Dairy Free Pumpkin Muffins image

These pumpkin muffins are not only easy to make at home but taste even better than store bought!

3/4 cup all-purpose flour (94 grams)
1/4 cup white sugar (50 grams)
1/4 cup brown sugar, packed (50 grams)
1 teaspoon cinnamon
4.5 tablespoons oil
1 ½ cups all-purpose flour (190 grams)
1 ½ cups white sugar (300 grams)
1 tablespoon pumpkin pie spice*
1 teaspoon baking powder
½ teaspoon salt
15 ounce can pumpkin pie filling or butternut squash puree (425 grams)
2 eggs
¼ cup oil (60 milliliters)
¼ cup water (60 milliliters)
3/4 cups powdered sugar (180 grams)
1 tablespoons maple syrup**
1 tablespoons water

Steps:

  • Preheat the oven to 350°F or 175°C and set an oven rack in the middle position.
  • Whisk together flour, sugar, pumpkin pie spice, baking powder, and salt in a large mixing bowl.
  • Add pumpkin pie filling or butternut squash puree, eggs, oil, and water. Make sure not to leave any of the dry mixture at the bottom. Smooth out any lumps you may find.
  • Use a ladle to pour batter into paper-lined muffin pan cups until about ⅔ full.
  • In a separate medium sized mixing bowl, whisk together flour, sugar, brown sugar, and cinnamon. Add oil and use a fork to mix until combined into a streusel.
  • Sprinkle the streusel on top of each cup of batter.
  • Bake for or 25 to 30 minutes or until tested inserted in centers comes out clean.
  • In a small mixing bowl combine powdered sugar, maple syrup, and water until smooth.
  • Let cool for 10 minutes before moving to cooling rack.
  • Drizzle icing over reach muffin.

1/2 cup grated apple
1/8 teaspoon ground cinnamon
1 pinch nutmeg
1/4 cup sugar, plus
1 tablespoon sugar
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
6 tablespoons vegetable oil
1/2 cup water
1/2 cup raisins, if desired (optional)

Steps:

  • Preheat oven to 400°F, grease muffin cups.
  • Peel, core apple and grate.
  • Make spiced sugar by stirring cinnamon and nutmeg into 1 tbs sugar, reserve.
  • Sift flour, remaining 1/4 cup sugar, baking powder and salt together into mixing bowl.
  • Mix egg, oil, water and grated apple together.
  • Stir them all together into dry ingredients, until flour is moistened.
  • Stir in raisins (if used).
  • Spoon into muffin cups, and sprinkle top with spiced sugar.
  • Bake for 15 minutes.

2 1/2 cups super fine almond flour
3/4 cup granulated stevia/erythritol blend
1 teaspoon grain-free baking powder
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
1/4 cup butter or coconut oil (melted)
4 large eggs
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract
4 ounces Granny Smith apple ((about 1 small) peeled, seeded, and finely diced)

Steps:

  • Preheat oven to 350º Fahrenheit. Prepare a muffin pan by lining it with muffin papers or spraying lightly with coconut oil.
  • In a medium bowl, whisk together the almond flour, granulated stevia/erythritol blend, baking powder, cinnamon, and salt until well blended. Whisk in the butter or coconut oil. Mixture will appear mealy.
  • In a separate bowl, whisk together the eggs, almond milk and vanilla extract.
  • Pour egg mixture into the dry ingredients and stir together. Stir in diced apple.
  • Spoon batter into the prepared muffin pan, filling each 2/3 to 3/4 of the way full.
  • Bake for 25 to 30 minutes or until the top springs back when lightly touched.
  • Allow to cool 5-10 minutes in the pan, then remove from the baking pan and allow to finish cooling on a cooling rack.
