OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

Bar-sized apple pie. When I make this recipe, I sub greek yogurt for the sour cream and add more than stated - until it is a good texture to roll. Also, I roll between 2 sheets of waxed paper, peel the top piece, lay back down, flip over, peel the other sheet and flip onto pan.

- Preheat oven to 350.
- Sift flour, salt, and 1/4 cup sugar.
- Cut in butter and lemon rind.
- Sprinkle sour cream over mixture and mix with fork until moist enough to stick together.
- Divide dough in half. Roll out half on waxed paper to 15x10". Turn over onto ungreased jelly roll pan or baking sheet. Peel off waxed paper.
- Bake at 350 12 minutes.
- Prepare filling - mixed chopped apples, sugar, flour, cinnamon, and lemon juice. Spread over baked crust.
- Roll out remaining dough into 15x10" rectangle on waxed paper. Turn over onto apple filling.
- Brush with egg and sprinkle with sugar.

- 1. Preheat oven to 350. Crust: Sift together 2 1/2 cups flour, salt, 1/4 cup sugar. Cut in butter and lemon zest. Mix in sour cream until dough is workable. Divide in half. Roll out half of dough between 2 pieces of waxed paper to 10 x15. Place on ungreased baking sheet and bake 10-12 minutes.
- 2. Filling: Mix apples, 1 T flour, 1/4 cup sugar, lemon juice, and cinnamon. Spread on baked crust.
- 3. Increase oven temperature to 400 degrees. Roll out other half of dough to 10 x 15. Place over filling. Brush with egg and sprinkle with additional sugar. Bake at 400 for 25-30 minutes.
CLASSIC APPLE FRITTERS DOUGHNUTS
These are best on the day they are made, but they freeze beautifully if you can't eat them all up right away. A deep fryer is recommended or alternately, at least, a thermometer so you can monitor oil temperature to ensure good results.

- For the dough: In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, add the yeast to the warm water. Add the sugar, stir and let stand 5 minutes.
- Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, mace and salt. Set aside.
- When yeast is ready, add the shortening, egg and vanilla and mix with the PADDLE attachment on low speed for 1 minute (to break up the shortening). Add about 1/3 of the flour mixture and mix until combined. Add a second third of the flour mixture and again, mix until combined. Switch to the dough hook and add the remaining flour mixture. Knead with the hook until all that flour is incorporated. If dough is sticky, start adding flour in 1 Tbsp. increments, until the dough comes together, clears the bottom of the bowl and is becoming smooth. Knead on medium for about 2 minutes more. The dough should be smooth and but still a bit moist (but not sticky).
- Place the dough in an oiled bowl, cover with plastic wrap and set-aside to rise until doubled in size (about 1 hour).
- Meanwhile, make the apple filling. Place the diced apples, sugar and lemon juice into a skillet over medium heat. Cook, stirring often, until all the liquid has evaporated and the apples are softened, about 5 minutes. Remove to a bowl to cool completely before using.

- When bread has finished it's first rise, remove to a lightly floured surface and roll into a 10-inch x 10-inch square. Sprinkle the apples over one half of the dough. Sprinkle all the cinnamon evenly over the apples and then sprinkle with the 1 Tbsp. flour. Fold the empty side of the dough over the side with the apples. Using a sharp knife or a bench scraper, cut the dough into 1/2-inch wide strips from top to bottom. Repeat cutting 1/2-inch strips from side to side, so you end up with small chunks of dough. Gather up the dough bits and cut some more, from different directions, until it is in small chunks and evenly mixed with cinnamon/apples/dough etc.
- Using floured hands, roughly shape into a 12-inch long x 3-inch wide log. Cut the log into 1 inch slices. With each slice, roughly pat into a disc, about the size of your palm (use some additional flour, as needed, if your dough is sticky). Place the dough discs onto a parchment lined or floured baking sheet, leaving a couple of inches of room around each. Repeat with all 12 dough pieces. Cover with plastic wrap or a clean tea towel and set-aside to rise until doubled again, about 30-45 minutes (approximately. Will vary depending on room temperature. The fritters should double in size and look puffy).
- When the fritters are almost risen, prepare the glaze. Add the icing sugar, corn syrup, salt and vanilla in a large bowl. Set aside.
- In a small saucepan, bring the water and white granulated sugar to a boil over high heat then reduce heat to medium and simmer for 1 minute. Add this mixture to the bowl with the icing sugar and whisk until all the sugar and has been incorporated and the mixture is smooth. (You don't want any lumps :) Cover with plastic wrap and set aside until needed.
- When dough is about ready to cook, heat oil in a deep fryer to 370° (alternately, use a heavy deep pot and a thermometer to monitor temperature). Fry each donut until deep golden on the underside (1 1/2 - 2 minutes), flip over and fry the other side. (*time and temperature may need to vary. Watch closely the first few to determine timing. If they seem to be browning too quickly, lower temperature slightly or likewise, if they seem to be taking too long to brown, raise the temperature slightly). Remove to a cooling rack placed over a baking sheet. If there are any loose apples in the frying oil, scoop out between batches so you don't have any apple pieces burning in the oil and causing bitter flavours.
- While the fritters are still quite warm (as soon as they are cool enough to handle), dip into prepared glaze and return to cooling rack to cool completely. *Stir the glaze mixture regularly during the process, to keep it nice and smooth.

EASY HOMEMADE APPLE FRITTERS

- Dice your apples, place in a bowl and add lemon juice. This will prevent the apples from browning.
- In a large bowl, whisk eggs. Add milk, vanilla, and cooled melted butter (don't add it hot, you'll cook your eggs!) Whisk together with a fork until it is all combined.
- In another medium sized bowl, combine the flour, sugar, baking powder, cinnamon, salt, nutmeg, and ground ginger.
- Add dry ingredients to wet and mix well until a loose dough is formed. Fold in the apples.
- Fill a frying pan or sauce pan with about 3-4 cups of oil or so that you have about 3-4 inches of oil in your pan. Heat oil over medium heat until the oil reaches 375°F with a candy thermometer or an instant read thermometer. If you don't have a thermometer, use the wooden spoon test (see notes).
- Use a measuring cup to drop batter into oil, 1/4 cup or 1/3 cup. Fry until the outside is golden brown. Flip and fry other side until golden brown, for a total of about 4-5 minutes. You'll know they're done if you insert a small knife into the center and it comes clean. If not, fry a little longer so that the center is fully cooked. This time will depend on the size of your fritter.
- Use a slotted spoon to transfer to a paper towel-lined cooling rack and let cool. Repeat with all the batter.

INDIVIDUAL APPLE CHARLOTTES
You may have seen charlotte recipes that call for sponge-cake ladyfingers and for the charlotte to be served cold, but classically, an apple charlotte calls for bread and is served warm. This recipe was created by my pastry chef, Zoe Behrens.

- Peel, core, and dice the apples into 1/4-inch pieces (you'll have about 6-1/2 cups). Using a vegetable peeler, peel the zest off half the lemon in long strips, taking care to avoid the bitter white pith (if necessary, remove any pith from the zest strips by scraping it off with a knife). Slice the vanilla bean in half lengthwise and scrape out the seeds with the back of a paring knife. In a large bowl, toss the apples, lemon zest, vanilla bean seeds and spent pod, raisins, and golden raisins.
- In a 12-inch skillet or 5-quart Dutch oven, melt the butter over medium-high heat and then add the sugar. When the sugar is fully moistened, add the apple mixture and cook, stirring almost constantly, until the apples start to release liquid and look soft on the outside (they'll still be a little crunchy inside), about 7 min. (you want to just start the cooking process at this point while still leaving the apples crunchy). Set the apple mixture aside to cool slightly and then add the Calvados.
- Position a rack in the middle of the oven; heat the oven to 475°F. Trim the bread crusts. Cut eight rounds to fit the bottoms of eight 8-ounce ramekins. Cut enough rectangles to line the sides. (The bread should come to within at least 3/4 inch of the ramekin's rim, if not the top.) Melt the butter in a medium skillet and put the sugar in a shallow dish. Brush the insides of the ramekins with butter. Generously dip both sides of each piece of bread in butter followed by sugar on one side. Lay one round in each ramekin, sugared side down. Nestle the rectangles, sugared side facing outward toward the ramekin, so they line the sides of each one. Trace around the ramekin bottom with a paring knife to cut a round of bread to line each ramekin.
- Pick the lemon zest and vanilla bean halves out of the apple filling and fill each ramekin, pressing on the filling to get rid of air pockets. Be generous; the filling will cook down. Set the ramekins on a rimmed baking sheet (leaving a few inches between each) and cover snugly with one sheet of foil. Bake for 40 min. To see if the charlottes are done, run a paring knife around the side, knock on the ramekin bottom, and invert a ramekin onto a plate to check the bottom; it should be nicely caramelized, and will have caramelized more than the sides. (If they're not done yet, return them to the oven for a few more minutes). Unmold and serve with a spoonful of crème fraîche or a scoop of vanilla ice cream on the side. Add the apple mixture to the bread-lined ramekins, packing it firmly.

- For a quick and nonperishable snack, fruit leathers are perfect for keeping in your gym bag or purse. But costing almost a dollar, fueling up on these can quickly add up. With a food processor, an oven, and a lazy afternoon, it's easy to whip up a batch of fresh-tasting fruit leathers for a fraction of the cost. And bonus â these homemade fruit leathers contain 15 calories instead of the 45 in most store-bought brands.
- Preheat your oven to 150°F (or as low as your oven will go). Line an 11-by-17 cookie sheet with a Silpat baking mat. If you don't have one, use parchment paper, although a Silpat will offer better results.
- Wash, dry, and cut up four cups of strawberries (or other fruit of your choice such as peaches, bananas, or raspberries). Place in a food processor or blender.
- Puree the fruit until completely smooth, about 30 seconds.
- Slowly pour the pureed fruit onto the prepared pan. Use the back of a spoon or spatula to spread it out evenly. Carefully slide the pan into the oven and bake for eight hours (or six to seven hours if your oven is at a slightly higher temperature).
- Remove the pan once the fruit is set and still slightly tacky. Be careful not to overcook, as you'll end up with fruit chips instead of fruit leather. Once the fruit has cooled to room temperature, slowly peel it off the mat or parchment paper. Lay it on a cutting board and use a knife to cut out 12 portions; store in an airtight container.
