CARAMEL APPLE OAT BARS
Caramel Apple Oat Bars are the perfect way to celebrate the season! Packed full of fresh apples, nuts and oozing with caramel, these bars are hard to resist!

- Preheat oven to 350 degrees.
- Line a 9x13 baking pan with parchment or lightly spray with non-stick cooking spray.
- Combine oat, flour, brown sugar, salt, and baking soda in a medium bowl.
- Stir in butter until nice and crumbly.
- Press a little more than half of the oat mixture into the bottom of the pan and bake for 8 minutes.
- Meanwhile, melt caramels and milk together in a microwave-safe container on high in 30 second intervals, stirring in between. Set aside.
- Remove pan from the oven and sprinkle with apple and nuts. Drizzle caramel mixture over the top.
- Crumble remaining oat mixture over the top of the caramel and return pan to the oven.
- Bake for an additional 20-22 minutes or until top is lightly browned.
- Let cool completely before cutting into bars.

- For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from the heat. Stir in spices and lemon juices; set aside., For pastry, combine flour and salt. Cut in shortening until mixture is crumbly. Combine egg yolks, water and lemon juice; blend into flour. Mixture will form a ball. Divided in half. , On a lightly floured surface, roll the dough between two pieces of waxed paper to fit the bottom and halfway up the sides of a 13x9-in. baking pan. Spread filling over pastry. - Preheat oven to 350 degrees F. Grease a 9×9 square pan.
- In a medium bowl, toss chopped apples with cinnamon and brown sugar.
- In a mixing bowl, combine together 1 and 1/4 cups flour, 1 teaspoon baking powder, and 1/8 teaspoon salt.
- In a separate bowl, whisk together 1 cup of white sugar, vegetable oil, yogurt, and vanilla until very smooth. Add eggs and whisk until smooth.

- Grease a 9 x 9-inch baking dish.
- In a bowl mix together flour, baking powder, salt, 1 teaspoon cinnamon and nutmeg (if using) set aside.

- Preheat the oven to 350 degrees. Prep a 9x13 baking pan by greasing the bottom with oil or non-stick spray.
- In a large mixing bowl, with a hand mixer, cream the butter, sugar, and vanilla together. Add the eggs one at a time, mixing them in one at a time.
- Sift the flour and baking powder into the butter/sugar mixture. Mix until the flour is completely incorporated.
