and cinnamon. Add apples and lemon juice; toss to coat. Bring to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring often, 5-10 minutes. Remove from the heat., In a small bowl, combine egg and water. Roll dough into a 12-in. square; cut into four squares. Brush with half of the egg mixture. Spoon about 1/4 cup filling on half of each square; fold dough over filling. Press edges with a fork to seal. Place on an ungreased baking sheet. Brush with remaining egg mixture. With a sharp knife, cut three small slits in the top of each turnover., Bake until golden brown, 17-22 minutes. Remove to a wire rack. Combine glaze ingredients; drizzle over turnovers. Serve warm.

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.
