APPLE STREUSEL BARS
I made these delicious bars for a friend's birthday once and now he requests them every year! They have a tasty tartness with a cinnamony kick. Be sure to chop the apples into small cubes -if the apple pieces are too big the bars will fall apart. -Danielle Millwer, Tonawanda, New York

- Preheat oven to 350°. Mix flour, cracker crumbs, oats, 1/2 cup brown sugar and sugar. Stir in butter. Reserve 1 cup crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. pan. Bake until set, 8-10 minutes. Cool on a wire rack., Mix apples, spices and remaining brown sugar. Spread over crust; sprinkle with reserved topping. Bake until apples are tender, 30-35 minutes. Cool completely in pan on a wire rack., Mix confectioners' sugar and milk; drizzle over top. Cut into bars.

Steps:
- Heat oven to 375°F. Spray bottom and sides of 9-inch square pan with cooking spray.
- In large bowl, place cookie mix. Cut in butter, using pastry blender or fork, until mixture is crumbly (do not overmix).
- Reserve 1 1/2 cups cookie mixture for topping; set aside. Press remaining mixture in bottom of pan. Bake 10 minutes.
- In small bowl, mix pie filling and cinnamon until well blended. Spread on top of partially baked crust. Sprinkle with reserved 1 1/2 cups cookie mixture.
- Bake 30 to 35 minutes or until light golden brown. Cool completely, about 4 hours. Cut into 4 rows by 4 rows. Store covered in refrigerator.

- Prepare the apples and the pecans. Peel, core, and slice the apples about 1/4" thick. Then dice the slices into small squares. Pour the 3 tablespoons lemon juice over the apples in a separate bowl and set aside. Finely chop pecans and set aside.
- Prepare the baking dish! Lightly grease a 9"x13" baking dish with butter and then line with parchment paper. (This will make it much easier to remove the bars and slice them.) Set aside.
- Prepare the crumble crust! In a medium-sized mixing bowl, melt the 1 cup butter. Add the remaining crust ingredients and stir together until the mixture starts to clump and crumble and all ingredients are moistened. Dump the crumble into the prepared baking dish and press tightly into a crust evenly across the bottom. Set aside.

- In a medium bowl, whisk together the granulated sugar, the 1 1/4 cups white whole-wheat flour, 1 teaspoon cinnamon, the baking soda and salt. In another medium bowl whisk together oil, eggs and vanilla; stir in apples. Add egg mixture to flour mixture; stir until combined (batter will be very stiff and dough like). Spread batter mixture evenly in the prepared pan; if necessary, use your slightly moistened hands to pat batter into an even layer. The batter will be shallow in the pan.
- For the topping, in a medium bowl stir together the 2 tablespoons white whole-wheat flour, the brown sugar and 1 teaspoon cinnamon. Using a pastry blender, cut in butter until mixture is crumbly. Sprinkle crumb mixture over the batter in the baking pan.
- Bake about 20 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack. Using the edges of the foil, lift the uncut bars out of the pan. Cut into bars.
