APPLE TURKEY FINGERS (FOR OLDER INFANTS & TODDLERS)



Apple Turkey Fingers (For Older Infants & Toddlers) image

Inspired by the classic (and kid-friendly) combo of apples & turkey, I concocted these tonight for my 9 month old and liked them so much I might end up eating them myself! Perfect for older babies and toddlers (serve with a fun dipping sauce), these make cute little "fingers" in perfect take-one-out-of-the-freezer-at-a-time portions. I used half an egg (if your child is over 12 mos. you can use more - I limited the egg white for infants) and unprocessed bran (for a nutritional boost) for binding. Enjoy, babies and grown-ups alike!

Number Of Ingredients 9

1 lb ground turkey
2 medium carrots
1 large apple
1 garlic clove
1/2 small onion
1/2 egg, beaten
1/4 cup unprocessed natural bran
1/2 teaspoon dried thyme, crushed
salt & pepper (optional)

Steps:

  • Preheat broiler.
  • Place ground turkey in a large mixing bowl.
  • In a food processor or by hand, grate the carrot, apple, garlic & onion, or else mince very finely (I grated the carrots using a microplane, but minced the apple, onion and garlic for texture). Add to bowl with turkey.
  • Add the 1/2 beaten egg (or whole egg for older kids), bran, thyme and any seasonings you wish. Mix all ingredients together.
  • Scoop mixture up about 1/4 cup at a time (size of a large meatball) and roll into little sausage shapes, placing on a broiling pan or cookie sheet as you go (you may need to do two pans worth). Wet your hands periodically if it's sticky.
  • Place in broiler and broil for 10-15 minutes on one side, then turn over and broil 5-10 minutes more.
  • Remove and let cool. Store together in a freezer bag or individually wrapped in foil.
  • Enjoy!

Number Of Ingredients 8

1 lb ground turkey
1 whole eggs or 2 egg yolks, beaten
1/2 cup pureed carrot
1/4 cup applesauce
1/4 cup unprocessed natural wheat or 1/4 cup oat bran
1/4 cup breadcrumbs
1 pinch basil
1 pinch garlic powder

Steps:

  • Place ground turkey in a large mixing bowl.
  • Add the egg/yolk, carrots, applesauce, spices, bread crumbs and bran.
  • Mix well - If this mixture appears too dry, add more carrots or applesauce. If this mixture appears too wet, add more bran and/or bread crumbs.
  • Place mix into a lightly oiled (olive oil) loaf pan and bake at 350F for approximately 45 minutes or until an inserted knife comes out clean. **You may wish to cover with foil to prevent the top from burning
  • When finished baking and cooled, remove loaf from pan and slice as you would for bread. Break into small bits for finger feeding or mash or chop gently.
  • This recipe may also be made into "Turkey Sticks" for Toddlers and older babies who are able to handle more textured/chunky finger foods.

I found this recipe on wholesomebabyfood.com and I am posting it for safe keeping. It is recommended for babies that are 6 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

1 egg white, beaten
1 cup breadcrumbs
1 tablespoon sage
1 teaspoon thyme
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  • Rinse and pat dry the turkey breast and slice into 1/2 inch strips.
  • Add sage, thyme, salt, and pepper to bread crumbs and mix well.
  • Dip turkey fingers into egg white and cover with crumbs mix.
  • Place fingers onto baking sheet and bake, turning once, about 10 minutes.

These are really cute turkeys made out of apples that kids can make for school or just eat as a snack. They also make adorable Thanksgiving Table decorations. They can be made with either Fruit Loops or raisins. Rule: broken Fruit Loops must be eaten. Variations: head can be a cut out that is glued on or a large marshmallow with raisin eyes and a candy corn stuck into it for a beak.

1 apple
1/4 cup Fruit Loops cereal (if using Fruit Loops you will need a few raisins for the neck) or 1/4 cup raisins (if using Fruit Loops you will need a few raisins for the neck)
6 -7 mini marshmallows
7 -11 toothpicks
1 green olives
2 cloves

Steps:

  • To make the feathers: Take raisins or Fruit Loops and slide onto toothpicks about 3/4 the way down. Place a mini-marshmallow on the end. You will need 6 or 7 "feathers" depending on the size of your apple.
  • Stick the "feathers" into the back of the apple.
  • To make the head: Slide raisins down toothpick and top with a green olive (head). Use cloves for eyes. If your olive has a pimiento you can pull it out the back of the olive and let it hang so that it looks like a turkey wattle.
  • Insert three toothpicks under the turkey so it can stand freely.

Another one of my no-flame-required, kid-friendly recipes. I remember making these in my after school program in grade school and loving them. They are a great wholesome activity for kids parties...just make sure an adult slices the apples. My favorite Apples to use are Pink Lady because the tart flavor is a nice compliment to the Peanut Butter. For a healthier variation, use cubed Slightly Green Bananas instead of Marshmallows...ripe bananas may be mushy. If you are worried about Peanut Butter allergies, substitute Cashew Nut butter as it is far less common to be allergic to.

Steps:

  • Core Apples and Slice each into 6-8 wedges.
  • If you are slicing Apples ahead of time, toss with Lemon juice.
  • Cover 1 side of Apple Wedge with about 1 tbs. of Peanut Butter.
  • Stand up 5 or 6 Marshmallows in a line along the peel edge of Apple.
  • Cover with another Apple Wedge (like you are making a sandwich).
  • Repeat with the other wedges.
