APPLE PASTRY SQUARES

Apple Pastry Squares image

"We have four very productive apple trees in our backyard, so I make a lot of recipes that call for apples. Even then, we'll often end up giving bushels of them away. This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie."

EASY APPLE PIE BARS

Easy Apple Pie Bars image

Easy Apple Pie Bars have all the flavors of a traditional apple pie with out all the work! Sweet vanilla cake is topped with store-bought apple pie filling, then topped with the remaining vanilla batter. Right before serving drizzle with a little Powder Sugar Glaze for a show stopping dessert. These are excellent served warm with a little vanilla ice cream.

Provided by Susie Weinrich

Categories     Dessert

Time 40m

Number Of Ingredients 10

1 cup butter, softened ((I have used melted butter in a pinch))
1 1/2 cup sugar
4 eggs
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
1 21oz. can apple pie filling
1/4 tsp cinnamon
1/2 cup powder sugar
1 ½ tbsp milk (or water) (approx, add milk or water until you have a consistency that can be drizzled. Start with 1 1/2 tbsp)

Steps:

  • Preheat the oven to 350 degrees. Prep a 9x13 baking pan by greasing the bottom with oil or non-stick spray.
  • In a large mixing bowl, with a hand mixer, cream the butter, sugar, and vanilla together. Add the eggs one at a time, mixing them in one at a time.
  • Sift the flour and baking powder into the butter/sugar mixture. Mix until the flour is completely incorporated.
  • Pour 2/3 of the batter into the bottom of the prepared 9x13 baking dish, make sure it is spread evenly in the pan. Pour the apple pie filling over the batter, sprinkle with cinnamon. Dot the top of the apples with the remaining batter.
  • Bake for 25-30 minutes until the top and the edges are golden and the cake is cooked thru. If you are using a glass baking dish you will need to cook 30-35 minutes. While the cake is baking make the powder sugar glaze by mixing together the powder sugar and milk (or water).
  • Right before serving drizzle with powder sugar glaze. Serve warm with a little vanilla ice cream.Store at room temperature, in an air tight container, for up to 3 days.

Yield 12

Number Of Ingredients 11

1 1/4 cups whole-wheat pastry flour
1 1/4 cups all-purpose flour
2 tablespoons sugar, plus 3/4 cup, divided
3/4 teaspoon salt
1/4 teaspoon baking powder
4 tablespoons cold unsalted butter
5 tablespoons canola oil
1/3 cup ice water
1 large egg, separated
4 cups thinly sliced firm tart apples, such as Granny Smith, Empire or Cortland, peeled if desired
1 teaspoon ground cinnamon

Steps:

  • 1. Whisk whole-wheat flour, all-purpose flour, 2 tablespoons sugar, salt and baking powder in a large bowl. Cut butter into small pieces and quickly rub them into the dry ingredients with your fingers until smaller but still visible. Add oil and toss with a fork to combine. Whisk water and egg yolk in a small bowl. Add to the flour mixture and stir until it begins to come together. Knead the dough with your hands in the bowl a few times until it forms a ball. Divide the dough in half and shape into 5-inch disks. Wrap each in plastic and refrigerate for at least 1 hour. 2. Preheat oven to 400°F. Coat a 9-by-13-inch baking pan with cooking spray and line the bottom and sides with parchment paper. 3. Combine apples, the remaining 3/4 cup sugar and cinnamon in a large bowl. 4.
