Apple Raisin French Toast Strata image

A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.

1 (1 pound) loaf cinnamon raisin bread, cubed
1 (8 ounce) package cream cheese, diced
1 cup diced peeled apples
8 eggs
2 ½ cups half-and-half cream
6 tablespoons butter, melted
¼ cup maple syrup

Steps:

  • Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
  • In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

Steps:

  • Spray 9 1/2-inch deep-dish glass pie plate with cooking spray. Arrange bread cubes in bottom of pie plate. Spoon apples evenly over bread; sprinkle with ham and cheese.
  • In medium bowl, beat eggs, half-and-half and pepper with wire whisk until well blended. Carefully pour over apples, ham and cheese. Cover; refrigerate at least 6 hours or overnight.
  • Heat oven to 350°F. Bake uncovered 40 to 45 minutes or until top is lightly browned and center is set. Let stand 10 to 15 minutes before serving.

1 cup 2% milk

Steps:

  • In a small saucepan, combine brown sugar, butter and corn syrup. Bring to a boil over medium heat, stirring constantly. Cook and stir 2 minutes or until thickened. Set aside., In a small bowl, combine apples, lemon juice, sugar and pie spice. Arrange half of the bread slices in a greased 13x9-in. baking dish. Top with apples; drizzle with half of the caramel sauce. Sprinkle with pecans; top with remaining bread., In a large bowl, combine eggs, milk, salt and vanilla. Pour over top. Cover and refrigerate overnight. Cover and refrigerate remaining caramel sauce., Remove strata from refrigerator 30 minutes before baking. ¼ cup chopped pecans, or more to taste

Steps:

  • Grease an 8-inch square baking dish.

2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
  • Preheat the oven to 450 degrees F.
  • Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
  • For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.
  • Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

Steps:

2 shallots (chopped)
1 apple (such as Honeycrisp, chopped into ‚1-inch pieces)
1 10-ounce box chopped frozen spinach, thawed, squeezed dry
8 cups cubed Italian bread (from a 1-pound loaf)
2 tablespoons unsalted butter (at room temperature, for the baking dish)
1 cup shredded mozzarella cheese
3 cups whole milk
1 cup heavy cream
6 large eggs
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup finely grated Parmesan cheese

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausage and cook about 5 minutes, breaking it up into small pieces with a wooden spoon. Add the shallots and sauté until translucent, about 3 minutes. Add the apple and the spinach and sauté over medium-low heat for another 2 minutes. Set aside to cool slightly.
  • Place half of the bread cubes in a buttered 3-quart baking dish. Sprinkle half of the mozzarella over the bread, then top with half of the spinach mixture. Repeat layering.

Steps:

8 cups (2 L) cubed day-old egg bread (challah or brioche)
1 1/2 cup (375 mL) 10% cream
3 eggs
1/3 cup (75 mL) granulated sugar
1 tsp (5 mL) vanilla extract
Pinch salt
2 tbsp (30 mL) brown sugar
2 tbsp (30 mL) melted butter
1/2 cup (125 mL) chopped toasted pecans
1 cup (250 mL) plain 0% Greek yogurt
2 tbsp (30 mL) maple syrup

Steps:

  • Melt butter in large skillet set over medium heat. Add apples, brown sugar and cinnamon. Cook, stirring occasionally, for 10 to 12 minutes or until apples are soft and tender. Stir in lemon zest. Cool completely.

An assortment of sliced breads such as cinnamon-strudel
banana-nut and/or English muffins
waffles
cinnamon-raisin
etc.
cut into 1 1/2-inch cubes (enough to fill a 13x9x2 baking dish)
1 cup golden raisins
2 McIntosh apples
cored and coarsely chopped
Pure maple syrup
for serving

Steps:

  • Butter a 13x9x2 glass baking dish
  • In a medium mixing bowl, whisk together eggs, milk, salt, vanilla extract, cinnamon and nutmeg
  • Arrange the bread cubes in the bottom of the prepared baking dish then scatter the raisins and apples over top
  • Pour the milk and egg mixture on top of the breads and fruit, pressing down to submerge the breads completely

  • Line a 9-inch springform pan with heavy-duty aluminum foil, lining all the way to the top edge of the pan. Lightly grease bottom and sides of foil with cooking spray.
  • Whisk together the cream cheese and maple syrup in a large bowl until combined; whisk in the vanilla, cinnamon, salt, and nutmeg. Whisk in eggs until combined; whisk in the milk. Add the bread cubes; stir to coat. Stir in apple and pecans, and let stand at least 30 minutes.
  • Heat a camping stove to medium-low (about 300° to 325°F), or fit a grilling grate over the direct heat of partially glowing embers. Cut 6 (18-inch) squares of foil; crumple each foil square into a 1 1/2- to 2-inch ball. Arrange the foil balls on bottom of a 7 1/2-quart cast-iron Dutch oven; cover with lid. Preheat on the camping stove or a grilling grate directly over the heat source 10 minutes.
  • Pour the bread cube mixture into the prepared springform pan. Place the springform pan on top of the foil balls in the preheated Dutch oven. Coat a large sheet of foil with cooking spray, and place over the top of the Dutch oven, coated side down. Press the foil around the top edge to tightly seal, and cover with the lid. Bake until a knife inserted into the center comes out clean, about 2 hours. Let stand 10 minutes. Remove the sides of the pan; remove the foil from the sides of the strata. Cut into wedges; lightly sprinkle with powdered sugar, and serve with maple syrup.

  • Lightly spray an 8x8 casserole dish, then arrange the bread slices, standing up and next to each other. Between each slice, add a Canadian bacon slice, and a few thin slices of apple. Sprinkle about 1/3 of the grated cheese between the slices.
  • In a large mixing bowl, combine the eggs, milk, mustard and a pinch of salt. Whisk whisk whisk until totally incorporated. Pour the mixture over the bread in the casserole dish, and sprinkle with the remaining grated cheddar cheese. If needed, push the tops of the bread down into the mix, to make sure everything touches the egg/milk mixture. Cover and refrigerate for at least 4 hours. Overnight if you can!
  • Preheat oven to 350. Uncover and and bake for an hour an a half, checking at the one-hour mark. If the top of the bread and cheese are starting to brown, lightly tent with foil to make sure it doesn’t burn. Bake until the eggs and milk are set, about an hour and a half.
