Fluffy and sweet, this apple treat is from the UK and goes great with ladyfingers and cream. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

Steps:
- In a large saucepan or Dutch oven, combine apples and water and cook, covered, over low heat, until frothy, 15 to 30 minutes. Remove from heat and stir in sugar, cinnamon, cloves and vanilla. Let cool.
- In a medium bowl, whip the egg white until stiff peaks form. Fold into the cooled apple mixture. Serve.

APPLE SNOW
I am posting this for the ZWT3 (Scandinavia). I got this recipe from a old cookbook, which my mother bought me for Christmas years ago, and I love this book. I have not tried it yet, but it looks very easy and interesting. Finnish apple snow is tradionally served in a glass bowl with a pinch of cinnamon sprinkled on the top.

- Cook apples in a covered pan with little or no water, stirring frequently. When apples are cooked add a little sugar to taste, and whisk to a smooth puree. If it is too stiff add just a little boiling water. Allow to cool.
- Beat the egg whites with a pinch of salt in a large mixing bowl and gradually add the sugar, beating as fast as you can until whites form stiff peaks.
- Add lemon juice to the apple puree in another large bowl.
- Stir in a little of the beaten egg whites, and finally fold in the rest of the whites until well blended.
- Pour into a glass bowl to serve, and sprinkle with a pinch of cinnamon on top.

APPLE-GINGER SNOW
A drizzle of maple syrup at the end adds just the right amount of sweetness.

- Peel, core, and cut apple into 1-inch slices. Put apple, ginger, and 1/2 cup water into a small saucepan. Cover, and bring to a simmer over medium-high heat. Reduce heat to medium-low; cook, stirring occasionally, until apple is soft, about 10 minutes. Uncover; cook, stirring often, until apple has broken down and liquid has just evaporated, about 15 minutes. Press the mixture through a large-mesh sieve into a medium bowl. Let cool completely. Refrigerate until cold.
- Put egg whites and salt into the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until stiff peaks form. Add sugar, and beat on medium-high speed until glossy.
- Gently fold 1/4 cup plus 2 tablespoons cold apple mixture into egg whites. Serve immediately, drizzled with syrup.

- Slice into a saucepan.
- Add water and lemon juice.
- Cook covered on low heat for about 15 minutes until apples are soft.
- Put apples and sugar in a blender and mix into a puree.
- Set aside until mixture is cool.
- Whisk the egg whites until they are stiff, and fold them into the apple mixture.
- Divide into serving bowls and allow to chill in refrigerator.
- Before serving, top with whipped cream and either brown sugar or crumbled vanilla wafer cookies (or both!).

This is a very light dessert recipe, which was passed on to me by my late mother-in-law. Perfect after a big roast dinner!

- Core, peel and slice cooking apples and 2 tablespoons of sugar and simmer gently for about 10 minutes until soft. Put aside to cool
- Mix custard powder with 1 tablespoon of sugar and a little of the milk, gradually stir in remainder of milk. Bring to boil and simmer for about 5 mins until thick. Remove from heat add in egg yolk. Put into a serving bowl, cover with cling and allow to cool.
- When apple is cool, whisk up egg white until stiff, gradually whisk in apple a little at a time and place on top of custard
- Delicious served with cream or icecream
