- In a small saucepan, combine the cornstarch, cinnamon, nutmeg and apple juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sugar substitute.

Steps:
- Melt butter in a saucepan over medium heat until it begins to bubble, about 1 minute. Add sugar and molasses; stir until sugar has absorbed molasses and butter, about 3 minutes. The mixture will be very dry. Add 2 cups apple cider. Mix well and bring to a slow boil. Add cinnamon stick and continue to simmer syrup for about 10 minutes.
- Whisk together 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl.
- Pour cornstarch mixture into syrup in the saucepan, whisking continuously until fully incorporated. Simmer until thickened, with a consistency similar to warm maple syrup, about 5 minutes. The syrup will thicken upon cooling.
- Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

- Add the apple juice, lemon juice, star anise and cinnamon to a saucepan.
- Boil on a medium-high heat and reduce down to 1/4 of the original volume, stirring occasionally.
- This can take an hour or two.
- Remove the star anise pods.
- Now add the sugar and boil until the sugar is dissolved.
- The apple syrup is ready when it coats the back of a spoon but still drips off like honey.
- Pour the apple syrup into a clean jam jar. Apple syrup keeps for quite a long time. Tips: If the apple syrup has cooked for too long it may go hard in the jar. If this happens, you'll simply have to put it in the microwave for a minute before using, so it'll turn runny again. Therefore, it's probably best to keep it in a container that can go in the microwave if needed. Soak your saucepan in hot tap water and the gloopy syrup residue will simply dissolve. No need to scrub!

APPLE CARAMEL SYRUP
I overcooked my apples and I saw in a grocery store Apple Caramel Syrup and thought I could do this and tried it. I have a baking apple tree and so they are tart apples. I was just trying something new and different. Can use as Ice Cream Topping or Pancake/Waffle Syrup.

- I happened to over cook my apples after I peeled and cored them so they were to soft to even try to get them out and drain them.
- (I had a canner full of apples.) So I mashed them with the juice, (left some lumps) and came up with this recipe.
- You can use it as Ice cream Topping, or Pancake/waffle syrup.
- I put the apple mixture in a kettle and heated.
- I added the sugar, Karo Syrup,& Mrs.
- Richards Caramel Topping and brought to a boil for a couple minutes and put into pint jars and process them for 30 minutes to make sure they sealed.

- To make syrup: in a small saucepan, combine the syrup ingredients over medium heat, bring to a boil, reduce heat; simmer, uncovered, for 5 minutes or until slightly reduced.
- For pancakes: Preheat grill.
- Place biscuit mix in large bowl.
- In medium bowl, combine the eggs, milk, and oil; stir into biscuit mix just until moistened.

- Put prepared apples, cinnamon, nutmeg, mace, lemon juice and butter into a deep pot.
- Cover and cook apples on medium heat until softened.
- Puree the softened apples.
- Place the pureed apples back into the pot.
- Add the remaining ingredients, except for the cornstarch and 1/4 cup of water.
- Stir until the sugar is dissolved and the mixture starts to boil.
- Allow to boil for 5 minutes.
- Mix the cornstarch with 1/4 cup of water, until all cornstarch is dissolved.
- Stir into syrup mixture and cook until slightly thickened.
- Pour into jar and refrigerate.
