Grandma's Apples and Rice image

LIKE MOST women of her generation, my husband's grandmother was a "no-measure cook". This recipe of hers suffered as it was handed down, so I made an effort to work out the kinks. Finally, my husband pronounced the results as good as he remembered, and we declared it the "official" recipe. -Joan Kasura, Silver Spring, Maryland

1-1/4 cups uncooked brown rice
4 tablespoons butter, divided
2-1/2 cups chunky applesauce
1 cup diced peeled apples
1/4 cup packed brown sugar
1-3/4 teaspoons ground cinnamon, divided
Dash salt

Steps:

  • Cook rice according to package directions. Stir 2 tablespoons butter into hot rice. Add applesauce, apples, brown sugar, 1-1/2 teaspoons cinnamon and salt. Spoon into a greased deep 2-qt. baking dish. Dot with remaining butter; sprinkle with remaining cinnamon. Bake, uncovered, at 350° for 35 minutes or until heated through. Serve warm or cold.

6 ounces shrimp - peeled, veined, and cut into 1-inch pieces
1 pinch salt and ground black pepper to taste
1 teaspoon cornstarch
1 tablespoon vegetable oil, or more as needed
1 teaspoon minced garlic
1 egg, beaten
1 cup diced button mushrooms
¾ cup frozen mixed vegetables
1 apple - peeled, cored, and diced
2 tablespoons raisins
1 teaspoon curry powder
1 tablespoon light soy sauce
2 cups overnight steamed white rice
1 green onion, diced

Steps:

  • Mix shrimp, salt, and pepper together in a bowl; stir in cornstarch.
  • Heat oil in a wok over medium heat; add shrimp mixture. Cook until light brown, about 5 minutes. Transfer to a plate.
  • Stir garlic into the wok; cook until fragrant, about 1 minute. Add egg; cook and stir until scrambled, about 3 minutes. Mix in mushrooms; cook and stir until softened, about 5 minutes.
  • Stir mixed vegetables into the wok; cook until softened, 3 to 5 minutes. Mix in apple and raisins; add curry powder. Cook and stir until fragrant, about 3 minutes.
  • Mix rice into the wok; season with soy sauce, salt, and pepper. Cook and stir until rice is heated through, 3 to 5 minutes. Add shrimp and green onion; cook and stir until warmed through, 2 to 4 minutes.

Cinnamon Rice with Apples image

Surprise everyone with this delicious recipe! A nice change from traditional rice dishes. Goes great with a white meat main dish!

¾ cup uncooked white rice
1 ½ cups apple juice
1 apple, cored and chopped
⅓ cup raisins
½ teaspoon ground cinnamon
¼ teaspoon salt, or to taste
¼ cup chopped fresh parsley

Steps:

  • In a saucepan, combine rice, apple juice, chopped apple, and raisins. Season with cinnamon and salt. Bring to a boil, reduce heat to low, and cover for about 17 minutes. Lift lid, and see if rice is moist enough for your taste; if not, cook another couple minutes.
  • Mix in fresh parsley. Serve immediately.

2 cups cooked brown rice
3 small sweet apples, peeled and coarsely shredded
1/3 cup apple juice
1 tablespoon brown sugar, firmly packed
2 teaspoons lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/16 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F.
  • Lightly oil a 1-1/2 quart casserole or spray with a nonstick cooking spray.
  • In a large bowl, combine all ingredients.
  • Mix well.
  • Spoon into prepared pan.
  • Cover tightly and bake 45 minutes.
  • Serve hot.

I got some apple sausage from Costco a few years ago and was experimenting with ways to use it, and came up with this. Mild Italian sausage works nicely too. It makes a good main dish served with salad and garlic bread, or a side served with chicken.

1 box uncle ben wild rice mix, less seasonings
2 apples, cut in small pieces with skin peeled
3 links mild Italian sausage or 3 links apple sausage, sliced
1/2 cup brown sugar
1 large carrot, grated
1 medium onion, diced
2 tablespoons garlic
cinnamon, to taste
1/2 cup walnuts or 1/2 cup almonds, chopped
butter, to taste

Steps:

  • Start cooking the rice according to box directions, but leave out the seasonings.
  • In a large pan over medium heat, cook the sausage until it's about halfway done.
  • Add the apples, onions, garlic, carrot, and nuts.
  • If the sausage has not released enough grease to coat all the ingredients, add butter.
  • When the sausage is done and the apples and onions are beginning to caramelize, add the brown sugar and sprinkle with cinnamon, reducing heat to low.
  • When the rice is done, add the rice to the pan with the sausage mixture and add enough butter to coat the rice, and additional brown sugar and cinnamon to taste.
  • Cook, stirring occasionally, until all the rice is coated with the butter and sugar and the ingredients are mixed well.
  • It should be a fairly sticky consistency.

1 tablespoon olive oil
1/2 large sweet onion, finely diced
2 Fuji or Gala apples, diced
1 1/2 cups basmati rice
2 tablespoons fresh thyme leaves
2 1/2 cups chicken stock
1/2 cup apple juice
2 tablespoons unsalted butter
1 tablespoon apple cider vinegar
Kosher salt

Steps:

  • Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 10 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 1 to 2 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 20 minutes.
  • Fluff with a fork and adjust the salt as needed.
