APPLE AND ONION-STUFFED PORK CHOPS WITH ORANGE-PINEAPPLE GRAVY

Apple and Onion-Stuffed Pork Chops with Orange-Pineapple Gravy image

Provided by Sunny Anderson

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 13

4 (1-inch thick) pork chops
2 slices bacon, roughly chopped
1 large sweet onion, 1/2 chopped and 1/2 in wedges
4 sprigs fresh thyme, stripped
2 teaspoons chopped fresh sage leaves
1 Granny Smith apple, peeled, cored and sliced thin
2 tablespoons unsalted butter, room temperature
1 1/2 cups plus 2 tablespoons pineapple-orange juice
1/4 teaspoon ground cinnamon
Salt and freshly ground black pepper
Oil, for skillet
1 lemon, zested
2 teaspoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Gently cut pockets into chops by slicing horizontally in the side. On a plate, place salt and pepper. Dredge chops in seasoning. In a medium skillet over medium heat, saute the bacon, chopped onions, thyme, and sage until the bacon is almost crispy and the onions are beginning to caramelize around the edges, about 10 minutes. Pour mixture into a bowl. Add apples, butter, 2 tablespoons of pineapple-orange juice and cinnamon. Season with salt and pepper. Stuff each chop with apple mixture and hold together with skewers. In same skillet over medium-high heat, add enough oil to coat the pan and sear both sides of the chops until golden brown, about 4 minutes per side. Add 1 cup pineapple-orange juice and remaining onion wedges around the chops. Season with salt and pepper and bake until cooked through, about 20 to 25 minutes, depending on the thickness of the chops, basting 2 to 3 times. Remove pork chops from pan and let rest 10 minutes. Add remaining pineapple-orange juice and scrape up the brown bits that cling to the bottom of the pan. Bring the liquid to a simmer and cook until reduced by half, about 5 minutes. Add lemon zest and parsley. Pour sauce over pork chops.

PORK CHOPS STUFFED WITH APPLES AND SAGE

Pork Chops Stuffed With Apples and Sage image

To compliment this dish, serve it with light side dishes such as Recipe #251321, and Recipe #260696, and topped with some decorative fresh parsley. Your kitchen will be filled with aromatics all day! A great way to ensure tender and moist chops is to soak them in a brine of 1 cup milk to 1/2 Tbs salt for at least 1 hour before using in a recipe.

APPLE SAUSAGE STUFF PORK CHOPS

Apple Sausage Stuff Pork Chops image

You can make your own stuffing and use for this recipe I just typically use Stove Top Pork Flavored. I try to always use unflavored/unseasoned Pork Sausage. I typically use Granny Smith Apples for this recipe but any kind of apple works just use your favorite kind. For the Cajun Seasoning I usually use Emeril's Essence.

Provided by pasmaszek

Categories     One Dish Meal

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 10

4 thick-cut bone in pork chops
1 tablespoon cooking oil (i use olive oil)
1 prepared box pork flavored Stove Top stuffing mix
2 -3 cooked then diced pork sausage
3 skinned and diced apples
1/4 cup raisins
1/3 cup chopped green onion
1/4 cup apple juice
1 tablespoon cajun seasoning
1/2 tablespoon parsley

Steps:

  • Preheat your oven for 400 degrees.
  • Cut a 'pocket' in each of your Pork Chops were the 'stuffing mixture' will eventually go.
  • Seasoning the Pork Chops to your liking w/ the Cajun Seasoning. Sear the Pork Chops for about 1 to 2 minutes on each side on med-high heat. Just enough to get a nice quick brown to them. Set aside.
  • In a large mixing bowl combined your already prepared stuffing, the cooked diced up pork sausage, the apples, raisins, and green onions. To add some moisture to the mixture gradually mix in the apple juice. Seasoning the entire mixture w/ Cajun Season (Emeril's Essence) and Parsley. I tend to season heavy w/ the Cajun Seasoning.
  • Place your Pork Chops in a glass casserole dish. Open the precut pockets in the pork and stuff each pork chop w/ the stuffing mixture. Place the remaining stuffing around the Pork chops.
  • Bake at 400 degrees in a glass casserole dish until the meat is no longer pink (about 1 hour- 1 1/2 hrs). If the stuffing starts to get too dry before the meat is done cooking just pour some additional apple juice on it.

TRIPLE PORK-STUFFED PORK CHOPS

Triple Pork-Stuffed Pork Chops image

I had a craving for pork one day - developed this and my girlfriend and I both loved it. Watch out for the sodium (notice I mention to add low- or no-sodium ingredients). Beware, must love pork!

Provided by Dane

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Baked

Time 1h40m

Yield 4

Number Of Ingredients 15

¼ cup unsalted butter
1 onion, diced
1 stalk celery with leaves, diced
1 clove garlic, diced
½ pound pork sausage
4 cups cubed white bread
¼ cup low-sodium chicken broth
1 egg
1 teaspoon poultry seasoning
1 teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon dried sage
4 thick-cut pork chops
4 slices bacon
toothpicks

Steps:

  • Melt butter in a skillet over medium heat. Add onion, celery, and garlic; cook and stir until tender, 5 to 7 minutes.
  • Heat a separate skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine onion mixture, cooked sausage, bread cubes, chicken broth, egg, poultry seasoning, oregano, thyme, and sage in a large bowl. Mix until stuffing is well combined.

  • Fill pork chops with the stuffing. Wrap 1 slice bacon along the width of each pork chop, securing with a toothpick. Place bacon-wrapped pork chops in a baking pan. Add any extra stuffing to the bottom of the pan. Cover with aluminum foil.
  • Bake the pork chops in the preheated oven until no longer pink in the center, about 40 minutes. Uncover and continue baking until juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

APPLE SAGE CORNBREAD-STUFFED PORK CHOPS FOR TWO

Apple Sage Cornbread-Stuffed Pork Chops for Two image

These pork chops are going to be a date night favorite in your household this fall. It's a warm, hearty dish that you can make together: One of you can hold the pork chop as the other stuffs it, or vice versa.

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 2 servings

Number Of Ingredients 11

2 boneless pork chops (1 pound total)
2 tablespoons olive oil
1 garlic clove, minced
1/2 onion, diced
1/2 cup chopped green apple, such as Granny Smith
1/2 cup diced carrots
1/2 cup diced celery
1 cup crumbled cornbread
1/4 cup chicken broth or stock
4 sage leaves, coarsely chopped
Salt and ground black pepper

Steps:

  • Slice into the pork chops horizontally, but not all the way through. (You're essentially butterflying the pork chops and giving them a little pouch.) Set aside.
  • In a large skillet over medium-high heat, heat up 1 tablespoon olive oil. Add the garlic and onion and saute until fragrant and softened, about 3 minutes. Add the apple, carrots and celery and cook until softened, 7 to 10 minutes.
  • Add in the cornbread, chicken broth and sage leaves, and stir to incorporate. Season with salt and pepper to taste. Remove the skillet from the heat and let the filling cool for 10 minutes.
  • Carefully spoon the filling into the pork chops. If they become full and you can no longer stuff anymore, that's ok-save the filling to eat on the side. Use toothpicks to secure the chops shut. If the toothpicks poke out, use scissors to trim them flush to the pork chops.
  • In the same skillet you used earlier, heat up the remaining tablespoon olive oil. Sear the pork chops, 3 to 5 minutes per side. Turn the heat down to medium and continue cooking, flipping occasionally, until the pork chops have cooked through completely, 15 to 20 minutes. Serve warm with the additional cornbread stuffing!
