Time 3h30m

Yield 14 servings.

Number Of Ingredients 11

2 quarts unsweetened apple juice
2-1/2 cups packed brown sugar
1 cup kosher salt
4 ounces fresh gingerroot, peeled and thinly sliced
15 whole cloves
6 garlic cloves, crushed
3 bay leaves
3 medium oranges, quartered
3 quarts cold water
1 turkey (12 to 14 pounds)
2 tablespoons canola oil

Steps:

  • To make the brine, in a large kettle, combine the first 7 ingredients. Bring to a boil; cook and stir until salt and sugar are dissolved. Stir in oranges. Remove from the heat. Add cold water to cool the brine to room temperature., Remove giblets from turkey (discard or save for another use). Place a turkey-sized oven roasting bag inside a second roasting bag; add turkey. Carefully pour cooled brine into bag. Squeeze out as much air as possible; seal bags and turn to coat. Place in a roasting pan or other large container. Refrigerate for 18-24 hours, turning occasionally., Prepare grill for indirect heat. Drain turkey, discarding brine. Rinse turkey under cold water; pat dry. Rub oil over skin. Skewer turkey openings; tie drumsticks together., Place breast side up on a rack in a disposable foil roasting pan. Grill, covered, over indirect medium heat for 30-40 minutes. Tent turkey with foil; grill, covered, until a thermometer reads 165°, 2-1/2 to 3 hours longer. Cover and let stand for 15 minutes before carving.

GRILLED TURKEY BREAST WITH FRESH SAGE LEAVES

Grilled Turkey Breast with Fresh Sage Leaves image

A new favorite of my husband and mine! The sage leaves make this dish complete. You can also use chicken breasts with this recipe.

Provided by gina.toso

Categories     World Cuisine Recipes     European     Italian

Time 1h20m

Yield 8

Number Of Ingredients 8

3 tablespoons freshly squeezed lemon juice
3 tablespoons extra-virgin olive oil
28 leaves fresh sage
4 skinless, boneless turkey breast halves
sea salt and freshly ground black pepper to taste
2 tablespoons extra-virgin olive oil
3 tablespoons unsalted butter
2 lemons, halved

Steps:

  • Mix lemon juice, 3 tablespoons olive oil, and sage leaves in a large container and place turkey breast halves into the marinade. Allow meat to marinate for 30 minutes at room temperature, turning turkey breasts over occasionally.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove turkey breasts from marinade and reserve the marinade and sage leaves. Sprinkle turkey on both sides with sea salt and black pepper.
  • Grill turkey breasts on the preheated grill until they show grill marks, the meat is no longer pink inside, and an instant-read meat thermometer inserted into the thickest part of the breast reads at least 160 degrees F (70 degrees C), about 30 minutes. Turn turkey pieces over after 15 minutes.
  • While turkey is grilling, heat 2 tablespoons olive oil with unsalted butter in a large skillet over medium-high heat until hot and bubbling. Pour reserved marinade, including sage leaves, into the oil and butter and cook, stirring often, until the marinade has evaporated and the sage leaves are crisply fried, 10 to 15 minutes.
  • Transfer grilled turkey breasts to a cutting board and season again with salt and black pepper if desired; thickly slice the turkey on the diagonal and arrange on a platter, topped by fried sage leaves and garnished with lemon halves.

  • Spread all four slices of bread with 1 tablespoon apple butter each. For each sandwich, layer one of the slices with half of the sage, half of the cheese, a layer of apple slices, and the turkey. Place the remaining bread slices on top, apple-butter-side down.
  • Butter the outsides of the sandwich, then once the skillet is warm or the panini press is preheated, grill on stovetop (cooking each side for 2 to 4 minutes until the bread is toasty and golden—low and slow will guarantee the most melty, perfectly cooked grilled cheese) or place in the panini press, using additional butter or nonstick spray as needed to prevent sticking. Slice and enjoy hot.
