6 tablespoons reduced-sodium chicken broth, divided
2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped
2 tablespoons chopped onion
1 garlic clove, minced
1-1/2 cups fat-free Caesar croutons
2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic wrap; fill with stuffing mixture. Close roast; tie at 2-in. intervals with kitchen string and secure ends with toothpicks., Place on a rack in a shallow baking pan coated with cooking spray. Bake at 425° for 25-30 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

1/2 pound mild Italian sausage (or 2 links, casings removed)
1 yellow onion, chopped
2 stalks celery, chopped
1 tart apple, peeled and diced
Salt and freshly ground pepper
2 cloves garlic, minced
2 pieces white bread
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons butter
One 3-pound boneless pork loin
1 tablespoon vegetable oil
1/2 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.
  • In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.
  • Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.
  • Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.
  • Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.
  • Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.

  • Preheat oven to 325º. In a large skillet, cook bacon. Drain all but 1/2 tablespoon fat. Add apples and shallots to skillet and cook until softened, 4 to 5 minutes. Add garlic and cook until fragrant, 2 minutes, then stir in rosemary and pecans. Season with salt and pepper.
  • Butterfly pork: Using a sharp knife, place roast fat side up, with short end toward you. Position knife 3/4" from bottom of roast; cut into 1" toward center of pork. Lift up top half of pork and continue making shallow horizontal cuts deeper into roast, unrolling top of pork as you cut and keeping knife parallel to cutting board to maintain the same thickness until pork unrolls to form a rectangle.
  • Season pork generously with salt and pepper. Top all over with filling. Roll up pork loin and tightly secure with kitchen twine.
  • Rub with mustard.
  • Place in a roasting pan on a rack with fresh rosemary sprigs and bake until internal temperature registers 155º, about 1hour 25 minutes, basting with the pan juices.
  • Let roast rest 15 minutes before slicing.

9 cups chopped apples
9 slices bread, diced
1 cup chicken stock
2 tablespoons poultry seasoning
2 tablespoons seasoned salt
2 eggs, beaten
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a wire rack on top of a baking sheet.
  • Place pork on a work surface and cut into 1/2-inch thickness, starting 1/2 inch from the cutting board and rolling pork open while cutting until entire loin is unrolled onto the work surface. Cover loin with plastic wrap and pound loin into 1/4-inch thickness with a meat mallet.
  • Mix apples, bread, chicken stock, poultry seasoning, seasoned salt, and eggs together in a bowl; spread onto the loin. Roll loin around apple filling, ending with the fat cap on top. Cut stuffed pork loin in half and place on rack.

3 -4 lbs boneless pork loin
2 apples, peeled and diced
1/2 cup raisins or 1/2 cup craisins
prepared stuffing, homemade (4 servings)
1 cup apple juice
1/2 cup brown sugar

Steps:

  • With a knife sharpener, poke a hole through the roast to make a tunnel.
  • Then take a knife and cut through until the hole is wide enough to stuff.
  • In a large bowl, mix together apple juice and brown sugar.
  • Place roast in bowl and turn a few times.
  • Let sit in fridge fat side up for about an hour.
  • In the meantime, peel and dice apples.
  • Start making stuffing, adding apples and raisins before adding the stuffing mix so they get soft.
  • Let apple stuffing cool while the pork in in the fridge.
  • Preheat oven to 350°F .
  • Line a roasting pan with heavy duty foil.
  • Remove pork from fridge and Pour some of the marinade into the foil lined pan.
  • Just enough to coat the bottom.
  • Discard the rest.
  • Start stuffing the roast.
  • It's easiest to use your hands.
  • Make sure you stuff it way down so you don't forget the middle.
  • Bake about 20 minutes per pound - 170 degrees using a meat thermometer.
  • Remove from oven and let stand 10 minutes.
  • Carve 1 1/2 inches wide.

1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

1 cup chopped apple

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
  • Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. 1 3-pound boneless pork loin roast with fat cap
1 teaspoon kosher salt
1 teaspoon granulated sugar
1 pound bulk pork or Italian sausage
4 slices bacon (cut into ¼" slices)
1 yellow onion (diced)
1 stalk celery (chopped)
1 Granny Smith apple (peeled and diced)
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 cloves garlic (minced)
2 slices hearty white bread (torn into pieces)
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons unsalted butter
2 tablespoons vegetable or canola oil
¾ cup chicken broth or stock

Steps:

  • Adjust the oven rack to the lower-middle position and heat oven to 325°Line a large rimmed baking sheet with aluminum foil and set a V-rack wire rack inside. Spray the rack with nonstick cooking spray.
  • Butterfly the pork loin roast or ask your butcher to do this for you.
  • Use paper towels to pat the pork dry and rub it on all sides with salt and sugar. Place the roast in a zipper-lock bag and refrigerate 1-4 hours.
  • In a large skillet, cook the sausage and bacon until the sausage has browned, the bacon is cooked through but not crispy. Transfer the meat to a paper towel-lined plate reserving 2 tablespoons of the rendered fat in the skillet.
  • Add the onion, celery and apple to the skillet. Season with salt and pepper and cook until the onion, celery and apple are tender. Add the minced garlic and remove the skillet from the heat. Pour the onion mixture into a large mixing bowl and wipe out the skillet.
  • Add the reserved sausage/bacon mixture to the onion mixture, in the bowl, and stir well.
  • While the above cooks, place the bread, sage, rosemary and thyme in the bowl of a food processor and pulse the mixture into coarse crumbs.
  • Set the skillet over medium heat and add the butter. When the butter melts, add the coarse breadcrumb mixture and stir until the breadcrumbs are lightly toasted, about 3 minutes (do not allow the breadcrumbs to burn). Add the breadcrumb mixture to the sausage/onion mixture and stir well. Set aside.
  • Remove the pork from the bag and set it in a second large baking tray. Pat it dry with paper towels and arrange it, fat cap down, on the tray.
  • Cover the pork with the sausage/onion stuffing, leaving a ½-inch border on all sides.
  • Cut 7 (10-inch) pieces of kitchen twine and set them next to the work area.
  • Roll the pork tightly and tie it at 1-inch intervals along the length of the roast. Season it, on all sides, with kosher salt and black pepper.
  • Heat the large skillet over medium heat and add 2 tablespoons oil.
  • Place the roast in the skillet and brown on all sides (about 3 minutes per side).
  • Set the roast in the V-rack wire rack on the rimmed baking sheet, fat side up, and set it in the oven. Pour the chicken stock under the roast in the bottom of the baking sheet.
  • Roast the pork 50-60 minutes or until the thickest, middle part of the pork registers 145°F on a meat thermometer. Remove the roast from the oven, tent loosely with foil, and let it rest 10-20 minutes before slicing. Remove the kitchen twine before slicing.
  • If desired and if there is enough, pour any rendered juices from the bottom of the pan through a mesh strainer and serve alongside the roast.

1 medium granny smith apple, diced
1 clove garlic, minced
1/4 c onion, minced
1/4 c dried cranberries
1/4 tsp dried rosemary and sage, or 1/2 tsp fresh, chopped
1 Tbsp olive oil
3-4 slice uncooked bacon

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Using a sharp knife, butterfly roast by cutting across the top by 1/3 almost through (fold flap back).
  • 3. Then from where you left off, cut 1/3 back the other direction and fold that flap back so you have 3 sections.
  • 4. Saute all ingredients (except loin and bacon) in olive oil.
  • 5. Place stuffing on loin.
  • 6. Fold flaps in.
  • 7. Place roast (flap side down) in an 8x8 glass baking dish. Wrap with bacon, folding ends under roast.
  • 8. Bake for 1-1 1/2 hours. Let set for about 5 minutes then slice. Serve immediately.

PERFECT ROASTED PORK TENDERLOIN WITH APPLES



Perfect Roasted Pork Tenderloin with Apples image

The trick to flavorful and moist pork tenderloin is to sear the pork before roasting. In our recipe, the pork is seared and then is baked on top a bed of apples and onions. Most often, you will find that pork tenderloins are sold in packages with two tenderloins. One tenderloin should generously serve 2 people and most likely serve 3. One note, "pork tenderloins" and "pork loin" are two different cuts of meat. Pork tenderloins are much thinner and take less time to cook.

2 pork tenderloins (about 1 1/2-pounds each)
2 tablespoons vegetable oil, plus more as needed
1 1/2 teaspoons salt, plus more as needed
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme leaves
1/4 teaspoon ground black pepper
2 apples, cored and sliced (we like Granny Smith, Golden Delicious or Braeburn)
2 onions, sliced
1 cup chicken stock, see our homemade chicken stock recipe
1 tablespoon butter

Steps:

  • Heat oven to 425 degrees F. Trim each tenderloin of any silver skin (this can be tough when cooked). To do this, use a small sharp knife and slide the blade under and outward to remove it.
  • Pat pork dry with paper towels and then rub with one tablespoon of the oil and 1 1/2 teaspoons of salt. Heat a tablespoon of oil in a heavy-bottomed oven-safe skillet over medium heat. When the oil is hot and shimmers, add the pork tenderloins and cook, occasionally turning, until evenly browned all over; about 12 minutes. Transfer to a large plate or cutting board. (The pork will not be cooked through).
  • Keep the pan used to sear the pork on the stove over medium heat. Check the pan, if it looks dry, add two to three teaspoons of additional oil. (If there is fat left in the pan from cooking the pork, there is no need to add extra oil).
  • Add the apples and onions then cook, occasionally stirring, until lightly browned around edges, about 5 minutes. Stir in 1 teaspoon of thyme.
  • Use a pastry brush (or use your fingers) to rub the seared pork all over with the mustard, 2 teaspoons of thyme, and the black pepper. Place the seared pork tenderloins on top of the apples and onions, and then slide into the oven.
  • Roast 10 to 15 minutes or until an internal thermometer inserted into the thickest part registers between 145 and 150 degrees F. Transfer the pork to a large plate and cover with aluminum foil. Let rest about 10 minutes.
  • While the pork rests, place the pan with apples and onions back onto the stove and turn heat to medium. Add chicken stock and use a wooden spoon to scrape the pan, lifting any brown bits from the bottom. Bring to a simmer and cook until reduced by half. Add butter and stir until melted.
  • To serve, slice pork into 1-inch slices then serve on a bed of the apples and onions with pan sauce drizzled on top.

Apple and mushroom stuffed roasted pork loin is a recipe that makes a great alternative to the usual ham around the holidays.

2.5 pounds(1 kg) pork loin
1 small red onion chopped
3.5 ounces(100g) mushrooms chopped small
1 teaspoon butter
1 medium apple peeled and chopped
1 slice of bread chopped or 3 tablespoons bread crumbs
1 lemon's zest
salt and pepper to your taste
1/2 teaspoon nutmeg
3 tablespoons olive oil
1 bay leaf
1 cup(250ml) water or broth

Steps:

  • Preheat the oven to 350F(180C).
  • In a medium pan, melt the butter and add the chopped onion, mushrooms, and apple.
  • Saute them for 2-3 minutes.
  • Add the bread or the bread crumbs and mix.
  • Season with salt, pepper, and nutmeg. Add the lemon zest.
  • Remove the pan from the stove and set it aside.
  • In the meantime, soak 6-7 toothpicks in water to prevent them from burning. Rinse the pork and pat dry.
  • Then, make a 1-inch-deep incision down the length of the loin; do not cut all the way through. Open the meat like a book, so the meat lies flat.
  • Cover the pork with plastic wrap and pound it with the flat side of a meat mallet until about 1/2 inch thick, starting from the middle and working outward. This will tenderize the meat and make it a bit easier to roll.
  • Spread the apple and mushroom mixture over the surface of the pork loin.
  • Starting with a long side, tightly roll up each tenderloin. Secure the seams with the toothpicks.
  • Meanwhile, preheat a large pan.
  • Brush the pork loin roll with olive oil and season with salt and pepper.
  • Place the meat in the pan and lightly brown all sides for 4-5 minutes.
  • Transfer the meat to a baking pan.
  • Deglaze the pan where you browned the meat with a cup of water or broth. Add salt and pepper to your taste and pour the sauce over the meat. Add the bay leaf to the sauce.
  • Roast the pork loin for about 1 hour at 350F(180C) or until the temperature inside the thickest part of the meat is 155F(68C).
  • Remove from the oven and let it rest for a few minutes.
  • Slice and serve with your favorite vegetables.

1 pork tenderloin (3/4 pound)
Dash salt
Dash pepper
1/2 cup chopped peeled tart apple
1/4 cup soft bread crumbs
2 tablespoons chopped celery
1 tablespoon chopped green onion
1 tablespoon raisins
1 tablespoon chopped walnuts
Dash ground nutmeg
2 tablespoons unsweetened apple juice, divided
SAUCE:
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
1/2 cup unsweetened apple juice

Steps:

  • Cut a lengthwise slit down center of tenderloin to within 1/2 in. of bottom; open so meat lies flat. Cover with plastic wrap; flatten to 1/2-in. thickness. Remove wrap; sprinkle meat with salt and pepper. , In a small bowl, combine the apple, bread crumbs, celery, onion, raisins, walnuts and nutmeg. Sprinkle with 1 tablespoon apple juice; toss to coat. Spoon over pork. Roll up jelly-roll style, starting at a long side; tie with kitchen string and secure ends with toothpicks. , Place on a rack in a shallow roasting pan coated with cooking spray. Drizzle with 1-1/2 teaspoons apple juice. Bake, uncovered, at 375° for 30 minutes. Brush with remaining apple juice. Bake 20-25 minutes longer or until meat juices run clear and a thermometer reads 160°. Let stand for 5 minutes before slicing. , Meanwhile, in a small saucepan, combine cornstarch and cinnamon. Gradually whisk in apple juice until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with pork.

Apple and Plum Stuffed Pork Loin image

One by me, adapted from a Scandinavian cookbook. (Actually, I think this method was described to me by a friend and I used that description in combination with glancing at a recipe.) From Friday, December 28th, 2001, LJ entry describing dinner. It was really easy to make, and absolutely delicious! A tribute to the folks in Puget Sound's Ballard and my own German/English/Scandinavian heritage. :)

1 1/2 lbs pork loin
kitchen twine
1 cup dried plums or 1 cup prune
water or wine
1 cooking apple, peeled, cored, and sliced
2 tablespoons olive oil
1 tablespoon butter
1 cup white wine
1 cup half-and-half
2 tablespoons black currant jelly or 2 tablespoons red currant jelly
salt & freshly ground black pepper, to taste

Steps:

  • Place the dried plums (prunes) in a saucepan with water or wine to cover and simmer them for 2-3 minutes to rehydrate a bit, then remove from heat and let sit for about 30 minutes.
  • Meanwhile, roll and tie the loin so that you'll be able to stuff things into the inside.
  • Drain the rehydrated plums, reserving the liquid.
  • Using the end of a long wooden spoon (or something else you have about that will work), push the plums and apple slices alternately into the rolled and tied pork loin from both ends.
  • Preheat oven to 350 degree F.
  • In a large roasting pan on the stovetop, melt the oil and butter together, then brown all sides of the stuffed loin.
  • Add the reserved plum liquid and wine, then bake in the roasting pan at 350 degrees F for 1 1/2 to 2 hours (time depending on the thickness and weight of your loin), checking for doneness periodically.
  • When it's done, carefully remove the meat from the roasting pan and let the meat sit, covered, for a few minutes on a platter (probably the one you'll serve it on).
  • Move the roasting pan back to the stovetop and set on medium low, then pour in a cup of half and half into the remaining liquid in the pan.
  • Stir in one to two tablespoons of current jelly (to taste) and let it reduce to your preferred thickness for the sauce. Season to taste with salt and freshly ground black pepper.
  • Untie the loin, cut, and serve it with the sauce and whatever delicious sides you've chosen.
  • Makes 4-6 servings.
  • Note: some folks like to add a bit of Dijon into the sauce.

3 tablespoon olive oil
1 large chopped onion
2 peeled, cored and chopped Granny Smith apples
8 fresh sage leaves
2 cup crusts removed thick-cut white bread cubes
1 beaten egg
2 tablespoon butter
1/2 1 cup plus more if needed to chicken stock
1 3 pound butterflied pork loin roast

Steps:

  • Preheat oven to 375 degrees F.
  • In a large skillet, heat the olive oil over medium-high heat. Add the onion, apples and sage. Sauté until softened. Remove from the heat and gently stir in the bread, egg, butter and salt and pepper. Add the chicken stock gradually until everything is moistened. Let the stuffing mixture cool completely before putting it in the pork loin. Spoon the stuffing down the pork, horizontally, in a line. Roll the pork over the stuffing, jelly roll style, ending with the seam down and fat side up. Lightly score the fat, in a diamond pattern, with a sharp knife. Tightly tie the pork roast up with butcher's twine, season it with more salt and pepper, and transfer to a roasting pan. Roast the pork in a preheated oven for about 90 minutes or until an instant-read thermometer registers 160 degrees F. Remove from the oven and let rest for 15 minutes before slicing. Garnish with apples and fresh herbs.
