1 egg
2/3 cup milk
1 teaspoon vegetable oil
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
Dash salt
5 large tart apples
1-1/2 cups vegetable oil
1/4 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a bowl, beat egg, milk and oil. Combine flour, sugar, baking powder and salt; stir into the egg mixture until smooth (batter will be thick). Peel, core and cut apples into 1/2-in. rings. , In an electric skillet or deep-fat fryer, heat oil to 375°. Dip apple rings into batter; fry, a few at a time, until golden brown. Drain on paper towels. Combine sugar and cinnamon; sprinkle over hot fritters. Serve warm.

1 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup milk, ((In place of milk, I have used Sugar Free Hazelnut Creamer and it's really good!))
1 large egg
1 teaspoon pure vanilla extract
4 large apples, (sliced into 1/4-inch thick slices)
Canola Oil for Frying
1/2 cup sugar
1 to 2 teaspoons ground cinnamon

Steps:

  • In a small mixing bowl whisk together flour, sugar, baking powder, and salt. Set aside.
  • In a separate bowl whisk together milk and egg; add vanilla and whisk until well combined.
  • Whisk milk mixture into flour mixture; set aside.
  • Slice apples and cut out the middle part of the apple slices. I use a small round cookie cutter to pop them out.
  • In a large skillet, heat the oil over medium-low heat to 375˚F degrees.
  • Dip the apple rings in the batter then transfer them to the skillet and cook in batches, 1 to 2 minutes per slice, or until golden, turning once to cook the other side.
  • In a bowl or plate combine sugar and cinnamon; mix well.
  • Sprinkle cinnamon sugar over the apple rings while still hot.
  • Serve immediately.

I remember these spiced apple rings as a child, with my parents using 1 slice placed on top of a little lettuce as garnish for entrees at their restaurants. They are spicy, sweet and so delicious. These apple rings are great as a colorful addition to your Holiday table. For those of you who are a little aprehensive about using red food dye, see NOTE at end of recipe. 3 firm apples
2 cups pure cranberry juice
1/2 cup sugar, or honey
1/4 cup apple cider vinegar
Juice and grated rind of 1 lemon
1 teaspoon cinnamon
1/2 teaspoon each ginger and allspice
10 drops liquid red food coloring

Steps:

  • 1 Slice apples into 1/4­-inch thick slices, leaving peel intact. Core and set aside. 2 Bring the remainder of ingredients to a bowl in a large skillet over high heat. Add apple slices and bring back up to a boil, cooking apples for 1 minute. 3 Remove pan from heat and let sit for a few minutes before transferring apples to a bowl with a tight-fitting lid 4 Strain liquid into container and make sure all apples are covered with liquid and cover tightly. 5 Allow to sit for at least 3 hours at room temperature before transferring to refrigerator to completely cool. 6 Continue to store apple rings in a covered container in refrigerator until ready to serve.
  • 1 The easiest way to core a sliced apple is to find a plastic, twist top from a soda bottle and firmly press it around the core of each slice.
  • 1 If desired, omit the red food coloring and add 1/2 cup red hot cinnamon candies to the liquid when beginning the recipe. Make sure they are completely melted before adding apples. Heck, throw a handful in the above recipe for a little more spice.

4 tablespoons unsalted butter, sliced
1/4 cup light brown sugar
1 teaspoon ground cinnamon
2 small Golden Delicious apples (about 5 ounces each)
One 14.1-ounce box refrigerated pie crust (2 crusts total)
All-purpose flour, for dusting
1 large egg, beaten
2 square soft caramel candies, such as Kraft, cut into quarters
Granulated sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees F. Line 2 baking sheets with parchment. Microwave the butter, brown sugar and cinnamon in a medium microwave-safe bowl until melted, about 1 minute.
  • Cut the apples, crosswise, into slices between 1/4-and-1/2-inch thick, using only full size slices from the center of the apple. You should get 4 slices from each apple, each about 2 inches in diameter. Remove the cores from the apples with a small round cutter or apple corer to make rings. Add the apples to the butter mixture and turn to coat well, taking care not to break the slices.
  • Unroll the pie crusts and roll each on a floured surface into 13-inch rounds. Use a 4 inch round cutter to cut 8 rounds from each piece of dough (gathering the scraps and rerolling the dough as needed). (See Cook's Note.) Arrange half of the rounds on the prepared baking sheets and brush all over with the egg. Center an apple slice on each round and spoon any juices left in the bowl in the center of the slice. Place a caramel piece in the center of each slice.
  • Lay the remaining dough rounds over each apple slice and press the edges gently to seal, then crimp the edges with a fork. Cut small slits in the dough for air vents. Brush the tops with beaten egg and sprinkle generously with granulated sugar.
  • Bake, rotating the trays from top to bottom halfway through baking time, until the crust is golden brown and crisp,18 to 20 minutes. Cool on the baking sheet at least 15 minutes before serving.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
4 cups all-purpose flour

1 cup heavy whipping cream (110° to 115°)
1/4 cup evaporated milk (110° to 115°)
3 large egg yolks, room temperature
FILLING:
2 cups finely chopped peeled apples
1/2 cup raisins
1/4 cup cinnamon-sugar
GLAZE:
2 cups confectioners' sugar
1 teaspoon vanilla extract
2 to 3 tablespoons 2% milk

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine the flour, sugar and salt. Cut in butter until crumbly. Add the yeast mixture, cream, milk and egg yolks; stir until mixture forms a soft dough. Cover and refrigerate overnight., In a small bowl, combine the filling ingredients. Punch down dough; divide in half. On a lightly floured surface, roll out 1 portion into a 13x7-in. rectangle. Sprinkle with half of filling., Roll up jelly-roll style, starting with a long side. Pinch seam to seal. Place seam side down on a greased baking sheet; pinch ends together to form a ring. Repeat with remaining dough and filling. Cover and let rise in a warm place, about 45 minutes., Bake at 375° until golden brown, 25-30 minutes. Remove from pans to wire racks to cool. Combine the confectioners' sugar, vanilla and enough milk to reach a drizzling consistency. Drizzle over warm rings.

4 ½ pounds apples, cored and sliced into 1/4-inch thick rings
water to cover
1 tablespoon lemon juice
4 cups white sugar
3 cups water
1 cup brandy
3 1-pint canning jars with lids and rings

Steps:

  • Place apple rings in a bowl and pour in enough water to cover. Add lemon juice to water.
  • Bring sugar and 3 cups water to a boil in a large saucepan; cook and stir until sugar dissolves, about 5 minutes. Add apples to sugar-water mixture and return to a boil. Reduce heat to medium-low and simmer until apples are tender, about 30 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple rings into hot, sterilized jars, filling to within 1/4 inch of the top. Keep syrup in the saucepan.
  • Bring the syrup back to a boil and add brandy; cook and stir until heated through, 2 to 3 minutes. Ladle the syrup over apple rings, filling the jars to within 1/4 inch of the top.
  • Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

12 cups sugar
6 cups water
1 1/4 cups white vinegar, 5
3 tablespoons whole cloves
3/4 cup red hot cinnamon candies or 8 cinnamon sticks
1 teaspoon red food coloring (optional)

Steps:

  • Wash apples. Peel and slice one apple at a time. Immediately cut crosswise into 1/2" slices, remove core area with a melon baller and immerse in ascorbic acid solution to keep the apples from discoloring.
  • In a 6 quart saucepan, combine sugar, water, vinegar, cloves, cinnamon candies, or cinnamon sticks and food coloring (if using).
  • Heat to a boil, stirring constantly until sugar dissolves then lower heat and simmer 3 minutes.
  • Drain apples and add to hot syrup, and cook for 5 minutes.
  • Fill prepared jars with apple rings and hot flavored syrup, leaving a 1/2" headspace.
  • Check for air bubbles and add more liquid if needed to maintain the 1/2" headspace.
  • Process pint or quart size jars in a boiling water bath for 20 minutes .
  • Adjust time according to your altitude.
  • NOTE: This can also be pressure canned. Pressure Canner - Hot pack pints or quarts and process for 8 minutes at the pressure specified according to your altitude and / or style of canner.
